CINNAMON ROLL PEACH COBBLER



Cinnamon Roll Peach Cobbler image

Take a package of refrigerator cinnamon rolls and re-purpose them for your dinner dessert! Use fresh or frozen peaches, and add a scoop of vanilla ice cream, if you wish.

½ cup water
½ cup butter, divided
¼ cup white sugar
1 teaspoon lemon juice
1 pinch salt
6 cups fresh peach slices
1 (12.4 ounce) package refrigerated cinnamon roll dough with cream cheese frosting

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine water, 1/4 cup butter, sugar, lemon juice, and salt in a large pot over medium heat. Stir and cook until butter is melted and sugar is dissolved, 5 to 10 minutes. Remove from heat and stir in cream cheese frosting from cinnamon roll package.
  • Add peach slices to the pot and stir until coated.
  • Place remaining butter in the bottom of a 2-quart baking dish and put in the preheated oven until butter melts, about 3 minutes. Remove from oven.
  • Cut each of the refrigerated cinnamon rolls into 4 pieces. Place roll pieces into the baking dish and coat on all sides with melted butter. Remove pieces from the baking dish and set aside. Pour peach mixture into the baking dish and top with butter-coated roll pieces, pressing down slightly, until tops are even with the peaches.
  • Bake in the preheated oven until cobbler is browned and bubbling, 45 minutes to 1 hour. Serve warm.

These fruit rolls Can be changed up to suit the seasonal fruit or canned pie filling of your choice.

5 large peaches-peeled, pitted and sliced
2 c water
1 1/2 c granulated sugar
2 Tbsp cornstarch
1 1/3 c buttermilk bisquick mix
2 Tbsp granulated sugar
1 tsp almond extract
2 Tbsp melted margarine
1/3 c milk
2 Tbsp margarine, softened
1/4 c granulated sugar
2 tsp ground cinnamon

Steps:

  • 1. Preheat oven to 425^. In a large saucepan over medium heat, combine the first 4 ingredients. Cook, stirring constantly, until mixture boil. Boil for 1minutee, then remove from heat. In a large bowl, stir together the next 5 ingredients to form a soft dough. Remove to floured surface of Bisquick and knead 8 to 10 strokes. Roll out into a 9-inch square. Spread soft margarine over dough. Combine sugar and cinnamon and sprinkle over dough. Roll dough into jelly roll shape and cut into six slices 1 1/2 inch wide. Pour the hot peach mixture into and 8-inch square baking pan. Place roll slices, cut side up, on top of peach mixture. Bake for 20-25 minutes ,until puffed and golden. Serve warm. Great with coffee and ice cream for an afternoon treat, too.

  • In a saucepan, combine 1/3 cup of butter, milk, sugar and salt. Stir over medium heat, just until milk is warm, not hot, and sugar is dissolved and butter is melted. If it gets too hot, let it cool slightly.
  • Add warm milk mixture to the yeast and flour and mix on low speed until incorporated. Add eggs and continue to mix on low for 6-7 minutes. Dough will be sticky but manageable.
  • Lightly butter a large bowl and place the dough in it. Cover with plastic wrap slightly greased with butter to keep dough from sticking to it when it rises. Place in warm place until doubled in size 60-90 minutes.
