CHOCOLATE DREAM CAKE
Steps:
- Sift the flour, cocoa powder, baking soda, baking powder sugar and salt into a large bowl. Mix well. Crack two eggs and add the vanilla extract, buttermilk, oil and hot water. Stir gently until well-combined.
- Transfer the cake batter in a round baking pan lined with parchment paper. Tap 3 to 5 times.
- Bake the cake in a preheated oven using 160C for 30 minutes or until fully done.
- Flip the cake in a cooling rack and remove the parchment paper.
- Shape the cake according to the size of your tin can. Set aside the excess cake.
- Slice the cake horizontally into two layers. Set aside.
- Heat some water in a pot and add the sugar.
- Stir gently until the sugar dissolves. Set aside.
- In a large bowl, combine the cornstarch, cocoa powder and the all purpose cream. Whisk until well combined. Add the egg yolks and vanilla extract. Mix well.
- Heat the milk in a pot and add the powdered sugar. When it starts bubbling, turn off the heat.
- Add the ¼ of the milk into the pudding mixture to thin it out.
- Pour the chocolate mixture into the hot milk.
- Heat the mixture using medium heat while stirring continuously until it thickens and large bubbles appear.
- Transfer the chocolate pudding in a large bowl and cover with cling wrap.
- Chill the pudding until ready to use.
- Place the chopped chocolate in a large bowl and pour the hot cream.
- Let it sit for 5 minutes before stirring. Set aside.
- Place the chopped chocolate in a microwavable container and melt in a microwave.
- Stir and set aside.
- Spread some chocolate ganache at the bottom of the tin can.
- Add a cake layer. Brush the top of the cake with the sugar syrup and cover with chocolate ganache.
- Make a layer of the chocolate pudding and spread evenly.
- Pour some melted chocolate.
- Top with grated chocolate or cocoa powder.
- Cover the tin can and refrigerate the dream cake.
- Serve the chilled dream cake and enjoy!

PINEAPPLE DREAM CAKE

- Preheat the oven to 350 degrees Fahrenheit. Grease the bottom and sides of an 11x13-inch pan with oil or butter, or line with parchment paper.
- In a large bowl, beat the cake mix, water, butter, and eggs on low speed for 30 seconds. Increase the speed to medium and beat for 2 more minutes.
- Add the sour cream and crushed pineapple to the batter and mix until combined.
- Pour the batter into the prepared pan. Bake for 33 to 38 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool for 10 minutes in the pan, then transfer it to a wire rack to cool completely.
- Meanwhile, prepare the whipped topping. Whisk the pudding and drained crushed pineapple until combined. Gently mix in the whipped topping.
- Spread the whipped cream frosting over the cooled cake. Chill for 30 minutes before serving. Slice and enjoy!

- 1. Dust pecans & dates with flour. Shake off excess. Set aside. Note: I like my dates cut fairly small.
- 2. Mix together; flour, sugar, butter, eggs, and vanilla. Combine pecan and date to mixture. This will be very stiff. ***DO NOT ADD LIQUID. Note: dough is so stiff you may wish to mix with your hands.
- 3. Using a bundt pan, butter and flour pan. Add the dough.
- 4. Place a pan of water on the rack below the bunt pan to keep it moist. Bake at 350 for 1 hour. Let cool 10 minutes before removing from pan.
PLUM CAKE
Italian plums are good to eat, but even better to bake with. They aren't quite as juicy or sweet as their American cousins, but they keep their shape well and their skin adds a gorgeous purple color to tarts and cakes. The brown sugar cake batter and sweet crumb topping are a perfect complement to the not-too-sweet fruit. It is great for breakfast with a cup of tea and/or with ice cream after dinner. This is a cake that also seems to get better the second day, if there is any left.

- To make the cake: Preheat oven to 350 degrees F. Grease an 8-inch springform pan with butter.
- In a stand mixer fitted with a paddle attachment, cream together the butter and brown sugar, until light and fluffy, about 3 minutes. Add the eggs, one at a time, scraping down the bowl after each. Mix in the zest and vanilla. In a separate bowl whisk together the flour, baking powder and salt. Add the dry ingredients to the butter/sugar mixture and mix on low speed until just combined. Spread half of the batter into the prepared pan.
- Place half of the cut plums on the batter, cut-side up. Spread the remaining batter over the plums. Spread the batter into an even layer and top with remaining plums.
- To make the topping: In a bowl, mix together the flour, sugar, salt, cinnamon and melted butter. You may have to mix it with your hands to get all the butter incorporated.
- Spread the crumb topping over the plums evenly.
- Place the cake on two stacked cookie sheets, to prevent the bottom from getting too brown during the long baking time. Bake for about 1 hour 15 minutes or until a tester come out clean. Cool on a rack.
- Serve it slightly warm or at room temperature.

ORANGE DREAM CAKE
I got this recipe from Allrecipes.com It was submitted by "Pauline" I made it for dessert on Christmas day. It is very good! The cake is nice and moist without having an overpowering orange taste. You can use any kind of frosting/icing on this cake or even sprinkle powdered sugar on it. I used a can of Cream Cheese frosting on mine. I made this cake in a bundt cake pan. I do not know how it will turn out in a 9x13x2 inch cake pan or (2) 9 inch round cake pans. Prep and bake times are approximate.

- Preheat oven to 350F (or 175C) Grease and flour a bundt cake pan and set aside.
- Dump cake mix, jello powder and Dream Whip powder in a large mixing bowl.
- Stir together until well mixed.
- Add oil, milk and eggs and mix for 3 minutes with an electric mixer.
- Pour into prepared bundt cake pan.
- Bake for 30-35 minutes.
- Insert a toothpick in the center of the cake.
- When the toothpick comes out clean, the cake is done.
- Remove the cake from the oven and allow to cool for 10 minutes.
- Place a dinner or cake plate, bottom side up, on top of the cake pan.
- Turn over and lightly shake the pan to help loosen the cake from it.
- You might be able to feel the cake loosen from the pan.
- While cake is still warm (but not hot) spread a light layer of the frosting on the side and top of the cake.
- This will result in a nice glaze effect on the cake.
- Or you can allow the cake to completely cool and frost it like you would normally frost a cake.
