PEACH FREEZER MARMALADE

Peach Freezer Marmalade image

Marmalade is basically jam made with citrus fruit. A purist will tell you that it is made with bitter Seville oranges but my mom always just used an entire naval orange...minus the seeds...so that's what I do. The white part of the orange is called pith. For most recipes, you want to avoid the pith, but for marmalade, it adds not only a little bittersweet flavor, but the pectin found in pith helps to ensure your marmalade will set.

Time 25m

Number Of Ingredients 6

3 cups chopped or mashed (or pulsed in food processor ripe peaches (about 4 large peaches or 2 pounds))
1/4 small naval orange
4 1/2 cups sugar
1 1.59-ounce pouch powdered fruit pectin (Sure-Jell original)
3/4 cup water
2 tablespoons lemon juice ((bottled is best here))

Steps:

  • I like to pulse the peaches in the food processer or finely chop them. Mashing them sometimes creates too much juice. Peel, pit, and cut peaches into quarters, then pulse just enough to chop them-not puree them-or finely chop them on a cutting board. Transfer chopped peaches to a large bowl.
  • Remove seeds from the orange quarter and slice into thin strips or triangles. Add the orange and lemon juice to the peaches and stir in sugar. Let stand 10 minutes, stirring occasionally.
  • Meanwhile, combine pectin and water in a small saucepan, stirring constantly. Bring to a boil over medium heat, stirring constantly. Boil 1 minute. Gradually add cooked pectin to peach mixture, stirring well. Stir about 3 minutes or until sugar is almost dissolved.
  • Spoon peach mixture into plastic or glass 1-cup freezer jars. Wipe rims and cover with lids. Let stand at room temperature overnight. Freeze until firm. Store in freezer. Thaw in refrigerator before serving.

PEACH JAM

Peach Jam image

This easy homemade Peach Jam has just five-ingredients and I've included step-by-step instructions for how to make it!

Provided by Lauren Allen

Categories     Side Dish     Snack

Time 35m

Number Of Ingredients 5

3 cups fresh peaches ((about 2 lbs. fully ripe peaches))
4 1/2 cups granulated sugar
2 Tablespoons fresh lemon juice
3/4 cup water
1 box Sure Jell Fruit Pectin

Steps:

  • Have ready clean plastic or glass containers and lids.
  • Peel and pit peaches. Finely chop or pulse fruit in a food processor until diced. Measure exactly 3 cups of diced peaches into a large bowl (You can eat any extra diced peaches leftover after measuring 3 cups.)
  • Add one cup of sugar to the bowl and stir well. Rest for 5 minutes. Repeat with remaining sugar, adding it a little at a time and resting in between. Stir in lemon juice. Let mixture rest for 10 min.
  • Taste the mixture and if it's still grainy from the sugar don't proceed until the sugar has dissolved! (If needed, you could place the heat-proof bowl or peaches over a saucepan of warm water on the stove. Gently stir the mixture and the heat will help the sugar to dissolve.)
  • Meanwhile, add the water and pectin to a small saucepan and stir to combine. Bring mixture to a boil, stirring constantly. Boil and stir for 1 minute, then remove from heat and add to the peach mixture. Stir jam for 3 minutes.
  • You should notice the jam has thickened a little. A will continue to thicken a bit more as it rests. (See notes, if it is still very runny).
  • Fill your glass or plastic containers, leaving 1/2 inch headspace. Wipe rim of jars clean and cover with lids. Let stand at room temperature 24 hours. (This allows the jam time to set up, but feel free to enjoy one of the jars right away!)
  • Store jam in the refrigerator for up to 3 weeks or freeze for up to 1 year.
  • You might also like Strawberry Jam and Raspberry jam!

FREEZER JAM

Freezer Jam image

This is a great way to make jam because it's simple, lower in sugar, and lets the flavor of ripe fruit shine. Our method makes it a cinch to save the last of your favorite summer produce, like nectarines, plums, or berries. The key ingredient is pectin, which gives this jam the right consistency. The recipe is so easy, you might just need a second freezer!

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 2h45m

Yield Makes 7 cups

Number Of Ingredients 4

5 cups crushed plums, peaches, or nectarines (about 3 pounds fruit), any bruised spots cut away
1/3 cup fresh lemon juice (from 2 lemons)
2 1/2 cups granulated sugar
1/3 cup (1.75 ounces) powdered, no-sugar-needed pectin

Steps:

  • Thoroughly wash, rinse, and dry seven 8-ounce plastic freezer or glass jars with tight-fitting lids. You can also use zip-top freezer bags.
  • In a medium pot, combine fruit and lemon juice. Bring to a boil over medium-high.
  • In a bowl, whisk together sugar and pectin; add to fruit, stirring until sugar mixture dissolves and fruit returns to a full rolling boil. Boil 1 minute, then remove from heat.
  • Transfer to jars or bags, leaving a 1/2-inch space on top. Seal and let sit at room temperature until jam is set, 2 to 3 hours. To store, freeze, up to 6 months. To thaw jam, transfer to the refrigerator and use within 3 weeks.
