Paula Deen's Crispy Oven Zucchini Fries are a delicious and healthy alternative to potato fries

Number Of Ingredients 9

1/2 cup all purpose flour
1 beaten, with 1 egg white egg
1/2 cup panko bread crumbs
1/4 cup fresh grated Parmesan cheese
1/2 teaspoon smoked paprika
kosher salt
fresh ground black pepper
2 sliced into 1/2 inch thick and 4 inches long zucchini
cooking spray

Steps:

  • Preheat oven to 425 °F
  • Add flour to a pie plate and whisk in some salt and pepper. Beat the eggs together in another pie plate.
  • In a third pie plate, whisk together the panko, Parmesan, smoked paprika, and another big pinch of salt and pepper.
  • Dip the zucchini in the flour, then in egg, and then through the breadcrumb mixture. Place on a sheet tray spritzed with non-stick spray. Bake for 10 minutes, flip, and continue cooking for 10 minutes more until golden and crisp.

Crunchy Zucchini Fries In A New Light
Makes six servings
Ingredients
Vegetable cooking spray
1 egg white
1 Tbsp. light mayonnaise
3 (8-inch) zucchini, cut into 4½-inch lengths, about 42 pieces
¼ cup plain dry whole wheat bread crumbs
2 Tbsp. cornmeal
1 Tbsp. white whole wheat flour
1 tsp. chili powder
¼ tsp. salt

Steps:

  • Instructions 1. Preheat oven to 425. Spray a large baking sheet with cooking spray. 2. Whisk together egg white and mayonnaise in a large bowl until blended. Add zucchini and toss until well coated. Place bread crumbs, cornmeal, flour, chili powder and salt in a large zip-top bag. Add zucchini, a few pieces at a time, shaking the bag to coat well. 3. Place zucchini in one layer on baking sheet. Lightly spray with cooking spray. Bake 15 minutes or until lightly golden and crisp. Serve immediately.

½ cup all-purpose flour
Kosher salt
freshly ground black pepper
2 eggs
½ cup panko bread crumbs
¼ cup freshly grated Parmesan cheese
½ teaspoon smoked paprika (optional)
2 zucchini, cut into ½-inch-thick, 4-inch-long slices
oil, for spraying

Steps:

  • In a shallow dish, whisk together flour and a large pinch each of salt and pepper. In a second shallow dish, beat together one whole egg and yolk of second egg. Discard extra egg white. In a third shallow dish, whisk together breadcrumbs, Parmesan cheese, paprika (if desired), and a large pinch each of salt and pepper. Dredge zucchini in flour mixture, then dip in beaten egg, and then dredge in breadcrumb mixture.
  • Working in batches, spray zucchini on both sides with oil and place in air fryer basket in a single layer. Set temperature to 400 degrees, and air fry for 5 minutes. Turn zucchini, spray with oil, and air fry for 5 minutes more. Repeat with remaining zucchini.
