TURKEY / CHICKEN STUFFING

Turkey / Chicken Stuffing image

An essential side for your holiday dinner, this bread stuffing can be used with chicken or turkey.

Provided by Paula Deen

Time 15m

Yield 15

Number Of Ingredients 8

1 loaf fresh (3 for a turkey) white bread
1 small bunch diced (2 with turkey) celery
1 large diced (3 for turkey) onion
2 large (up to 8 for turkey) eggs
1 large pinch salt
1/4 teaspoon freshly cracked black pepper
1/2 lb (add 1/2 lb for turkey) unsalted butter
1/4 to 1/2 cup (optional) fresh turkey stock

Steps:

  • Preheat oven to 350º (if cooking in loaf pan)
  • In large stockpot, melt butter. Stir in chopped onions, salt and pepper and cook until onions are translucent.
  • Add celery and cook over low heat until just tender. Tear loaf of bread into pieces and add to stockpot with onion mixture and toss well until mixed.
  • Turn off heat and allow to cool, 15 to 20 minutes.
  • Crack eggs into mixture and use hands to toss well. Make sure the mixture is wet. Add more eggs if needed.
  • Pack cooled mixture tightly if stuffing a bird. A loaf pan can be used. After packing dressing into loaf pan pierce with a knife and pour chicken or turkey stock over dressing 1/4 to 1/2 cup per loaf pan.
  • Bake at 350º for 30 minutes.
  • Notes from Paula's test kitchen: This dressing works well in a loaf pan. We found the dressing much more flavorful if you took the time to separate the oil from the stock before adding to the pan. We also added 2 tablespoons of chopped fresh rosemary to kick up the flavor. Serves 6 in loaf pan and 12 for turkey.

PAULA DEEN'S AMAZING CHICKEN CASSEROLE RECIPE - (4.6/5)

Paula Deen's Amazing Chicken Casserole Recipe - (4.6/5) image

Provided by JUDY2949

Number Of Ingredients 11

2 cups chicken, cooked, cut in small bite-sized pieces
4 cups pasta, cooked and drained (approximately 2 cups uncooked); penne, cavatappi, or rigatoni works well
3 tablespoons butter
1 small onion, finely chopped
2 garlic cloves, minced
2 tablespoons flour
1/2 cup sour cream
1 cup milk
3 cups cheese, grated (cheddar, colby jack, Swiss, or a combination), with 1/2 cup reserved for sprinkling on top
1/2 teaspoon red pepper flakes
salt and black pepper to taste

Steps:

  • Preheat the oven to 350°F. Lightly grease the inside of a 9x13-inch baking dish. In a large skillet, melt the butter over medium heat and cook the onion and garlic until the onion is translucent, about 5 minutes, stirring occasionally. Add the flour and whisk together for about 1 minute, this will allow the flour to cook just a little before adding the other ingredients. Add the sour cream and milk, and continue whisking until the mixture has thickened. Remove from heat and add all but ½ cup of the cheese. Add the red pepper flakes, salt, and black pepper, cooked chicken, and cooked pasta. Stir together, then layer evenly in the bottom of the prepared baking dish. Sprinkle the remaining cheese evenly over the top of the casserole and bake for 30 minutes or until the cheese on top is melted and the sauce is bubbly. Remove the casserole and let it sit for about 15 minutes prior to serving.

CHICKEN CORDON BLEU CASSEROLE (COOKING WITH PAULA DEEN MAGAZINE)

Chicken Cordon Bleu Casserole (Cooking With Paula Deen Magazine) image

From Cooking with Paula Deen Magazine, March/April 2011. This is how the magazine described the dish: This casserole has all the flavors of Chicken Cordon Bleu--chicken, ham, and cheese--without all that messy rolling and stuffing! We liked the dish, though it wasn't as creamy as we expected. I followed the recipe as written (copied original recipe below) but added a handful of shredded cheddar cheese to the top of the casserole when it was done and baked for another couple of minutes until the cheese was melted. I also used more ham than the recipe called for because I needed to use up the leftovers. Cook time in my over was about 1 hour for the rice to be tender (recipe calls for 45 minutes).
