Peanut Butter Oat Bread image

This is a good bread. I warm it in the microwave and spread it with honey butter.

Number Of Ingredients 9

1 1/2 c all purpose flour
1 c quick cooking oats
1 c sugar
1 Tbsp baking powder
1/2 tsp salt
3/4 c chunky peanut butter
1 large egg
1 c milk
1 tsp vanilla extract

Steps:

  • 1. In a bowl, mix your flour, oats, sugar, baking powder, and salt. Cut in peanut butter until crumbly.
  • 2. Combine the egg, milk, and vanilla and stir into your dry ingredients just until moistened. Transfer to a 9x5 greased loaf pan.
  • 3. Bake at 350 for 55-60 minutes or until tests done in center with tooth pick. Cool 10 minutes before removing from pan to wire rack. 1 loaf

1/2 cup peanut butter (creamy or crunchy)
3 cups white bread flour
1/4 cup brown sugar
1 1/2 teaspoons salt
3 teaspoons active dry yeast

Steps:

  • Add ingrdients in the order listed by your bread machine's manufacturer. I usually choose light crust. Use the white, rapid, or delay bake cycles.

This is one of my favorite ABM loaves. It is substantial without being heavy. I always end up leaving out the nuts though. Cooking time will vary with ABM model.

2 tablespoons vegetable oil
2 tablespoons honey
1 teaspoon salt
1 cup oats
1/2 cup whole wheat flour
1 1/2 cups bread flour
3 tablespoons nonfat dry milk powder
1 1/2 teaspoons dry yeast
1/2 cup chopped walnuts

Steps:

  • Add in the order directed by your ABM.
  • At the beep, add the chopped nuts.

1-3/4 cups water
1/8 teaspoon salt
1 cup old-fashioned oats
2 tablespoons creamy peanut butter
2 tablespoons honey
2 teaspoons ground flaxseed
1/2 to 1 teaspoon ground cinnamon
Chopped apple, optional

Steps:

  • In a small saucepan, bring water and salt to a boil. Stir in oats; cook 5 minutes over medium heat, stirring occasionally. Transfer oatmeal to 2 bowls; in each bowl, stir half each peanut butter, honey, flaxseed, cinnamon and, if desired, apple. Serve immediately.

1 1/2 cups water
1/2 cup honey
1/3 cup margarine or 1/3 cup butter
5 1/2-6 1/2 cups all-purpose flour
1 cup quick-cooking oats
2 teaspoons salt
2 (1/4 ounce) packages active dry yeast (or 2 tablespoons from bulk)
2 eggs
1 egg white
1 tablespoon water
oatmeal (for top)

Steps:

  • Place water, honey, and margarine in small saucepan.
  • Heat over low heat until mixture is very warm (120-130°F).
  • Place 5 cups flour, oats, salt and yeast in mixer bowl.
  • Mix with dough hook on speed 2 (low) about 15 seconds.
  • Continue mixing, gradually adding warm water mixture and mix for 1 minute.
  • Add eggs and mix 1 minute longer.
  • Still on speed 2, add remaining flour, 1/2 cup at a time, and mix about 2 minutes, or until dough clings to hook and cleans side of bowl.
  • Knead on speed 2 about 2 minutes longer.
  • Place dough in greased bowl, turning to grease top.
  • Cover.
  • Let rise in warm place, free from draft, about 1 hour, or until doubled.
  • Punch dough down and divide in half.
  • Shape each half into a loaf.
  • Place in greased 8 1/2 x 4 1/2 x 2 1/2 inch baking pan.
  • Beat egg white and water together with a fork.
  • Brush top of loaves with mixture.
  • Sprinkle with oatmeal.
  • Bake at 375°F for 40 minutes.
  • Remove from pans immediately and cool on wire racks.

1 cup milk
1 dash salt
1 cup rolled oats
1/4 cup peanut butter
1/8 cup honey

Steps:

  • Combine the water, milk, salt and oats together in a medium saucepot over high heat.
  • Bring to a boil, then turn the heat down to low and cook, stirring constantly for about 5 minutes or until the liquid is just absorbed.
  • Stir in the peanut butter (I love to use extra chunky - then you get wonderful peanut chunks in your oatmeal which is my favorite), cover the pot and turn off the heat.
  • Let the pot sit on the burner with the heat off and covered for 5 minutes, then uncover and stir.
  • Serve topped with the honey - use less or more than the specified amount according to your tastes.
