PEANUT BUTTER BUTTERSCOTCH COOKIES

Peanut Butter Butterscotch Cookies image

Soft peanut butter cookies filled with butterscotch chips and finished with a sprinkle of sea salt. Sweet, salty and absolutely perfect!

Provided by Allison - Celebrating Sweets

Categories     Dessert

Time 25m

Number Of Ingredients 12

1 1/3 cup all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
10 tablespoons unsalted butter (softened (1 1/4 sticks))
2/3 cup creamy peanut butter (at room temp)
1/4 cup granulated sugar
2/3 cup brown sugar (packed)
1 large egg
1 teaspoon vanilla extract
1 cup butterscotch chips (divided)
sea salt (I like flaky Maldon sea salt) (for topping)

Steps:

  • Preheat oven to 350°F. Line two baking sheets with parchment paper and set aside.
  • In a medium bowl, combine flour, baking powder, baking soda and salt and set side.
  • In a large bowl, using a hand mixer or stand mixer, beat butter and peanut butter until smooth and combined. Add both sugars and beat to combine. Beat in egg and vanilla extract. Add the flour mixture all at once and beat until just combined. Stir in about 2/3 cup of butterscotch chips (reserving the rest for topping the cookies).
  • Scoop the dough into balls (I use a 1 1/2 tablespoon scoop), and place a couple inches apart on the prepared baking sheets. Press a few of remaining butterscotch chips on top of the dough balls. Bake for 8-11 minutes, until the edges are light golden brown, but the center is still slightly underdone. Immediately sprinkle with sea salt, and place the sheets on wire racks to cool. Repeat with remaining dough, allowing the cookie sheets to cool COMPLETELY before placing dough on them.

PEANUT BUTTER COOKIES

Peanut Butter Cookies image

The hash mark may be one of the most prevalent symbols in modern life, but it's been the "mark" of peanut butter cookies for more than eighty years, and for good reason. Pressing a hash mark into each cookie ensures this dense dough will flatten out and bake evenly. While using this kitchen-tested recipe ensures your peanut butter cookies will turn out perfectly. It's been in Betty's back pocket for quite some time, and you can bet this recipe isn't going anywhere soon. Home cooks from all over have claimed this to be the best peanut butter cookie they've ever made-and we certainly agree! Soft and chewy with the perfect salty-sweet balance, these tender cookies will disappear at every potluck, party or cookie exchange. For an added bit of sparkle, roll your cookies in coarse sparkling sugar just before baking.

Provided by Diane Penix

Categories     Cookies

Time 30m

Number Of Ingredients 3

1 to 1-1/2 pkg butterscotch chips
1/2 to 1 c peanut butter
6 c rice crispy cereal (or crushed corn flakes)

Steps:

  • 1. Melt butterscotch chips in double boiler and add peanut butter and stir until peanut butter is melted.
  • 2. Pour over cereal that has been put in a large mixing bowl.
  • 3. Put waxed paper on cookie sheet(s) and place cereal mixture by the spoonful (any size spoon depending on how large you want your cookies) onto the cookie sheet. Place in refrigerator or other cool place (I put mine outside in the winter as I live in Michigan) and chill until set. Keep uneaten cookies in a cold or cool place (especially in hot weather) as they will break up.
