Peaches & Cream Dessert Bars image

If you love fresh, summer peaches this dessert is for you! My Peaches & Cream Dessert Bars have a Pecan Sandie cookie crust, cream cheese filling, fresh peaches and toasted pecans! You don't have to be a Southerner to enjoy this fabulous dessert!

Number Of Ingredients 14

1 (11.3 oz) pkg., Pecan Sandies Cookies
1/2 c. pecans
1/4 c. sugar
1/3 c. melted butter
1 (8 oz. pkg) cream cheese, room temperature
2 Tbsp. milk
1 c. powdered sugar
1 (8 oz. container) frozen whipped topping, thawed
2 1/2 c. fresh or canned peaches, peeled & chopped
1 large (5.9oz. pkg) vanilla pudding mix
3 1/2 c. cold milk
1 (8 oz. container) frozen whipped topping, thawed
1/2 c. chopped, toasted pecans
fresh peach slices for garnish, if desired

Steps:

  • Preheat oven to 350. Lightly spray a 9x13 pan with non-stick spray. Set aside.
  • In a food processor, crush the cookies, pecans and sugar together. Stop to pour in the melted butter. Pulse a few more times to combine. Pour out into the prepared pan. Press crust mixture firmly and evenly into the bottom of the pan. Bake at 350 for 5-7 minutes just to set the crust. Remove from oven and let cool.
  • For the cream cheese layer, cream together the cream cheese, powdered sugar and milk until smooth. Fold in the thawed whipped topping. Spread over the bottom crust. Place in refrigerator while making the second layer.
  • For the peach layer, peel and cut fresh or canned peaches into chunks. Add the peach chunks to the top of the cream cheese layer. Mix the pudding mix and milk. Pour over the top of the peaches.
  • Top with the remaining container of frozen whipped topping and sprinkle with the toasted pecans. Refrigerate for at least 2 hours before serving for the dessert to set-up.
  • Slice and top with additional peach slices if desired.

Peach slices, peach nectar and peach JELL-O add a triple shot of fruity deliciousness to these easy-to-make dessert squares.

1-1/2 cups boiling water
1 pkg. (6 oz.) JELL-O Peach Flavor Gelatin
1/2 tsp. ground cinnamon
ice cubes
1/2 cup peach nectar
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1 can (8.25 oz.) peach slices in juice, drained, chopped

Steps:

  • Add boiling water to combined gelatin mix and cinnamon in large bowl; stir 2 min. until completely dissolved. Add enough ice to nectar to measure 1-1/2 cups. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
  • Pour 1-1/2 cups gelatin into medium bowl; whisk in half the COOL WHIP until blended. Pour into 8-inch square dish. Refrigerate 10 min. or until set but not firm.
  • Stir peaches into remaining gelatin; pour over gelatin layer in dish. Refrigerate 3 hours or until firm.
  • Serve topped with remaining COOL WHIP.

3 ounces peach Jello (small package)
4 ounces cook and serve vanilla pudding mix (small mix)
1½ cups water
8 ounces cool whip (thawed)
3 ounces mini marshmallows (about ⅓ of a 10 oz bag )
4 peaches (diced, 3-4 depending on the size of peaches)

Steps:

  • In a medium saucepan, whisk together Jello mix, pudding mix, and water. Cook over medium heat and bring to a boil.
  • Remove the saucepan from heat and pour into a large mixing bowl. Cover with plastic wrap.
  • Refrigerate until mixture has thickened (overnight or for about 4-6 hours).
  • Once mixture has thickened, beat until creamy with an electric hand mixer.
  • Fold in Cool Whip, marshmallows, and fruit. Chill for about an hour before serving.

A combination of cream cheese and whipped topping on a graham cracker crust topped off with peach slices and peach jello makes for a wonderful make ahead dessert. Allow time in the refrigerator to set.

1 1/3 cups graham cracker crumbs
1/4 cup sugar
1/3 cup butter, melted
1 (8 ounce) package cream cheese, softened
1/4 cup sugar
1/4 cup milk
1 (8 ounce) carton Cool Whip, thawed
1 (15 ounce) can sliced peaches, drained well
1 (3 ounce) package peach Jell-O
3/4 cup boiling water
1 1/4 cups cold water

Steps:

  • Combine graham cracker crumbs, sugar and butter and press into a 9x13 baking dish.
  • Beat together cream cheese and sugar until smooth and gradually add milk.
  • Fold in Cool Whip and spread over crust.
  • Cut peach slices in half lengthwise and arrange over the top.
  • In separate bowl, combine jello with boiling water, then stir in cold water.
  • Refrigerate for 1 1/2 hours or until slightly thickened.
  • Gently spoon jello mixture over peaches and refrigerate until set.

I derived this recipe from one I got here on 'Zaar (Cherry Gelatin Squares recipe #64331 submitted by Carolyn Young). I wanted to try it in a different way as well as make a smaller amount, using less gelatin. I used a whole can of Peach Pie Filling because I did not know what to do with the rest if I used half the can. I am sure it will be be just as good using a half can of the pie filling. Cook time is time it takes to set in the refrigerator. Time is approximate.

1 (2 3/4 ounce) package Royal or Jell-O strawberry gelatin
1 cup boiling water
1/2 cup cold water
1 (10 1/2 ounce) can peach pie filling or 1 (21 ounce) can peach pie filling (depending on how peachy you want it)
whipped topping (optional)

Steps:

  • Put gelatin in a medium sized bowl.
  • Add the boiling water and stir until gelatin is dissolved.
  • Add the cold water and stir.
  • Add the pie filling.
  • Stir until well mixed.
  • Keep the gelatin mixture in the bowl or pour it into a 6 1/2 inch square Pyrex or Corningware dish.
  • Refrigerate until set.
  • Serve in individual soup or salad bowls.
  • Top with whipped topping. (if desired)

  • Make the first peach flavored jello according to package instructions (I used 2 cups ice water for it to cool faster), pour into a 9x13" glass pan and refrigerate until set (1-2 hrs).
  • After the first layer of jello has been in the fridge at least 45 mins, start on your cream layer: In a medium bowl, combine 2 packets of unflavored gelatin with 1 cup boiling water and stir until fully dissolved. Stir in 1 cup cold water. Pour in condensed milk and stir with a spoon until blended. Let cream layer sit at room temp (no more than 45 min), then gently pour over your set jello layer.
  • Once cream layer is nearly set (this takes about 5 min in the fridge), top with slices of peaches. Note: If you want the peaches to stay put in a pattern and not float up, you want to place them on the cream layer before it is fully set. Place back in the fridge to fully set.
  • You want to start your last jello layer right after the cream layer goes into the fridge. Make the second package of peach flavored jello according to package instructions and let sit on the counter until it is room temperature (30 min - it's faster if you use ice water) then gently pour over the top of your set peaches and refrigerate until entire jello is fully set. Note: Do not pour warm jello over the cream layer or it will start to melt and become mottled.
