PEANUT BUTTER CHOCOLATE LAYER BARS

Decadent and delicious, these peanut butter chocolate layer bars are quite a treat!

Number Of Ingredients 13

1 cup unsalted butter (2 sticks, softened)
1 1/2 cups packed brown sugar
2 large eggs
2 cups creamy peanut butter
2 teaspoons vanilla
3 cups unbleached all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 14- ounce can sweetened condensed milk
1 1/2 cups semi sweet chocolate chips
2 tablespoons creamy peanut butter
2 teaspoons vanilla
1/3 cup miniature chocolate chips

Steps:

  • Preheat oven to 350 F. Line a 13x9 baking pan with foil, spray the foil with cooking spray.
  • In mixing bowl, beat the butter until creamy. Add the brown sugar and beat until well combined. Beat in the eggs, one at a time, until combined. Add 2 cups peanut butter and 2 teaspoons of vanilla; beat until combined.
  • In a separate bowl, whisk together the flour, baking soda and salt. Turn mixture down to low and gradually add in the flour mixture until completely combined and dough comes together.
  • To make the filling, heat the sweetened condensed milk, chocolate chips and 2 tablespoons peanut butter, stirring occasionally, in a heavy saucepan over low heat until melted and creamy. Remove from heat and add the 2 teaspoons of vanilla.
  • Measure out 2 cups of the peanut butter dough and set it aside for the topping.
  • Press the remaining dough into the prepared pan. Spread the chocolate filing over the dough in the pan. Crumble the reserved dough over the top of the filling. Sprinkle with miniature chocolate chips.
  • Bake for 30 minutes or until topping is light golden brown. Cool in the pan on a wire rack.
  • Using the foil as handles, lift out of the pan and place on a cutting board. Cut into bars.

1 cup (6 oz. pkg.) semi-sweet chocolate chips
1 cup packed brown sugar
2/3 cup Jif® Creamy Peanut Butter
1/2 cup butter, softened
1 large egg
1 teaspoon vanilla extract
3/4 cup Pillsbury BEST® All Purpose Flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups quick rolled oats

Steps:

  • HEAT oven to 350 degrees F. Spray 13 x 9-inch pan with a no-stick cooking spray. Melt chocolate chips in dry, microwave-safe bowl on HIGH (100% power) 1 minute. Stir. Microwave at additional, 10- to 15-second intervals, stirring just until chips are melted. Set aside.
  • BEAT together brown sugar, peanut butter and butter in large bowl with an electric mixer, until smooth and creamy. Add egg and vanilla. Beat until well blended.
  • STIR together flour, baking soda and salt. Add to peanut butter mixture. Beat just until combined. Stir in oats. Press 3/4 of dough into prepared baking pan. Spread evenly with melted chocolate. Dot chocolate layer with remaining dough.
  • BAKE 24 to 26 minutes. Cool. Cut into 24 bars.

1 pouch (1 lb 1.5 oz) Betty Crocker™ peanut butter cookie mix
3 tablespoons vegetable oil
1 tablespoon water
1 egg
1/2 cup butter, softened
1/2 cup creamy peanut butter
2 cups powdered sugar
2 teaspoons milk
1 cup semisweet chocolate chips
1/4 cup butter

Steps:

  • Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
  • In large bowl, stir all Cookie Base ingredients until soft dough forms. Press dough in bottom of pan using floured fingers. Bake 15 to 18 minutes or until golden brown. Cool completely, about 1 hour.
  • In small bowl, beat all Filling ingredients with electric mixer on medium speed until smooth. Spread mixture evenly over cookie base.
  • In microwavable bowl, microwave all Frosting ingredients on High 30 seconds; stir until smooth. Cool 10 minutes; spread over filling. Refrigerate 30 minutes or until set. For bars, cut into 9 rows by 4 rows.

We all loved this one! It has the texture of a brownie, but the taste of a peanut butter chocolate chip cookie. My kids both helped me make it and eat it!

1 cup creamy peanut butter
6 tablespoons butter (softened)
1 1/4 cups sugar
3 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
2 cups milk chocolate chips or 2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. In a large mixer bowl, beat the peanut butter and butter until smooth, about 1 minute. Add the sugar, eggs and vanilla, and beat until creamy. Blend in the flour and salt. Stir in 1 cup of the chocolate chips and spread into an ungreased 13x9 inch baking pan. Bake for about 25-30 minutes, or until edges begin to brown.
  • Immediately sprinkle the remaining morsels over the cookie layer. Either let sit 5 minutes, or put back in the oven for 1 minute, until the morsels become shiny and soft. Spread the rest of the chocolate chips evenly over the top. Cool completely and serve. Enjoy!

1 cup semisweet chocolate chips
1/2 cup Reese's peanut butter chips

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.

  • Sprinkle chocolate chips over mixture in pan while it's still warm. As they melt, spread the chocolate chips evenly onto cookie mixture with a rubber spatula.
  • Cool in refrigerator for 20 minutes. Meanwhile, beat together powdered sugar, remaining peanut butter and milk until the mixture reaches a smooth consistency. Spread the powdered sugar mixture over cooled cookie and chocolate bars in pan. Cut into bars.
