PEACH PASTA SALAD WITH FRESH HERB VINAIGRETTE
Steps:
- 1. Combine all of the dressing ingredients in a food processor and blend until smooth. Season to taste with salt and pepper. (Can be made 1 day ahead.) 2. Chop all veggies and peaches into 1 to 2 inch strips. 3. Combine all the salad ingredients (except nuts) in a large bowl. Pour dressing over salad and season the salad with salt and black pepper. 4. Divide the salad among 4 bowls, then sprinkle with nuts and garnish with basil sprigs, if desired.

- Bring a large pot of salted water to a boil. Prepare the pasta according to the package directions, or until slightly past al dente.
- Meanwhile, make the dressing. In a small bowl, whisk together the olive oil, lemon juice, mustard, garlic, herbes de Provence, red pepper flakes, and salt. (Note: the dressing will have a strong flavor, it’ll mellow once it coats all of the pasta salad ingredients).
- Drain the pasta, toss it with a little olive oil (so that it doesn’t stick together) and let it cool to room temp. Transfer to a large bowl with the tomatoes, chickpeas, arugula, cucumbers, feta cheese, basil, parsley, mint, and pine nuts. Pour the dressing and toss to coat. Season to taste with more lemon, salt, pepper, and/or a drizzle of olive oil, if desired, and serve.

- In a small bowl, whisk together the olive oil, lemon juice, salt, pepper and red pepper flakes until well combined. Pour the dressing over warm pasta and add a little reserved pasta water to help keep the pasta moist and non-sticky. Immediately add feta and gently give the pasta a toss.
- Next add in the peach slices, cherry tomatoes, corn, red onion and arugula. Toss to combine. Taste and add more olive oil, lemon juice, salt and/or pepper, if necessary. Great warm or cold. Serves 6.
