My classic Peach Buckle is made with buttermilk, brown sugar, and a boatload of juicy peaches. This quick one bowl recipe is just what you want in summer when ripe fruit is rolling in faster than you can gobble it down.

1/2 cup 1 stick unsalted butter
3 peaches (pitted and thinly sliced (about a pound))
2 Tbsp granulated sugar
1 cup all purpose flour
2 tsp baking powder
1/4 tsp salt
1 cup brown sugar (packed)
1 large egg
3/4 cup buttermilk
1 tsp almond extract
1/4 cup sour cream
1/4 cup heavy cream
1 tsp powdered sugar

Steps:

  • Preheat the oven to 350F
  • Melt the butter in a 10 inch cast iron skillet.
  • Put the peaches in a bowl and sprinkle them with the granulated sugar. Let sit.
  • In your main mixing bowl, whisk together the flour, baking powder, salt and brown sugar. Try to get out any large lumps in the sugar.
  • Whisk the egg and buttermilk together and add it to the bowl, along with the melted butter and extract. Whisk to combine, but don't over beat.
  • Pour the batter into the skillet, and then top with the peach slices (along with any juices.) You can sprinkle the top with raw or sanding sugar if you like.
  • Bake in the center of the oven for about 50 minutes until golden and set. Cover loosely with foil toward the end of cooking if the top seems to be browning too quickly. You can do a toothpick test if you like, but keep in mind that a buckle, like a brownie, is best when moist inside and not over baked.
  • Serve warm with topping of your choice.
  • To make the whipped sour cream topping, whip the sour cream, heavy cream, and sugar until it holds soft peaks.

A cobbler-esque American favourite - this grunt has a bit of hidden sugar and spice, and is very very nice!

1 tbsp cornflour
juice 2 oranges and zest from ½
2 tbsp caster sugar
6 ripe peaches
250g blueberry
200g self-raising flour
50g butter , cut into small pieces, plus 15g/½oz, melted
100g light muscovado sugar
1 tsp ground cinnamon
5-6 tbsp milk

Steps:

  • Heat oven to 190C/170C fan/gas 5. Butter a wide shallow ovenproof dish. Blend the cornflour with the orange zest and juice, and put in a large pan with the sugar. Halve, stone and slice the peaches and add to the pan. Bring slowly to the boil, stirring gently until the sauce is shiny and thickened, about 3-4 mins. Remove from the heat, stir in the blueberries and tip into the prepared dish.
  • Tip the flour into a mixing bowl and add the 50g butter. Rub the butter into the flour until it resembles fine breadcrumbs, then stir in half the sugar. Mix the remaining sugar with the cinnamon and set aside.
  • Add the milk to the dry ingredients and mix to a soft dough. Turn out onto a lightly floured surface and knead briefly. Roll out to an oblong roughly 16 x 24cm. Brush with melted butter and sprinkle evenly with the spicy sugar. Roll up from one long side and cut into 12 slices. Arrange around the top of the dish, leaving the centre uncovered.
  • Bake for 20-25 mins, until the topping is crisp and golden. Serve warm.

2 cups blueberries
¼ cup water
1 cup white sugar
1 tablespoon butter
½ cup white sugar
1 tablespoon butter
1 cup all-purpose flour
2 teaspoons baking powder
⅛ teaspoon salt
½ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine blueberries, water, 1 cup white sugar, and 1 tablespoon butter in a saucepan; cook and stir over medium heat until heated through, about 5 minutes. Transfer blueberry mixture to a deep 1 1/2 to 2-quart baking dish.
  • Beat 1/2 cup white sugar and 1 tablespoon butter together in a bowl until creamy. Sift flour, baking powder, and salt together in a separate bowl; stir into sugar-butter mixture. Add milk; stir until incorporated. Pour batter over blueberries.
  • Bake in the preheated oven until lightly browned and bubbling, about 30 minutes.

2 oranges, use the juice from both and the zest from 1/2
2 tablespoons caster sugar
6 peaches
250 g blueberries
