OOEY-GOOEY CINNAMON BUNS



Ooey-Gooey Cinnamon Buns image

These buns are sooo good hot from the oven when they're gooey and warm.

1 teaspoon white sugar
1 (.25 ounce) package active dry yeast
½ cup warm water (110 degrees F/45 degrees C)
½ cup milk
¼ cup white sugar
¼ cup butter
1 teaspoon salt
2 eggs, beaten
4 cups all-purpose flour
¾ cup butter
¾ cup brown sugar
1 cup chopped pecans, divided
¾ cup brown sugar
1 tablespoon ground cinnamon
¼ cup melted butter

Steps:

  • In a small bowl, dissolve 1 teaspoon sugar and yeast in warm water. Let stand until creamy, about 10 minutes. Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in 1/4 cup sugar, 1/4 cup butter and salt; stir until melted. Let cool until lukewarm.
  • In a large bowl, combine the yeast mixture, milk mixture, eggs and 1 1/2 cup flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • While dough is rising, melt 3/4 cup butter in a small saucepan over medium heat. Stir in 3/4 cup brown sugar, whisking until smooth. Pour into greased 9x13 inch baking pan. Sprinkle bottom of pan with 1/2 cup pecans; set aside. Melt remaining butter; set aside. Combine remaining 3/4 cup brown sugar, 1/2 cup pecans, and cinnamon; set aside.
  • Turn dough out onto a lightly floured surface, roll into an 18x14 inch rectangle. Brush with 2 tablespoons melted butter, leaving 1/2 inch border uncovered; sprinkle with brown sugar cinnamon mixture. Starting at long side, tightly roll up, pinching seam to seal. Brush with remaining 2 tablespoons butter. With serrated knife, cut into 15 pieces; place cut side down, in prepared pan. Cover and let rise for 1 hour or until doubled in volume. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • Bake in preheated oven for 25 to 30 minutes, until golden brown. Let cool in pan for 3 minutes, then invert onto serving platter. Scrape remaining filling from the pan onto the rolls.

These are a nice change of pace from your ordinary cinnamon roll and a favorite of peanut butter lovers!

2 (1/4 ounce) packages active dry yeast
2 1/2 cups warm water (110 degrees, F)
1 (18 1/4 ounce) box yellow cake mix
6 cups all-purpose flour, divided
3 eggs
1/3 cup vegetable oil
1 1/2 teaspoons salt
2/3 cup creamy peanut butter
1/2 cup brown sugar
2 tablespoons ground cinnamon
1/2 cup butter
1 cup creamy peanut butter
4 cups confectioners' sugar
2/3 cup milk

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl, dissolve yeast in warm water.
  • Let stand approx.
  • 5 minutes.
  • Add cake mix, 1 cup flour, eggs, oil and salt.
  • Beat well.
  • Stir in remaining flour until a soft dough forms.
  • Knead the dough on a well-floured surface until it becomes smooth and elastic (approx. 5 minutes).
  • Place the dough in a greased bowl.
  • Turn the dough in the bowl so the entire dough is coated.
  • Let it rise until doubled in size (approximately 45 minutes).
  • Punch the dough down and divide it in half.
  • Roll out each section and spread the peanut butter over each.
  • Sprinkle each section with brown sugar and cinnamon.
  • Roll the sections and cut into 1 1/2 in.
  • pieces.
  • Place the rolls into greased baking pans, and rise until doubled in size.
  • Bake at 350 degrees for 25-35 minutes.
  • Frosting: Beat butter and peanut butter until fluffy.
  • Slowly beat in 1/2 the sugar.
  • Mix in 1/3 cup milk.
  • Beat in remaining sugar.
  • Slowly add milk until the frosting is a desired consistency.
  • When rolls come out of the oven, frost and enjoy!

  • In the bowl of a stand mixer, combine 1 1/2 cups all purpose flour and yeast. In a medium saucepan, heat and stir the milk, butter, sugar and salt just until warmed through and the butter has just started to melt. Add to the flour mixture along with the eggs, and peanut butter and beat on low for 1 minute, scraping bottom and sides of the bowl as needed. Add as much of the remaining flour as needed to create a soft, somewhat sticky dough that pulls away from the sides. It'll stick to the bottom but that's okay. Knead on high for 5 minutes.
  • Shape into a ball and transfer to a greased bowl, turning over to coat both sides. Cover loosely with plastic wrap and a damp kitchen towel. Allow to rise in a warm spot until doubled in size, about 1 hour.
  • Punch dough down and transfer to a well-floured work surface. Roll out into a large rectangle about 1/4-inch thick. In a medium bowl, stir together the peanut butter and jelly. It doesn't have to be fully incorporated. Then spread out evenly onto the rolled dough, leaving about 1 inch, lengthwise, of unfilled dough. Roll into a tight log, lengthwise, making sure to pinch the seam to seal it somewhat. Trim the ends and then cut into 12 even slices. Place into a greased 9 by 13-inch baking pan. Cover loosely with plastic wrap and a damp kitchen towel and let rise in a warm spot until doubled in size, about 30 minutes.
