"PEACH COBBLER FAKE OUT"



This is for us ladies who are pie crust challenged !!! You won't believe it's made from sliced bread !!! shhhhhh...Don't tell anybody !!

Number Of Ingredients 7

6-8 peaches..peeled & sliced..or a large can of sliced peaches
4 slice white bread..crust removed, sliced into strips
1 stick butter or margarine, melted
1 1/2 c sugar
1 large egg , beaten
2 Tbsp flour..either kind...sr or plain
1 tsp cinnamon ..to taste.

Steps:

  • 1. Spray a 8x10 in. pan with pam
  • 2. lay peach slices on bottom.
  • 3. Place bread slices on top of peaches.
  • 4. Melt butter with sugar in sauce pan.
  • 5. Add beaten egg & flour.
  • 6. Add cinnamon.
  • 7. Pour over bread & peaches.
  • 8. Bake @ 350 until golden brown.

In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

1/2 cup butter, melted
1 can (15-1/4 ounces) sliced peaches, drained
1-1/4 cups sugar, divided
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup 2% milk
Whipped cream, optional

Steps:

  • Preheat oven to 400°. Pour butter into a shallow 2-qt. baking dish; set aside. Drain peaches, reserving 1/4 cup juice. In a saucepan, bring peaches and reserved 1/4 cup juice just to a boil. Meanwhile, in a bowl, combine 1 cup sugar, flour, baking powder and salt. Stir in milk; mix well. Pour over butter in baking dish. Spoon hot peaches over batter. Sprinkle with remaining 1/4 cup sugar. Bake until bubbly and golden, 20-25 minutes. Serve warm and if desired, with whipped cream.

I love cobblers, especially peach, but there are days you just don't have the time to make the "real thing". So here is a short cut that is fast, good, and tasty hot or cold. For a special treat, add a scoop of vanilla ice cream on top of a bowlful...yummers!!

2 (29 ounce) cans peaches in heavy syrup
1 (18 1/4 ounce) box yellow cake mix (no pudding)
1/4 cup butter or 1/4 cup margarine, cut into cubes

Steps:

  • Heat oven to 350 degrees.
  • Pour peaches with syrup into 13 by 9 pan.
  • Sprinkle cake mix over the top and fold into peaches and syrup.
  • Put the little cubes of butter all over the top.
  • Bake 35 - 40 minutes.

5 cups sliced peeled fresh or thawed frozen peaches (about 2 pounds)
1/2 cup packed dark brown sugar
1/4 cup granulated sugar
2 tablespoons cornstarch
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon kosher salt
Juice of 1 lemon
One 15.25-ounce box yellow cake mix
1 1/2 sticks (3/4 cup) unsalted butter, thinly sliced
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with cooking spray.
  • Toss together the sliced peaches, brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg, salt, and lemon juice in a large bowl. Let sit 15 minutes.

  • In a small saucepan, combine the peaches, lemon juice, and remaining cup of sugar and bring to a boil over high heat, stirring constantly. Pour the peaches over the batter but do not stir them together. Sprinkle with cinnamon or nutmeg if desired.

1 cup packed brown sugar
1/4 cup cornstarch
1 cup water
9 cups sliced fresh or frozen peaches
1/4 cup butter

TOPPING:
2 cups all-purpose flour
3/4 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
3/4 cup 2% milk
1/2 cup butter, melted
1-1/2 teaspoons grated orange zest, optional
Vanilla ice cream, optional

Steps:

  • Preheat oven to 400°. In a Dutch oven, combine brown sugar, cornstarch and water until smooth. Add peaches; bring to a boil. Cook and stir for 2 minutes. Reduce heat to low; stir in butter and lemon juice. , For topping, combine flour, sugar, baking powder and salt in a bowl. Stir in milk, butter and orange zest if desired. Transfer hot peach mixture to an ungreased 13x9-in. baking dish. Spoon topping over peaches. Bake, uncovered, until golden brown, 30 to 35 minutes. If desired, serve with vanilla ice cream.
