PEANUT BUTTER GRANOLA BARS
These make a wonderful healthy treat! Use chopped nuts in place of or with the dried fruit if you like.

- Melt peanut butter and honey together in a saucepan over medium heat. Dissolve brown sugar into the peanut butter mixture; bring to a simmer for 2 minutes.
- Mix granola, oats, rice cereal, chocolate chips, and fruit together in a large bowl; pour peanut butter mixture over the granola mixture and fold to coat.
- Grease a cake pan. Pour the granola mixture into the prepared pan and press into a flat layer. Cool at room temperature until set, about 15 minutes before cutting into bars.

- Preheat oven to 350°. In a large bowl, beat the peanut butter, honey, egg, oil and vanilla until blended. Combine the oats, brown sugar and salt; add to the peanut butter mixture and mix well. Stir in chips. (Batter will be sticky.), Press into a greased 13x9-in. baking pan. Bake until mixture is set and edges are lightly browned, 12-15 minutes. Cool on a wire rack. Cut into bars.

Steps:
- To toast almonds, spread out evenly on a baking sheet. Bake at 350 degrees for 8 - 10 minutes, stirring occasionally. You should be able to smell a nutty aroma when they are done.
- Add peanut butter, honey and vanilla in a large saucepan and heat until the peanut butter melts.
- Remove from heat and stir in the remaining ingredients.
- Press into an 8x8 dish and let sit until firm.
- Cut into bars and wrap in plastic wrap.

- 1. Preheat oven to 350° F. Line an 8x8-inch baking dish with parchment paper overlapping on opposite sides to easy lift bars from the dish when finished.
- 2. Spread almonds on a baking sheet and toast for 5-7 minutes. Check regularly so they don’t burn. Remove from the oven, let it cool completely. Reduce oven temperature to 300° F. Combine oats and toasted almond in a food processor and give it a couple of pulses to make pieces smaller. Don’t overdo it. You need smaller pieces, not flour.
- 3. In a big bowl combine oats, almonds, unsweetened shredded coconut, dried cranberries, mini chocolate chips, and salt. Mix together until fully combined.
- 4. In a small pot combine peanut butter, honey, maple syrup, and vanilla. Heat it slightly over medium heat. You need it warm enough, so the ingredients are easy to combine, but not too hot to melt chocolate chips. Whisk the mixture well until fully incorporated.
