I got this recipe from Martha Stewart Living a long time ago. These cookies have everything (except for peanut butter - I guess Paul Bunyan didn't like peanut butter) :-) I won a blue ribbon at the county fair for these, under the "cookie with the most ingredients" category.

1 1/4 cups flour
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 cup shortening
1/2 cup sugar
1/2 cup molasses
2 large eggs, lightly beaten
1 (12 ounce) package semi-sweet chocolate chips
1 1/2 cups old fashioned oats
1 cup walnuts, chopped
1 cup raisins

Steps:

  • Preheat oven to 350.
  • Sift together flour, cinnamon, baking soda, baking powder, salt and ginger.
  • Cream shortening and sugar on medium speed until light and fluffy, about 2 minutes. Add molasses and beat to combine. Add eggs, one at a time and mix until fully incorporated. Add the flour mixture, one cup at a time. Using a wooden spoon, stir in chocolate chips, oats, walnuts and raisins.
  • Using a 2 inch ice cream scoop, drop dough onto greased baking sheet. Bake 15-18 minutes. Cool on pan for 5 minutes, then remove to wire rack to cool completely.

"PAUL BUNYAN" COOKIES



If your children like cookies and what child doesn't! They are in for a treat with these great tasting cookies. Just a simple, rich, butter cookie recipe. My Grandma called these cookies, "Cobblestone Cookies"..some people call them "Milk Box Cookies", I call them "Delicious"; The newspaper clipping calls them Paul Bunyan...

1 c real butter only, room temperature
1 1/2 c granulated sugar
1 large egg
1 tsp vanilla extract
2 1/2 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp almond extract
6 small drops red food coloring or food gel
1/4 c chopped nuts, i use pecans or walnuts
1 pkg pre-melted unsweetened chocolate

Steps:

  • 1. Line a 9x5 loaf pan , set aside.
  • 2. Or a quart milk carton- cut like this. Set aside.
  • 3. In your large mixer bowl cream together the butter and sugar. Beat in egg and vanilla. Combine flour, baking powder and salt; and gradually add to the butter mixture.
  • 4. Divide dough into thirds. Add almond extract and food gel to one part, and press evenly into the prepared container. Add nuts to the second piece, and press onto the first piece.Or wrap each piece separately and pack into pan the next day. Add melted chocolate to the third piece, mixing in well; press chocolate piece evenly over second layer. Note: you can arrange colors in any order you wish.
  • 5. Cover and chill overnight.Next day Unwrap, cut loaf in half lengthwise.If you want a large cookie -"Paul Bunyan" style -do not cut dough in half. Be sure to place these cookies at least 4 to 6 inches apart on cookie sheet. Heat oven to 350^.
  • 6. Cut each half into 1/8-inch slices. Place 1 inch apart on an ungreased cookie sheet. Bake for 10 to 12 minutes or just until edges are firm;or starting to brown on the edges. Remove to racks to cool. --- Note: I know this may sound difficult- but once you get the hang of it ,it is quite simple- give it a try!

Yield Makes about 48 cookies

Number Of Ingredients 8

1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
8 tablespoons (1 stick) unsalted butter, room temperature
1 cup packed light-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 cup hulled sesame seeds, toasted

Steps:

  • Heat oven to 350 degrees. Line four baking sheets with parchment paper, and set aside. Sift together flour, salt, and baking soda, and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy. Add egg and vanilla, and beat until combined. Add reserved flour mixture, and beat until combined. Add toasted sesame seeds, and beat until incorporated.
  • Using a spoon, drop cookie batter, about 1 tablespoon at a time, onto prepared baking sheets, allowing at least 2 inches between cookies for spreading.
  • Bake until golden, 6 to 8 minutes. Remove from oven, and cool on a wire rack.
