2 teaspoons smooth peanut butter
1 tablespoon honey
2 tablespoons tamari, eyeball it (dark soy sauce)
1 teaspoon sesame oil (eyeball it)
1 teaspoon ground ginger or 1 inch fresh ginger, peeled and grated
1/4 lb spaghetti, cooked and rinsed under cold water
1 tablespoon light sesame seeds, toasted over medium-low heat for 3 minutes (optional)

Steps:

  • In a medium microwaveable bowl, heat the peanut butter in the microwave oven until melted, about 15-20 seconds (or heat peanut butter over low heat on stove until mushy).
  • Whisk honey and tamari into the peanut butter, then whisk in the sesame oil and the ginger.
  • Toss the spaghetti with the sauce, and top with the sesame seeds, if you want to go really groovy with the noodles.
  • If you want to bump up the crunch factor, add some shredded carrots, scallions, bean sprouts or other veggies.

1/3 pound thin spaghetti, cooked to al dente, drained and cooled

1 scallion, chopped

Steps:

  • Whisk peanut butter, soy, cayenne, oil and sesame oil. Add noodles and toss to coat. Sprinkle noodles with sesame and scallion to garnish.

Pumpkin-Peanut Curry Noodles with Five-Spice Seared Scallops and Shrimp image

1 pound spaghetti
Salt
5 tablespoons vegetable oil or peanut oil
3 cloves garlic, finely chopped
2 inches ginger root, minced or grated
1 red bell pepper, thinly sliced
1/2 teaspoon crushed red pepper flakes
1/4 cup creamy peanut butter
1/4 to 1/3 cup tamari dark soy sauce, eyeball it
1 (15-ounce) can cooked pumpkin
2 rounded tablespoonfuls mild or hot curry paste (recommended: Patak's) found on international foods aisle
3 tablespoons five-spice powder
12 jumbo shrimp, peeled and deveined
12 diver scallops, trimmed and patted dry
4 scallions, cut into 2-inch pieces, then thinly sliced lengthwise into matchsticks

Steps:

  • Heat a large pot of water for noodles. When water boils, salt it and add pasta to cook to al dente or with a bite to it.
  • While pasta cooks, heat a large, deep skillet over medium heat with 2 tablespoons vegetable or peanut oil. Add garlic, ginger, red bell pepper, and pepper flakes to the pan and cook together a couple of minutes, then add peanut butter and melt it. Whisk soy into peanut butter, then stir in pumpkin and curry paste. The sauce will be very thick. Turn down the heat to low. Add a ladle or 2 of pasta cooking water to thin sauce a bit and simmer over low heat. Adjust salt, to taste.
  • Heat a small to medium skillet over high heat. Pour the five-spice powder onto a plate with some salt. Press both sides of the shrimp and scallops into the powder. Add 3 tablespoons of remaining oil to hot skillet. Place the shrimp in the pan and cook 1 minute, flip and sear the other side until just opaque. Remove shrimp to a plate and set aside. Add another 3 tablespoons of oil to the skillet and heat back up to smoking. Add the scallops and sear on both sides until opaque. Remove scallops and add to the plate of shrimp.
  • Drain pasta and return pasta to the pot. Add the curry-pumpkin sauce and toss thoroughly. Serve noodles on 4 plated and top with scallions and seafood.

HOT AND COLD SESAME NOODLES

1/2 pound spaghetti
1/4 cup Tamari dark soy, eyeball it
1/4 rounded cup smooth peanut butter, softened in microwave 15 seconds on high
2 tablespoons cider or rice wine vinegar
1 tablespoon dark sesame oil, eyeball it
2 tablespoons hot sauce
2 cups shredded cabbage and carrot mix, available in produce department
1 cup bean sprouts or pea shoots, any variety, available in produce department
3 scallions, chopped on an angle
2 tablespoons sesame seeds

Steps:

  • Cook pasta to al dente, with a bite to it, then cold shock it to stop the cooking process by running it under cold water in colander. Drain the pasta very well.
  • In the bottom of a large bowl, whisk together soy, peanut butter, vinegar, oil, sesame oil, and hot sauce. Add noodles and veggies and toss to combine the noodles and coat them evenly with sauce. Sprinkle scallions and sesame seeds throughout the salad and serve.

I highly recommend using a natural peanut butter for this recipe. You'll get a richer, more peanuty flavor without the extra sweetener. This is great for a dinner-for-two and you'll have leftovers for lunch the next day!

4 tablespoons soy sauce
2 garlic cloves, minced
2 inches fresh ginger, minced
2 tablespoons sugar
3 tablespoons peanut butter (natural or organic)
1 -2 dash rice vinegar
2 -3 dashes hot sauce (Tabasco)
1 teaspoon salt
8 -10 ounces Asian noodles, preferably soba
2 tablespoons sesame oil
sprinkles of black and white sesame seeds

Steps:

  • Mix the first 8 ingredients together in a nonreactive bowl and set aside.
  • Cook your noodles in a large pot of boiling water, following the directions on the package (probably for 3-5 minutes). Drain and rinse well with cold water. Return to pot and mix noodles with 2 tablespoons sesame oil.
  • If you want to eat your noodles cold, let them cool in the oil before mixing the peanut sauce with them. This will help the flavors stay bright. If you're eating them right away, mix the peanut sauce in right away and enjoy. Sprinkle sesame seeds on individual portions for extra flavor and crunch.

4 tablespoons crunchy peanut butter or 4 tablespoons creamy peanut butter
4 tablespoons soy sauce
1/8 teaspoon crushed red pepper flakes
1/8 teaspoon cayenne pepper
2 tablespoons peanut oil
1 tablespoon sesame oil
1/2 teaspoon sugar
1 lb linguine, cooked and drained

Steps:

  • Whisk together the peanut butter, soy sauce, cayenne, crushed red pepper, olive oil, sesame oil and sugar until the mixture is thoroughly blended.
  • Add the cooled noodles and toss to coat.
  • Serve at room temperature, garnish with sesame seeds and sliced scallions.
