I acquired this delicious peach pie filling recipe some 40 years ago, when my husband and I first moved to southern Iowa and had peach trees growing in our backyard. It's been a family favorite since then and always brings back memories of both summer and those happy early years. - June Mueller, Sioux City, Iowa

1/2 cup sugar
1/4 cup packed brown sugar
4-1/2 cups sliced peeled peaches
Dough for double-crust pie
3 tablespoons cornstarch
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
2 teaspoons lemon juice
1 tablespoon butter
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine sugars; add peaches and toss gently. Cover and let stand for 1 hour. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate or iron skillet.Trim even with rim. Refrigerate while preparing filling. , Preheat oven to 400°. Drain peaches, reserving juice. In a small saucepan, combine cornstarch, nutmeg, cinnamon and salt; gradually stir in reserved juice. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in lemon juice and butter. Gently fold in peaches. Pour into crust. , Roll remaining dough to a 1/8-in.-thick circle; cut into 1-1/2-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom crust; flute edge. Cover edge loosely with foil. Bake 40 minutes; remove foil. Bake until crust is golden brown and filling is bubbly, 10-20 minutes longer. Cool on a wire rack. If desired, serve with vanilla ice cream.

2-1/2 cups ice cubes
3 medium peaches, peeled and sliced
3/4 cup thawed frozen limeade concentrate
1/4 cup orange juice
2 tablespoons confectioners' sugar
1/2 cup rum, optional
Grenadine syrup, optional

Steps:

  • Place the ice, peaches, limeade concentrate, orange juice, confectioners' sugar and, if desired, rum in a blender; cover and process for 30 seconds or until smooth. Pour into chilled glasses; add grenadine, if desired. Serve immediately.

1 cup sugar
2 packed cups fresh basil leaves
1 pound frozen peaches, not thawed
1 cup light rum
1/2 cup orange liqueur
2 tablespoons fresh lime juice
Ice
Lime wedges
Fresh basil sprigs

Steps:

  • For the syrup: Boil 1 cup water, sugar and basil over medium heat in a small saucepan. Reduce the heat and simmer, stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove the pan from the heat and allow the mixture to cool, about 15 minutes. Strain before using.
  • Place the syrup, peaches, rum, liqueur and lime juice in a blender. Blend until smooth. Pour into ice-filled glasses and garnish with lime wedges and basil sprigs.

2 sprigs mint
8 ounces mike's hard peach lemonade
1/2 fresh peach, diced (optional)

Steps:

  • Add the rum, peach preserves, lime juice and mint to a cocktail shaker.
  • Muddle the mint and preserves and then fill with ice.
  • Shake well and strain into a chilled daiquiri glass or Mason jar.
  • Top with mike's hard peach lemonade and garnish with fresh peach and an additional sprig of mint, if desired.

1 (3 1/2 ounce) package instant lemon pudding (recipe did not say weather to use instant or cook & serve)
1 (3 ounce) package jell-o lime gelatin
1/3 cup sugar
2 1/2 cups water
2 eggs, slightly beaten
1/2 cup Bacardi light rum
2 cups Cool Whip, Non-Dairy Whipped Topping, thawed
1 (9 inch) baked graham cracker crust (or make your own)

Steps:

  • Mix pudding, gelatin and sugar in saucepan.
  • Stir in 1/2 cup water and eggs blending well.
  • Add remaining water.
  • Stir over medium heat until mixture come to FULL boil.
  • Remove from heat and stir in the rum.
  • Chill about 1 1/2 hours.
  • Blend whipped topping into chilled mixture.
  • Spoon into crust and chill until firm about 2 hours.
  • Garnish with additional whipped topping, lime or lemon slices, grated lime or lemon peel, or graham cracker crumbs.
