8 ounces uncooked angel hair pasta
2 garlic cloves, minced
2 tablespoons butter
1 package (6 ounces) fresh baby spinach
3 tablespoons lemon juice
2 teaspoons grated lemon zest
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions., Meanwhile, in a large skillet, saute garlic in butter until tender. Add the spinach, lemon juice and zest, salt and pepper; cook 2-3 minutes longer or until spinach is wilted., Drain pasta. Add to skillet; toss to coat.

Pasta with Preserved Lemon and Anchovies image

Two store-bought pantry ingredients are the stars of this quick weeknight supper: sunny preserved lemons and meaty anchovies. Parmesan cheese brings out the umami flavor of the little fish, while a handful of parsley adds just the right amount of freshness.

Kosher salt and freshly ground pepper
12 ounces long pasta, such as spaghetti or linguine
1/4 cup extra-virgin olive oil, plus more for serving
2 tablespoons minced garlic (from 5 to 6 cloves)
2 tablespoons minced oil-packed anchovies (from 6 to 8)
1/4 cup chopped preserved lemon (from about 1/2 store-bought preserved lemon)
3/4 cup coarsely chopped flat-leaf parsley, plus whole leaves for garnish
1 ounce Parmigiano-Reggiano, finely grated (1/2 cup packed), plus more for serving

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook until slightly less than al dente, about 2 minutes less than package directions. Reserve 1 cup pasta water, then drain.
  • Meanwhile, heat oil in a large straight-sided skillet over medium-high. Add garlic and anchovies and cook until fragrant, about 30 seconds. Add preserved lemon; cook 30 seconds. Add pasta and 3/4 cup pasta water; cook, stirring and shaking pan, until pasta is cooked, 1 to 2 minutes. Remove from heat; add parsley and cheese and continue stirring and shaking pan, adding more pasta water as necessary to create a creamy sauce. Season with salt and pepper and serve with more cheese, pepper, and parsley leaves, and a drizzle of oil.

Baked Pasta With Spinach, Lemon and Cheese image

10 ounces fusilli
5 ounces fresh Baby Spinach
1 tablespoon olive oil
4 cups chopped onions
1 1/8 ounces flour, about a 1/4 cup
4 garlic cloves, minced
2 1/2 cups 1% low-fat milk
1/2 cup dry white wine
1 cup grated parmigiano-reggiano cheese, divided
3/4 teaspoon salt
1/4 teaspoon grated lemon rind
1/2 teaspoon pepper
3/4 cup panko breadcrumbs, divided

Steps:

  • Preheat oven to 350 degrees.
  • Cook pasta in boiling water for 8 minutes or until almost al dente, omitting salt and fat.
  • Remove from heat; stir in spinach. Let stand for 2 minutes or until spinach wilts. Drain pasta mixture well.
  • Heat a large nonstick skillet over medium heat. Add olive oil to pan; swirl to coat. Add onion; cook 15 minutes or until golden brown, stirring frequently.
  • Weigh or lightly spoon flour into a dry measuring cup; level with a knife. Add flour and garlic; cook 1 minute, stirring constantly with a whisk.
  • Gradually add milk and wine; cook 8 minutes or until sauce boils and thickens, stirring constantly.
  • Stir in 3/4 cup of cheese, salt and rind. Remove from heat; stir in pepper.
  • Add pasta mixture, and toss gently to coat.
  • Spoon pasta mixture into a 13x9 inch-glass or ceramic baking dish coated with cooking spray.
  • Sprinkle half of panko breadcrumbs over pasta, and top evenly with remaining 1/4 cup cheese.
  • Sprinkle the remaining half of panko breadcrumbs over cheese.
  • Bake at 350 for 50 minutes.

8 tablespoons butter, divided
1 garlic clove, crushed
1/2 teaspoon crushed red pepper flakes, divided
3/4 cup panko breadcrumbs (Japanese breadcrumbs)
1 teaspoon lemon zest, finely grated
kosher salt
fresh ground black pepper
12 ounces fresh pasta (strozzapreti or use dried pasta)
8 cups spinach, trimmed, large leaves torn in half, divided
1 tbsp.lemon juice, fresh (more if you like)
1 tbsp.preserved lemon peel, sliced (more if you like)
2 tablespoons olive oil

Steps:

  • Heat oil and 25% of the butter in a large skillet over medium heat until butter is foaming.
  • Add garlic and ¼ teaspoons red pepper flakes; cook, stirring often, until fragrant, about 1 minute.
  • Add panko and cook, stirring often, until panko is golden brown, about 2 minutes.
  • Mix in lemon zest and transfer panko to a paper towel-lined plate; season with salt and pepper. Let cool; set aside. Wipe out skillet.
  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente (about 5 minutes for fresh pasta). Drain.
  • Meanwhile, heat remaining 6 tablespoons butter in same skillet over medium heat. Cook, swirling skillet occasionally, until butter is brown, about 3 minutes.
  • Add half of the spinach; cook, tossing, until wilted, about 1 minute.
  • Add pasta to skillet and toss to coat.
  • Add lemon juice, preserved lemon peel, and remaining ¼ teaspoons red pepper flakes and toss to combine; season with salt, pepper, and more lemon juice and preserved lemon peel, if desired.
  • Add remaining spinach and toss until slightly wilted, about 1 minute.
  • Serve pasta topped with reserved panko.
