Really Quick Broccoli Pasta image

Recipe video above. This is a great emergency meal OR carb + veg side for all those times when your cupboards are bare except for broccoli, pasta, and some kind of cheese. It's saucy without using tons of oil, and there's loads of sub options. Quick and utterly scrumptious - loaded with tons of broccoli!

350g / 12 oz dried short pasta ((I used small shells))
2 broccoli heads ((BIG!))
1 cup shredded cheese (or more!)
2 tsp lemon zest
2 tbsp lemon juice ((or more!))
5 tbsp extra virgin olive oil
1/3 cup parmesan (, finely grated)
2 garlic cloves (, minced)
1 tsp mixed dried herbs ((or fresh!))
1/2 tsp+ red pepper flakes ((add more if you want spicy!))
1 tsp sugar
3/4 tsp salt
1/2 tsp pepper
More parmesan

Steps:

  • Cook pasta: Boil a large pot of water with 2 tsp salt, add pasta.

Nutmeg and white wine flavor this creamy pasta and vegetable side dish. Serve it with broiled or grilled beef for a hearty meal. Please note: amount is for side dish. Can be double, etc if wanted to make for entree.

3 ounces fettuccine, uncooked
1 1/2 cups broccoli florets
nonstick spray coating
1 medium onion, thinly sliced and separated into rings
3/4 cup skim milk
2 teaspoons cornstarch
1 teaspoon instant chicken bouillon granules
1 dash pepper
1 dash ground nutmeg
1/2 cup part-skim mozzarella cheese, shredded
1 tablespoon dry white wine (optional)

Steps:

  • Cook fettuccine according to the package directions, adding the broccoli for the last 5 minutes of cooking.
  • Drain well, return to pan.
  • Meanwhile, spray an unheated large skillet with nonstick spray.
  • Preheat over medium-low heat.
  • Add onion. Cook, covered, for 8 to 10 minutes or until tender, stirring occasionally.
  • In a small bowl stir together the milk, cornstarch, bouillon granules, pepper and nutmeg.
  • Add to onion in skillet.
  • Cook and stir over medium heat until thickened and bubbly.
  • Cook and stir for 2 minutes more.
  • Stir in cheese and wine (if desired) until cheese is melted.
  • Pour cheese mixture over pasta and broccoli, toss to coat.

Garlic Oil Sauteed Pasta with Broccoli image

Number Of Ingredients 9

1/3 cup extra-virgin olive oil
2 cloves garlic, smashed
1/4 teaspoon red pepper flakes
1/4 head broccoli, sliced into very thin florets, stalk peeled and cut into matchsticks
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
Few tablespoons water or pasta cooking water, if needed
2 cups penne pasta, cooked al dente
Parmesan cheese, for garnish

Steps:

  • In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
  • Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
  • Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
  • Cook's Note: Use pasta water if the pasta was made fresh.
  • Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.

This is really YUMMY and healthy too! You can also play with this recipe and add some sweet bell peppers, spicy crushed red pepper flakes or shredded cheese.

2 tablespoons olive oil
1 small onion, chopped
3 garlic cloves, minced
3/4 cup chicken broth (I use Oxo)
1 bunch broccoli, chopped
salt and pepper
1 tablespoon lemon juice
1/4 cup parmesan cheese, grated
200 g pasta (I like whole wheat fettucini or spaghettini)

Steps:

  • In a medium saucepan cook onion and garlic in olive oil over a low heat until onions are soft.
  • Add chicken broth and broccoli and bring to a boil, season with salt and pepper.
  • Cover and boil gently for about 10 minutes, or until broccoli is very tender, stir occasionally.
  • Place broccoli mixture in a food processor or blender with lemon juice and parmesan cheese. Pulse a few times until smooth.
  • Toss pasta and sauce together and serve.
  • Enjoy!

1 cup heavy whipping cream
2 tablespoons butter
1 ounce tomato sauce
½ teaspoon minced garlic
½ cup broccoli florets
¼ cup fresh sliced mushrooms
salt to taste
ground black pepper to taste
2 tablespoons grated Parmesan cheese

Steps:

  • Cook fettuccini in a large pot of boiling salted water until "almost" done. Drain, and return noodles to pot.
  • Stir cream, butter or margarine, tomato sauce, garlic, and broccoli into the noodles. Simmer until noodles are done. Stir in sliced mushrooms, and remove from heat. Sprinkle with Parmesan cheese, and season with salt and pepper to taste.
