Butterscotch Peanut Bars image

Easy-to-make bars from Margery Richmond in Fort Collins, Colorado are perfect family reunion fare! They hold up in hot weather, stack well and are easy to pick up and eat. With lots of peanuts and butterscotch flavor plus a rich, buttery crust, "Boy, are they good," says Margery.

Number Of Ingredients 10

1/2 cup butter, softened
3/4 cup packed brown sugar
1-1/2 cups all-purpose flour
1/2 teaspoon salt
3 cups salted peanuts
TOPPING:
1 package (10 to 11 ounces) butterscotch chips
1/2 cup light corn syrup
2 tablespoons butter
1 tablespoon water

Steps:

  • Line a 15x10x1-in. baking pan with aluminum foil. Coat the foil with cooking spray; set aside. , In a small bowl, cream butter and brown sugar until light and fluffy. Combine flour and salt; gradually add to creamed mixture and mix well. , Press into prepared pan. Bake at 350° for 6 minutes. Sprinkle with peanuts. , In a large saucepan, combine topping ingredients. Cook and stir over medium heat until chips and butter are melted. Spread over hot crust. Bake for 12-15 minutes longer or until topping is bubbly. Cool on a wire rack. Cut into bars.

This was a favorite of my grampa's and so it has special meaning. I always think of him when I make them. They're just a great little treat to have on hand and also freeze well to pull out at any time.

Number Of Ingredients 8

1/2 cup butter
1/2 cup brown sugar
1 1/3 cups flour
2/3 cup sugar
2/3 cup light corn syrup
6 ounces butterscotch chips
1/2 cup peanut butter
2 cups corn flakes

Steps:

  • Preheat over to 350 degrees.
  • Cream together the butter and brown sugar.
  • Add the flour and press into a buttered 9x13 baking pan.
  • Bake 15 minutes.
  • In a sauce pan combine the sugar and light corn syrup and bring to a boil.
  • Remove from heat.
  • Add butterscotch chip and peanut butter.
  • Stir until melted.
  • Add corn flakes.
  • Spread carefully onto the crumb crust.
  • Cool and cut into squares.

1-1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1-1/2 cups packed brown sugar
1/2 cup butter, cubed
1/2 cup chunky peanut butter
2 large eggs, room temperature, lightly beaten
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a small bowl, whisk flour, baking powder and salt., In a large saucepan, combine brown sugar, butter and peanut butter; bring to a boil, stirring to blend. Remove from heat; cool slightly, about 10 minutes., Stir in eggs and vanilla. Stir in flour mixture. Transfer to a greased 9-in. square baking pan. Bake until golden brown and a toothpick inserted in center comes out clean (do not overbake), 20-25 minutes. Cool completely in pan on a wire rack. Cut into squares. Store in an airtight container.

2 eggs, beaten
1/2 cup sugar
1/2 cup brown sugar
3/4 cup butter
2 1/2 cups graham cracker crumbs
2 cups miniature marshmallows
3/4 lb butterscotch chips
3 tablespoons peanut butter
1/2 cup chopped pecans or 1/2 cup chopped walnuts
1/2 cup shredded coconut

Steps:

  • Butter a 9" X 13" baking pan.
  • Combine eggs, sugars, and butter in a large, heavy saucepan.
  • Bring to a boil and cook over low for about 2 minutes, stirring constantly.
  • Remove from heat and add the Graham crumbs, marshmallows and coconut.
  • Spread mixture on bottom of prepared pan.
  • Melt butterscotch chips and peanut butter together.
  • Spread over the top of the bars.
  • Chill for at least 6 hours before cutting into squares.
