These gluten free peanut butter blondies are meant for true peanut butter lovers. They're soft, chewy bars flavored with brown sugar, vanilla, and full of chopped peanuts, creamy natural peanut butter, and studded with peanut butter chips.

1/4 C Nutiva palm shortening (or butter)
1/2 C natural peanut butter
1 large egg
1/2 C light brown sugar, packed
2 tsp vanilla extract
1 1/4 C all-purpose gluten free flour
1/2 tsp xanthan gum
1/2 C granulated sugar
1/2 tsp baking powder
1/8 tsp baking soda
1/2 tsp fine sea salt
1/2 C peanut butter chips
1/4 C chopped peanuts

Steps:

  • Preheat oven to 350 degrees and line an 8x8 inch baking dish with parchment paper.
  • In a large microwave safe bowl, add the shortening (or butter) and melt in the microwave. Stir in the peanut butter. Whisk in the egg, brown sugar, and vanilla.
  • Add the flour, xanthan gum, granulated sugar, baking powder, baking soda, and salt. Stir well to combine - mixture will be on the drier side but should be moist enough so that all the dry ingredients are mixed in.
  • Stir in the peanut butter chips and chopped peanuts and then transfer the dough to the prepared baking pan.
  • Bake at 350 degrees for 22-25 minutes. Bake on the low end of the baking time for gooier blondies, bake longer for firmer blondies. Cool completely before cutting. Store in an airtight container.

2/3 cup creamy peanut butter
1/2 cup packed brown sugar
1/4 cup sugar
1/4 cup unsweetened applesauce
2 large eggs, room temperature
1 teaspoon vanilla extract
1 cup gluten-free all-purpose baking flour
1-1/4 teaspoons baking powder
1 teaspoon xanthan gum
1/4 teaspoon salt
1/2 cup semisweet chocolate chips
1/4 cup salted peanuts, chopped

Steps:

  • In a large bowl, combine the peanut butter, sugars and applesauce. Beat in eggs and vanilla until blended. Combine the flour, baking powder, xanthan gum and salt; gradually add to peanut butter mixture and mix well. Stir in chocolate chips and peanuts., Transfer to a 9-in. square baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares.

115 grams (1/2 cup or 1 stick) butter, melted
125 grams (1/2 cup) smooth peanut butter*
225 grams (1 and 1/4 cup) brown sugar
1 teaspoon vanilla extract
1 egg + 1 egg yolk
175 grams (1 and 1/4 cup) plain flour or all purpose flour
1/2 teaspoon baking powder
150 grams (1 cup) chocolate chips
30 grams (1/2 cup) mini marshmallows

Steps:

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch square baking tin with baking or parchment paper, ensuring two sides overhang.
  • In a large mixing bowl, add melted butter. Then add peanut butter, sugar, vanilla and eggs and gently whisk together.
  • Add flour and baking powder. Stir until smooth batter forms. Add chocolate chips and marshmallows and stir again.
  • Pour blondie batter into prepared tin, smooth the top and place in the oven. Bake blondies for approximately 30 minutes or until golden on the edges and a skewer inserted in the middle comes out clean.
  • Leave in pan to cool completely - blondies will firm up as they cool. Cut into squares to serve.

1 cup creamy peanut butter
1 stick butter, softened
2 large eggs
2 teaspoons vanilla extract
1 1/2 cups gluten-free flour blend
1 teaspoon baking powder
1/2 teaspoon salt
2 cups chocolate chips

Steps:

  • Preheat oven to 350 degrees F. Line a 9x13 inch baking dish with foil or spray with nonstick cooking spray.
  • Cream together the brown sugar, peanut butter, butter, and eggs until a thick paste forms. Use an electric mixer set to medium speed. Add the eggs, one at a time, until combined. Add the vanilla and mix for another minute.
  • Stop the mixer and add the gluten-free flour, baking powder, and salt. Turn mixer to low speed. Mix until combined. Batter will be thick. Stir in chocolate chips, if using.

1/3 cup mild oil like coconut oil (melted) or other vegetable oil
1 cup brown sugar or unrefined coconut palm sugar
1/2 cup milk, dairy or non-dairy
2 tsp. pure vanilla extract
1 1/4 cups gfJules™ All Purpose Gluten Free Flour
1 1/2 teaspoon baking powder
2 KIND Bars, chopped (I used Peanut Butter-Dark Chocolate + Protein flavor) OPTIONAL

Steps:

  • Preheat oven to 350º F. Lightly oil and line with parchment an 8×8 baking dish and set aside. (parchment makes it easier to remove the blondies and easier to clean the pan!) In a large mixing bowl, combine peanut butter, oil and brown sugar. Once mixed, add in milk and vanilla extract. Slowly stir in Jules Flour and baking powder.
