1 (18-ounce) package refrigerated sugar cookie dough, softened
1/2 cup creamy peanut butter
Prepared chocolate frosting

Steps:

Preheat oven to 350 degrees F.
Grease mini-cupcake pans with nonstick cooking spray. Mix cookie dough with peanut butter just until swirled. Press 1 rounded teaspoonful of dough into each of the prepared cups. Bake for 12 minutes. Cool in pans. Run a small knife carefully around the edge. Remove from pans to a cooling rack. When completely cool, place a scant teaspoonful of frosting in the center of each cookie.

1 cup confectioners' sugar
1 tablespoon creamy peanut butter
1 tablespoon 2% milk
1 tablespoon butter
2-1/2 teaspoons baking cocoa
1/2 teaspoon vanilla extract

Steps:

In a small microwave-safe bowl, combine all ingredients. Microwave, uncovered, on high for 30 seconds. Stir until smooth. Press into six paper-lined miniature muffin cups. Refrigerate until set.

Line an 8-inch or 9-inch square baking pan with aluminum foil, leaving an overhang on the sides to lift the finished fudge out.
Melt the peanut butter and butter together in a large bowl. I prefer to slice the butter to make melting easier. Stop the microwave and stir the mixture every minute until completely melted and smooth. Remove from the microwave and stir in the vanilla using a large rubber spatula or wooden spoon. Add the salt if you prefer a salty/sweet fudge. Add the sifted confectioners’ sugar and stir until completely combined. The mixture is very, very thick and resembles cookie dough. If using any add-ins, fold them into the fudge while it is still warm.
Press the fudge into prepared baking pan, smoothing the top with the back of a spatula or spoon. The top will be somewhat oily. Cover tightly with aluminum foil and chill for at least 4 hours or until firm. Cut into pieces.

Line 8x8 glass dish with foil and spray with nonstick cooking spray lightly. Line with 16 whole Reese's {as pictured above.} Set aside.
In a large microwave-safe bowl, stir chocolate chips and sweetened condensed milk together and microwave in 30 second increments until smooth and completely melted. Pour over peanut butter cups and smooth the tops.
Chop up the remaining Reese's and press into the top. Bring to room temperature {about 1 hour} before refrigerating. Once it's pretty solid, remove from the pan using the foil and cut into squares. Serve.
