3 tablespoons water ((45 grams))
3 tablespoons sugar ((37.5 grams))
3 large egg yolks
1/2 cup heavy whipping cream ((120 ml))
12 ounces melted semi-sweet chocolate ((340 grams))
2 cups whipped cream made from 1 cup heavy whipping cream ((whip 240 ml of heavy whipping cream))

Steps:

  • Pour water into the bottom of a saucepan set over medium high heat.
  • Add sugar and allow to come to a boil.
  • Boil until all the sugar is dissolved, stirring if needed.
  • Pour egg yolks into a mixing bowl and whisk to break up.
  • Continue whisking while slowly drizzling in the sugar syrup.
  • Pour 1/2 cup of heavy whipping cream into the saucepan and set it back on the stove on low heat.
  • Stir in the egg mixture and continue to stir for at least 3 minutes until heated through.
  • You may heat until thickened, if desired.
  • Pour through a fine mesh sieve that is set over your bowl of melted semi-sweet chocolate.
  • Discard anything that remains in the sieve.
  • Stir the chocolate until glossy and smooth.
  • Fold the whipped cream into the chocolate in two stages.
  • Cover and chill until the mousse thickens.
  • Spoon or pipe into bowls or chocolate cups.
  • Let sit at room temperature for at least 15 minutes before serving.

The best chocolate mousse must be perfect. It should taste rich, indulgent and not too sweet, with a texture that is both light-and-airy and silky-and-smooth. After many attempts we nailed it and made a dessert that not only exceeded our standards, it's also quite easy to pull off. Close your eyes and take a bite -- you'll be transported to a 4-star French restaurant.

1 3/4 cups cold heavy cream
1 large egg
2 large egg yolks
1/4 cup granulated sugar
1 teaspoon instant espresso powder
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
4 ounces good-quality bittersweet chocolate, chopped
4 ounces good-quality semisweet chocolate, chopped

Steps:

  • Whip 1 cup of the heavy cream to soft peaks in a medium bowl (see Cook's Note). Set aside.
  • Add the egg, egg yolks, sugar, espresso powder, vanilla extract, salt and 1 tablespoon water to a medium heatproof bowl and whisk to combine. Set the bowl over a medium saucepan of gently simmering water (do not allow the bowl to touch the water). Whisk constantly until the mixture is pale, hot to the touch and has almost doubled in volume, about 4 to 6 minutes, scraping down the sides of the bowl occasionally with a rubber spatula, if necessary. Remove from the heat and continue whisking until cooled, about 2 minutes.
  • Put the chopped chocolate in a medium heatproof bowl and set over the saucepan of gently simmering water (do not allow the bowl to touch the water). Stir occasionally with a rubber spatula until the chocolate is melted and smooth. Remove from the heat and gently stir for about 3 minutes to cool slightly.
  • Whisk the egg mixture into the melted chocolate in 3 additions until combined. (The mixture may get very thick.) Using a rubber spatula, gently fold the whipped cream into the chocolate mixture in 3 additions until it is fully incorporated. It is important that the chocolate mixture is not warm to ensure that it combines smoothly with the whipped cream without seizing up.
  • Divide the chocolate mousse among four 4-ounce ramekins and chill until firm, about 1 hour.
  • Whip the remaining 3/4 cup cold heavy cream to stiff peaks. Top each chocolate mousse with whipped cream and serve. (For a softer texture, allow the ramekins to sit at room temperature while you whip the cream.)

1-1/2 cups cold milk
1-1/2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate (6 oz.), broken into pieces
1 tsp. vanilla
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Steps:

  • Sprinkle gelatine over milk in medium saucepan; let stand 1 min. Cook on low heat 3 min. or until gelatine is completely dissolved, stirring constantly. Add chopped chocolate; continue cooking until chocolate is completely melted and mixture is well blended, stirring constantly. Blend in vanilla.
  • Place saucepan in large bowl of ice water. Stir chocolate mixture 3 min. or until slightly thickened. Pour into large bowl. Gently stir in whipped topping. Spoon evenly into 12 dessert glasses.
  • Refrigerate 4 hours or until chilled. Store leftovers in refrigerator.

Easy, elegant, and amazing! There are a lot of mousse recipes out there, but this one is authentic without being difficult to make. And it will tasted exactly like your favorite chocolate, because that is what you use to make it! The first time I made mousse, my family was not impressed with the "dark chocolate" flavor of the semi-sweet chocolate it called for. I thought, "Mousse should taste like the most amazing chocolate you know." So I decided to use our favorite chocolate from then on. (For us, it is Dove.) It would be fun to try this recipe with some of the gourmet chocolate bars that are flooding the stores right now. 75% cocoa solids with orange rind and cacao nibs, anyone?

4 egg yolks
1/4 cup sugar
2 cups whipping cream, divided
8 ounces good quality chocolate
1 teaspoon vanilla

Steps:

  • Melt the chocolate in a glass bowl in the microwave. (In my microwave, I heat for 1 minute on high, then stir the chocolate. If it is mostly melted, I let it sit during the next step and it will finish melting on its own. If it seems like it needs some helping along, I heat for 30 more seconds at a time until it is about 2/3 melted. Then I let it sit and finish melting during this next step.).
  • Whisk together the egg yolks, sugar, and 3/4 cup of the cream in a medium sized pot, on the stove.
  • Cook, whisking constantly, at medium-low heat for 4 or 5 minutes, just until the mixture begins to thicken, but before it starts to simmer. Do not let it boil! The mixture will thicken all at once, so be ready to remove it from the heat immediately.
  • Whisk the melted chocolate and the vanilla into the custard.
  • Strain into a bowl. (This will remove the tough little lumps from the bits of egg white that clung to the yolks after you separated them.) Chill until cooled.
  • When the mixture is cooled, whip the rest of the cream (1 1/2 cups) until stiff peaks form.
  • Stir 1/3 of the whipped cream into the chocolate custard mixture.
  • Fold the chocolate back into the remainder of the whipped cream.
  • Dish up in individual portions and chill at least 30 minutes, or up to 3 days.

Each mouthful of this dessert is a marvel: as light as a meringue pie topping, but with the eggy silkiness of a creamy chocolate custard. This mousse has a particularly airy texture, but is still a little rich from the bittersweet chocolate, which makes it the ideal not-too-sweet dessert. Because the mousse develops an even deeper flavor over time, it's perfect for parties. You can make it up to five days ahead of time and serve it straight from the refrigerator.

1/2 cup/120 grams heavy cream, plus more if needed and for serving if you'd like
12 ounces/340 grams bittersweet chocolate, coarsely broken or chopped (see Tip)
8 large egg whites (265 grams/1 cup)
1/4 cup/50 grams granulated sugar
4 large egg yolks (56 grams)
1 teaspoon pure vanilla extract

Steps:

  • Bring an inch of water to a boil in a medium saucepan. Combine the cream and chocolate in a large heatproof bowl. When the water boils, turn the heat to low so the water is barely simmering or just steaming. Set the bowl over the saucepan and melt the chocolate, gently stirring with a whisk now and then.
  • While the chocolate melts, whisk the egg whites in a clean bowl using a stand mixer or electric hand mixer on medium speed. When the whites are foamy, add the sugar in a slow stream while whisking. Continue whisking until stiff peaks form. The whites should look glossy but not dry, and, when you lift the whisk from the mixture, a peak should form in the bowl and hold.
  • Once the chocolate has melted completely, turn off the heat but leave the bowl over the saucepan. Holding the bowl with a kitchen towel, add the egg yolks one at a time, whisking after each addition. If the mixture looks broken, remove the bowl from the saucepan, cool for a minute, then add 1 tablespoon cream and whisk just until shiny and smooth. Whisk in the vanilla. (Don't worry if it still doesn't look completely smooth. It will come together in the next step.)
  • Add a quarter of the beaten whites to the chocolate mixture and stir gently with a flexible rubber spatula until incorporated but still a little streaky. This will make it easier to fold in the remaining whites to create an airy mousse by gradually lowering the temperature of the chocolate (tempering) and making the mixture loose.
  • Add the rest of the whites and fold them in by running the spatula from 12 o'clock on the bowl to 6 o'clock, then scooping up the chocolate on the bottom and gently folding it over the whites as you move toward 9 o'clock. Rotate the bowl 90 degrees and repeat. Continue folding just until the last streak of white disappears. It's OK if there are a few lumps of whites left. It's better to not deflate the batter by folding too much.
  • Scoop into a pretty bowl or into individual cups or bowls for serving if you'd like. Otherwise, keep it in the mixing bowl. Refrigerate the mousse uncovered until cool, then cover and refrigerate for at least 4 more hours and preferably 24. The covered mousse can be refrigerated for up to 5 days.
  • If you'd like to serve the mousse with whipped cream, whisk heavy cream until soft peaks form. A cup or two of heavy cream is plenty for this amount of mousse. Serve the mousse cold, straight from the refrigerator, with the whipped cream.
