PEAR RELISH image

If you like chow chow you will like this Pear Relish. Comes from my dads Uncle. This recipe is for time after time

Number Of Ingredients 8

1 gal hard pears peeled cored and diced
1/2 gal onions diced and soaked in1 cup pickling salt 1 hour drained and rinsed
14 medium size bell peppers 7 green 7 red
25 bird eye peppers
1 qt cider vinegar
1 medium bottle prepared mustard
2 Tbsp mustard seeds
2 Tbsp turmiric

Steps:

  • 1. Grind pears, onions, and peppers and place in a large pot with other ingredients. Bring to a boil stirring often about 25 minute
  • 2. Start filling clean sterilized jars and seal. Makes 15 pints. Wonderful on meats, roast steak ect. Alot like chow chow
  • 3. NOTE: BIRD EYE PEPPERS IS A HEIRLOOM HOT CHILI PEPPER.

Pear Relish With Peppers image

This pear relish recipe is made with ground up pears, peppers, and onions, along with vinegar, sugar, salt, and pickling spices.

12 pounds firm pears (about 40 pears), peeled, cored, and quartered
2 green bell peppers, seeded and quartered
2 red bell peppers, seeded and quartered
2 pounds onions (about 7 to 8 medium), peeled and quartered
5 cups white vinegar
4 cups sugar
2 1/2 tablespoons salt
2 tablespoons whole mixed pickling spice
2 tablespoons turmeric

Steps:

  • Gather the ingredients.
  • Using a food processor, grind the pears, bell peppers, and onions together; you will need to do this in batches.
  • Put the ground mixture in a colander to drain off all excess liquid.
  • In a large nonreactive kettle, combine the vinegar, sugar, salt, pickling spices, and turmeric. Bring to a boil and cook for 10 minutes.
  • Add the ground-up fruit and vegetables to the kettle and return to a boil. Boil for an additional 15 minutes.
  • Spoon the relish into hot sterilized jars and seal quickly.
  • Process for 15 minutes in a boiling-water canner.
  • Serve the relish with roasted or grilled meats and enjoy.

This is a great topping for hot dogs, or even tortilla chips. A great way to use extra pears.

12 large pears
3 large onions, coarsely chopped
3 large green bell peppers, seeded and coarsely chopped
4 jalapeno peppers, coarsely chopped
2 cups apple cider vinegar
2 cups white sugar
9 ounces prepared mustard
1 tablespoon salt
10 (1 pint) canning jars with lids and rings, or as needed

Steps:

  • Place pears into a large stock pot, add water to cover, and boil until tender, about 20 minutes. Drain and cool. When pears are cool, peel, core, and coarsely chop.
  • Place pears, onions, green bell peppers, and jalapeno peppers into a food processor, working in batches if necessary, and chop the pears and vegetables finely. Transfer pears and vegetables, including any juice, to a large pot.
  • Stir vinegar, sugar, prepared mustard, and salt into the pear mixture and bring to a boil; reduce heat to medium-low and simmer until flavors have blended and relish is thickened, about 1 hour.
  • Sterilize jars and lids in boiling water for at least 5 minutes. Pack pear relish into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for about 20 minutes or the amount of time recommended for your area.
  • Remove the jars from the stockpot and cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Mama had a lot of pear on her tree this year and I was looking for something different to make when I came across this recipe from Paula Deen. I did change it up some, she doesn't puree her pears and I cooked it longer.

16 c peel, cored and diced pears
1 Tbsp lemon juice
10 c sugar
1(20oz.) can(s) crushed pineapple

Steps:

  • 1. Put pears and pineapple in blender or food processor and puree. Put into large pot add lemon juice and sugar. When it begins to boil turn heat down and cook 1 hour or until desired thickness, stirring occasionally (Paula Deen cooks her for 30 minutes.)Pour into hot jars and seal.

A lady in rural Georgia gave this recipe to me after tasting it at her home, where she had peach and pear trees. I have savored that visit and remember her when I make the best pear relish.

8 quarts pears (1 peck)
6 large vidalia onions
6 red bell peppers
6 green bell peppers
4 cups granulated sugar
1 tablespoon kosher salt
5 cups apple cider vinegar
1 tablespoon allspice

Steps:

  • Put through food grinder all the ingredients.
  • When everything is ground up, mix all together
  • in a large canning kettle.
  • Cook for 40 minutes.
  • Put in jars and seal.

This relish is wonderful on all types of vegetables. It has a sweet, but hot flavor and is considered a staple in our home. Also, it goes well with pork. Prep time and cook time may vary, depending on whether you chop by hand or food processor.

18 large hard pears
18 bell peppers (use all colors)
3 cups sugar
1 1/2 teaspoons salt
3 pints vinegar
5 large onions (mix white and red)
green hot pepper

Steps:

  • Chop all ingredients.
  • Cook until tender.
  • Pour into heated jars.
  • Clean rims of jars and place lids and rings on jars and tighten.
  • Process in hot water bath.
  • Remove from heat and tighten rings again.
  • Set out and allow to cool completely before storing.
