BANANA FRITTERS
Banana Fritters. These are a lovely crispy treat, serve warm as they are or with some syrup drizzled over or a blob of ice cream! A great way to use up spare or leftover bananas too! Really quick and easy to make dessert.

Steps:
- In a bowl, add the flour, baking powder and salt.
- Add the water and oil and combine with a hand whisk. The consistency should be thick, like heavy cream and be able to coat a spoon. If it is too thick, add a drop more water, too thin, add a little more flour. Set aside.
- Heat a pan with vegetable oil until it reaches 180 C or 350 F. Make sure you do not over fill the pan with oil. I use a small saucepan and cook in batches, filling the pan 1/3rd deep with cooking oil.
- Whilst the oil is heating up. peel the banana, cut in half and then slice length ways in half so you have 4 pieces. Dip each piece in the batter so it is fully coated and carefully place in the pan, cooking both sides until golden brown. ** To tell if the oil is hot enough, drop a tiny bit of batter, the size of a pea in to the oil. If it sizzles and floats to the top immediately, the oil is hot enough.
- Place the fritters on some kitchen paper then dip into a bowl with sugar to coat.
- Serve immediately as they are or with some syrup drizzled over the top or a blob of ice cream!

BANANA FRITTERS ON A STICK
Steps:
- Skewer the bananas with popsicle sticks. Whisk the egg and then whisk in the milk. Dip each banana in the egg then toss in the bread crumbs to coat. Repeat the process to create a second coating. Heat oil to 365 degrees and drop in the bananas, moving them around to brown evenly on all sides. Place on paper towels to drain.
- Dipping Sauce: Scald milk in a medium saucepan and transfer to a bowl containing chopped chocolate, gently stirring until chocolate is completely melted. Add vanilla and whisk in peanut butter until smooth.
- Dust the banana fritters with confectioners' sugar. Drizzle chocolate peanut butter sauce over bananas or use as a dipping sauce.
PEANUT BUTTER BANANA FRITTERS DRIZZLED WITH CHOCOLATE SAUCE

- Combine the flour, sugar, baking powder,salt and soda in a bowl and mix. Add the bananas, peanut butter, milk and egg and whisk until the consistency is such that it can be balled up in a spoon. In a medium saucepan, heat the peanut oil to 375 degrees F. Using a teaspoon, delicately spoon the batter into the oil, a few balls at a time and deep fry until they fluff up and become crispy and golden bown - about 5 minutes. Strain on a wire rack.
- To make the chocolate sauce, bring a cup of water to a simmer in a pot. Add a large metal bowl over the top of the pot. In the metal bowl, add the chocolate chunks and whipping cream, then whisk until it melts together.
- Generously drizzle the chocolate sauce over the fritters and serve.

BANANA S'MORE NACHOS WITH PEANUT BUTTER SAUCE
Steps:
- Preheat oven to 350 degrees F. Lightly spray an 11 by 7-inch baking dish or a medium sized oval baking dish with cooking spray.
- Layer half of graham crackers, chopped bananas, chocolate chips, and marshmallows into the baking dish. Repeat with remaining ingredients. Bake in for 10 to 12 minutes or until marshmallows have turned slightly golden and chocolate chips are melted.
- For Sauce:
- In a small saucepan over medium-low heat, combine the milk and pumpkin pie spice. Once the milk is hot, whisk in peanut butter until well combined and smooth and let cook for another 3 minutes until thick. Drizzle sauce over top of baked S'more's.
BANANA FRITTERS WITH CHOCOLATE SAUCE
Steps:
- In a bowl, whisk together the egg yolks, milk, and butter. Add the flour, salt, and the sugar to the egg mixture, combine well, beat until mixture is smooth, and allow to rest in the refrigerator for about 2 hours.
- In a dry clean bowl whip the egg whites until stiff, but not dry. Fold the egg whites into the batter with a rubber spatula.
- In a large heavy-bottom saucepan, pour enough oil to fill the pan about a third of the way, about 3 to 5 inches.
- Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. dredge the banana pieces in the confectioners' sugar then dip the pieces into the batter. Deep-fry the bananas in batches until golden brown, about 3 to 4 minutes.
- Drizzle with chocolate sauce. Garnish with mint leaves.
- In a heavy bottom saucepan, put chocolate and water. Over low heat, melt the chocolate, while stirring. Boil the mixture for 1 minute. Remove from the heat and add the rum.
CHOCOLATE PEANUT BUTTER FROZEN BANANA RECIPE BY TASTY

Steps:
- Cut the bananas in half horizontally.
- Insert popsicle sticks in the middle of the banana halves. Transfer bananas to a parchment paper-lined baking sheet, and freeze until solid.
- In a tall glass or mixing cup, add chocolate and coconut oil. Microwave in 30-second intervals for 1 minute and a half, and mix until smooth.
- In a bowl, mix the peanut butter and almond milk until smooth.
- Dip the bananas into the chocolate coating, then drizzle the peanut butter sauce on the banana.
- Place bananas in freezer until the coating has hardened.
- Enjoy!
