1 ounce vodka
1 ounce peach liqueur
1 ounce Prosecco
1/2 ounce lemon juice
1/2 ounce peach nectar
2 dashes Fee Brothers peach bitters (optional)
Garnish:
Peach wedge

Steps:

In a cocktail shaker, combine the vodka, peach liqueur, Prosecco, lemon juice, peach nectar, and bitters, if using. Fill the shaker with ice and shake vigorously until completely mixed, about 20 seconds. Strain into a chilled champagne coupe and garnish with a peach wedge.

This frozen Peach Bellini recipe is an upgrade on the classic Italian cocktail made with just three ingredients: sweet peaches, prosecco and peach schnapps!

1 lb frozen peaches (chunks or slices)
3 cups Prosecco
1/3 cup Peach Schnapps (or peach vodka)
2 tablespoons sugar, optional
fresh peach slices
mint leaves

Steps:

Place all ingredients in a blender, puree until smooth. Serve immediately and garnish as desired.

1/3 cup warm water (120° to 130°)
2 tablespoons sugar
1 small peach, peeled
2 teaspoons lemon juice

Steps:

In a small bowl, stir water and sugar until sugar is dissolved. Place peach, lemon juice and sugar mixture in a blender. Cover and process 1 minute or until blended. Transfer to a freezer container; cover and freeze 3 hours or until almost firm., Transfer to blender. Cover and process 30-40 seconds or until slushy. Return to freezer container; cover and freeze overnight., Remove from freezer just before serving. Using a fork, scrape into two dessert dishes.

This simply elegant ice, a mix of peach nectar and Prosecco, has been made famous at Harry's Bar in Venice. Serve it in flutes and top with Prosecco for a lovely aperitif. It is also good on its own, especially between courses. From the May 2005 issue of Bon Appétit. The 'cooking time' is, of course, the 'freezing time'. It takes no more than 10 minutes to make! I've made this with mangoes and it is a recipe that you can certainly have fun with, making with your favourite fruits.

Ingredients

3/4 cup sugar
1/2 cup hot water
1/4 cup orange juice
1 (16 ounce) bag frozen sliced peaches, thawed, juices reserved
1 cup sparkling white wine, chilled

Steps:

Stir the first 3 ingredients in a medium bowl until the sugar dissolves.
Blend the peaches and reserved peach juices in a food processor until the peaches are finely chopped. With the machine running, gradually pour in the sugar syrup; process until smooth.
Add the Prosecco or sparkling wine and blend well.
Transfer the mixture to a container.
Cover and freeze until firm, at least 3 hours. Can be made 2 days ahead and kept frozen.
My notes: The recipe listed Prosecco or sparkling wine in the ingredients, but I was unable to list Prosecco as an ingredient: it kept being rejected. When I made this, I simply used a sparkling wine.
