- Combine chocolate chips and peanut butter chips in top of double boiler. Stir frequently over low to medium heat until melted; add peanuts and stir.
- Drop by teaspoon full on wax paper. Allow to cool.

- In a microwave, melt candy coatings, stirring often until blended. Stir in the peanuts until coated. Drop by tablespoonfuls onto a waxed paper-lined baking sheet. Refrigerate until serving.

Steps:
- In a saucepan, combine sugar, buttermilk and butter. Cook and stir over low heat until butter is melted and sugar is dissolved. Cook over medium heat until a candy thermometer reds 234°-240° (soft-ball stage), stirring occasionally. Add peanut butter, vanilla, baking soda and peanuts; stir rapidly until mixture is thickened and creamy. Drop quickly by tablespoonfuls onto waxed paper-lined or lightly buttered baking sheets, shaping into patties. Let stand until cool and set. Store in an airtight container.

EASY PEANUT CLUSTERS
This candy is a must for gifts, parties, or special occasions, especially if your time is limited. NOTE: The butterscotch chips will NOT melt. When they are soft, they look shiney. Do not overcook, as the chocolate will burn. You may use more peanuts if desired. I usually throw in more to make sure the last pieces have some nuts in them.

- Microwave chocolate and butterscotch chips in a 2 quart glass dish for 5-6 minutes on 60% power, or until melted.
- Watch carefully!
- (They don't actually melt, but look very shiny).
- Add peanuts and mix well.
- Drop by tablespoons on waxed paper.
- Cool in refrigerator.
- Store in covered container in refrigerator.
- I have used different chocolate chips other than Toll House, and they do not work well.

- Place both chips and shortening in small microwave-safe bowl. Microwave at High 1 to 1 1/2 minutes or until chips are melted and mixture is smooth when stirred.
- Stir in peanuts.
- Drop by teaspoons into 1-inch diameter candy or petit four papers. Refrigerate until firm, about 30 minutes. Store tightly covered in refrigerator.

- Place caramels, butter, and water in a microwave-safe bowl. Microwave on high, stirring every 30 seconds, until smooth, about 3 minutes. Stir in pecans.
- Drop caramel pecan mixture by spoonfuls onto parchment paper. Place in freezer for 15 to 20 minutes.
- Place chocolate in a microwave-safe bowl and microwave on high, stirring every 15 seconds, until melted and smooth, 1 to 2 minutes. Dip each caramel cluster into chocolate using a fondue fork until coated; place on parchment paper to dry. Chill until firm, if necessary.

PEANUT PRALINE CLUSTERS

Steps:
- Cover a cookie sheet with parchment paper and set aside.
- In a medium saucepan melt butter over medium heat.
- Add brown sugar, whipping cream, corn syrup, and salt.
- Bring to a boil, stirring constantly.
- Remove from heat and add in powdered sugar and vanilla.
- Beat with a hand mixer on low speed until smooth.
- Stir in peanuts. Let stand for a few minutes stirring occasionally.
- Let the mixture cool off for about 5-10 minutes, stirring every few minutes. It will begin to thicken up.
- When thick enough drop by Tablespoons onto the parchment paper.
- Immediately sprinkle with a little sea salt.
- Let stand for 3-4 hours until firm.
- Store in an airtight container.
