MINT LEMON SYRUP

Mint Lemon Syrup image

Provided by Claire Robinson

Categories     condiment

Yield 2 servings

Number Of Ingredients 5

1/4 cup granulated sugar
1/4 cup freshly squeezed lemon juice, plus 2 teaspoons finely grated lemon zest
2 tablespoons chiffonade of fresh mint, plus whole leaves for garnish
1 fresh mango, sliced
1 cup fresh berries

Steps:

  • In a small saucepan over moderate heat, bring the sugar, 1/4 cup water, lemon juice and zest to a boil and cook until the sugar has dissolved and the mixture has reduced by half. Chill in the fridge at least 1 hour and up to 24 hours. Right before serving, stir in the mint and pour over the mangos and berries. Garnish with whole mint leaves.
  • BYOC: You will love this syrup so much you will be pouring it over fruit all year long. For something a little different, try using fresh basil instead of the mint. This also makes a fantastic base for a drink. Try a mojito by adding a bit of rum and club soda. Or try adding fresh ginger for a kick of warm spice.

3 small bay leaves , lightly crushed
juice of ½ lime
6 ripe peaches or nectarines

MINTED POACHED PEACHES

Minted Poached Peaches image

You can reserve the syrup to poach other fruits, such as nectarines. Store in the refrigerator and simply top off with a little water as needed.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Time 20m

Number Of Ingredients 6

6 firm, ripe peaches
2 cups sugar
1 vanilla bean, split (or 1/2 teaspoon pure vanilla extract)
2 strips lemon zest
1 large mint sprig, plus more for serving
4 cups water

Steps:

  • Using a paring knife, lightly score an X into bottom of peaches (this will help with peeling later). In a large saucepan, combine sugar, vanilla, lemon zest, mint, and water. Cook over medium, stirring occasionally, until sugar has dissolved, about 2 minutes.
  • Add peaches and enough water to cover. Bring to a bare simmer, and cook, turning occasionally, until peaches are easily pierced with a skewer, 6 to 10 minutes, depending on ripeness of peaches.
  • Remove peaches with a slotted spoon; let cool slightly. Using a paring knife, peel peaches; return to syrup. Serve with mint sprigs.

  • In a medium saucepan, combine diced peaches, granulated sugar, and 1 cup water. Bring to a boil, reduce heat, and simmer about 5 minutes until sugar is dissolved and peaches are fragrant. Remove from heat, stir in chopped mint leaves, and let steep until cooled, about an hour. Strain through a fine-mesh sieve, pressing on solids to release juices. Discard solids.
  • In a large pitcher, combine lemon juice (I always start with 1/2 cup and increase to taste from there), peach-mint simple syrup, and 4 cups cold water, to your personal sweetness/tartness preferences. (This will also depend on the sweetness of your peaches, which can vary widely. Remember that lemonade will further dilute in flavor when served over ice, so it's best to keep the mixture slightly concentrated.) Pour into ice-filled glasses garnished with additional peach slices and a sprig of mint, if desired.
  • Spike it for the adults: Add bourbon, white rum, peach schnapps, tequila, or citrus-flavored vodka, to taste.
