Number Of Ingredients 4

2 cups granulated sugar
1/2 cup chopped pecans
1 dash salt
16 quartered large marshmallows

Steps:

  • Place sugar in a heavy 10" skillet --
  • says you can use a teflon skillet and stir with wooden spoon.
  • heat slowly, stirring constantly until sugar melts and forms a smooth golden syrup.
  • remove from heat, blend in nuts and marshmallows --
  • pour into buttered 9" square pan.when hard, break into pieces.

My grandpaw is the best cook in the world. Hands down. Anything that he makes is heavenly, especially this cheesecake. After much prodding, he finally gave our family the recipe!

2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup butter
7 large eggs
4 (8 ounce) packages cream cheese
12 ounces sour cream
2 cups sugar
3 teaspoons vanilla

Steps:

  • Crust:.
  • Put ingreduants into the food processor together and blend. Press into bottom of 10" springform pan and up 1" of the sides. Chill for 30 minutes.
  • Cheesecake:.
  • Beat the cream cheese until smooth. Gradually add 2c of sugar, beating well. Beat eggs and vanilla into the mixture. Add sour cream and pour batter into the chilled crust.
  • Bake at 350 for 1 hour. Reduce heat to 325 and bake for 15 more minutes (At this point the cheesecake will be even with or slighly over the edges of the pan). Turn off the oven and let the cheesecake stay in the oven for 30 minutes more. Then open the oven door and let it stay there for another hour or more to cool. Cover and chill overnight to serve.

PAW PAW SORBET

I put this recipe together as I couldn't find any frozen desserts that I was able to eat due to my intolerance to a large number of foods and preservatives. This recipe is gluten free and dairy free, but contains Amines. You could try pears instead of the paw paw to take away the amines. It can serve 4 people - but I found it very hard to share :o)

500 g pawpaw, deseeded, peeled, chopped
3/4 cup water
1/2 cup caster sugar
1 egg white

Steps:

  • Place a metal tin in the freezer to chill.
  • Combine paw paw, water and sugar in a saucepan over low heat. Cook, stirring for 2-3 minutes or until sugar dissolves. Increase heat to medium. Bring to the boil. Cook for 5 minutes or until syrup thickens.
  • Set aside to cool for 5 minutes.
  • Place mixture into food processor and process until smooth.
  • Place in metal container and freeze for 2 hours or until almost set.
  • Using a metal spoon, roughly break up the mixture. Return mixture to food processer adding the egg white. Process until smooth.
  • Return to metal container and freeze for 4 - 6 hours (or overnight).
  • ENJOY!

1 cup light corn syrup
1 cup water
3 tablespoons butter
4 cups pecans
1 pinch salt
1 teaspoon baking soda
2 tablespoons vanilla

Steps:

  • Bring the first 3 ingredients to 260°F.
  • When temperature reaches 280°F add remaining ingredients.
  • Add the baking soda last.
  • Pour onto greased cookie sheet to cool.
