Split Pea Soup with Chorizo and Sage image

2 tablespoons olive oil
1/2 pound chorizo, sliced 1/2-inch thick
2 large onions, chopped
1 teaspoon salt
1/2 teaspoon black pepper
4 cloves garlic, minced or pureed
2 carrots, peeled and sliced 1/2-inch thick
2 ribs of celery, sliced 1/2-inch thick
2 Yukon Gold potatoes, peeled and diced
2 cups yellow split peas
6 cups stock or water
1 bay leaf
1/2 bunch parsley, washed and chopped
1 bunch fresh sage, leaves sliced thinly crosswise

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the chorizo slices and cook until sausage is lightly browned, about 10 minutes. Remove sausage from pot with slotted spoon and reserve. Add onions, salt and pepper to pot and cook over medium low heat until translucent, about 10 minutes. Add garlic and cook 1 minute to release its aroma. Stir in carrots and celery and cook five minutes. Add potatoes, split peas, stock or water and bay leaf and bring to a simmer. Cook about 45 minutes, until peas are soft. Add back reserved chorizo slices and simmer 5 minutes to combine flavors. Stir in parsley and sage and serve.

This comfort soup gets a wonderful smokey flavor from from the Chorizo and Chipotle Peppers in adobo sauce. You can prepare the soup without the sausage blend the soup and then top with the cooked sausage. Or save some for garnish while blending the rest into the soup.

1 tablespoon olive oil
1 onion, diced
1 celery, sliced
2 medium potatoes, diced
2 carrots, diced
2 garlic cloves, minced
1 teaspoon oregano
1/2-1 teaspoon pepper
1 bay leaf
1/2 lb chorizo sausage, sliced browned and grease discarded
1 (16 ounce) package dried split peas
salt & pepper
1 -2 chipotle chile in adobo, diced your choice to remove seeds
hot sauce (optional)

Steps:

  • In a large pot heat oil add onions, celery, carrots, potatoes and carrot saute for 5 minutes add garlic, oregano, bay leaf, salt, pepper 1-2 minutes. Add sausage, chipotles, peas, and cover with enough water to completely submerge all ingredients by a couple inches.
  • Bring to a boil. Reduce heat and simmer for about 3-4 hours, until thickened be sure to stir throughout the cooking. The longer you cook it the thicker it gets.
  • Season with hot pepper sauce and black pepper.
  • Optional-Blend all but meat in a blender to smooth out.
  • Garnish with croutons and or sausage slices.

Steps:

  • Combine all ingredients in a slow cooker. Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours. Remove bay leaves and season with salt and black pepper before serving.

1 red onion, sliced
2 garlic cloves, sliced
1 tsp smoked paprika
1 tsp cumin seed
400g can cherry tomato
juice 1 lemon
400g can chickpea, drained
1 handful flat-leaf parsley, chopped
toasted sourdough bread, to serve

Steps:

  • In a frying pan, fry the chorizo, onion and garlic for 5 mins or until the chorizo is browning on the outside. Drain the excess oil, then stir in the spices.
  • Pour in the tomatoes, lemon juice, chickpeas and seasoning. Bubble for 5 mins more to thicken slightly, then sprinkle over the parsley. Serve with toasted sourdough.

2 celery ribs, chopped
2 fully cooked Spanish chorizo links (3 ounces each), cut into 1/2-inch pieces

1 1/2 pounds cured chorizo (spicy pork sausage, available at Hispanic markets and many supermarkets), sliced thin
1 onion, chopped
1 rib of celery, chopped fine
2 garlic cloves, minced
1 pound split peas, picked over
4 cups chicken broth
4 cups water
1/2 teaspoon dried thyme
1 bay leaf
3 carrots, halved lengthwise and sliced thin crosswise
croutons as an accompaniment

Steps:

  • In a heavy kettle brown the chorizo over moderate heat, stirring, transfer it with slotted spoon to paper towels to drain, and pour off all but 1 tablespoon of the fat. In the fat remaining in the kettle cook the onion, the celery, and the garlic over moderately low heat, stirring, until the celery is softened, add the split peas, the broth, the water, the thyme, and the bay leaf, and simmer the mixture, covered, stirring occasionally, for 1 1/4 hours, Stir in the carrots and simmer the soup, covered for 30 to 35 minutes, or until the carrots are tender. Discard the bay leaf, season the soup with salt and pepper, and serve it with the croutons.

110g pack of chorizo sausage (unsliced)
140g wedge Savoy cabbage
sprinkling dried chilli flakes
410g can chickpea , drained and rinsed
1 chicken or vegetable stock cube
crusty bread or garlic bread, to serve

Steps:

  • Put a medium pan on the heat and tip in the tomatoes, followed by a can of water. While the tomatoes are heating, quickly chop the chorizo into chunky pieces (removing any skin) and shred the cabbage.
  • Pile the chorizo and cabbage into the pan with the chilli flakes and chickpeas, then crumble in the stock cube. Stir well, cover and leave to bubble over a high heat for 6 mins or until the cabbage is just tender. Ladle into bowls and eat with crusty or garlic bread.

This simple Spanish-style Chickpea and Chorizo soup is a favorite at our house, making an appearance at least once a month (if not more!) during the chilly months. The recipe starts off simply--sliced Spanish-style chorizo sauteed with onions and garlic until fragrant. Then you add some rinsed canned chickpeas, tomatoes, a few spices, and chicken broth, and let the whole thing simmer for about half an hour or so. And that's really it! Serve it up right away or divide into batches for lunch tomorrow. This thing can be heated and reheated half a dozen times, and it always tastes fantastic. A chunk of crusty bread is optional, but definitely recommended.
