One-Skillet Pasta image

This recipe was given to me 25 years ago and remains a family favorite. It's a tasty twist on traditional spaghetti, and making a one-skillet pasta saves time on prep and cleanup, too. -Susan Spence, Lawrenceville, Virginia

1-1/2 pounds ground turkey
1 medium onion, finely chopped
1 medium sweet red pepper, finely chopped
1 can (28 ounces) diced tomatoes, undrained
1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
1 can (14-1/2 ounces) reduced-sodium beef broth
1 can (4 ounces) sliced mushrooms, drained
1 tablespoon packed brown sugar
1 tablespoon chili powder
8 ounces uncooked angel hair pasta
1 cup shredded cheddar cheese

Steps:

  • In a large cast-iron or other heavy skillet, cook the turkey, onion and pepper over medium heat until meat is no longer pink; drain., Add the tomatoes, broth, mushrooms, brown sugar and chili powder. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. , Add pasta; return to a boil. Reduce heat; cover and simmer until pasta is tender, 30-35 minutes. Sprinkle with cheese. Cover and cook until cheese is melted, 2-3 minutes longer.

2 cups uncooked ziti pasta (7 oz)
1 lb lean (at least 80%) ground beef
1 jar (14 oz) tomato pasta sauce (1 1/2 cups)
1/2 cup water
1/2 cup sour cream
1 cup shredded Cheddar cheese (4 oz)

Steps:

  • Cook pasta as directed on package; drain. Cover to keep warm.
  • Meanwhile, in 10-inch skillet, cook ground beef over medium-high heat, stirring frequently, until thoroughly cooked; drain. Stir in pasta sauce and water. Reduce heat to medium; simmer uncovered 5 minutes.
  • Stir in cooked pasta. In small bowl, mix sour cream and cheese. Spoon over pasta mixture. Reduce heat to low; cover and cook 6 to 8 minutes or until thoroughly heated.

It's one of our most popular recipes and for good reason. This is our original one-pot pasta recipe, inspired by a dish one of our food editors ate in Puglia, Italy. All the ingredients cook together in a straight-sided skillet, you don't even need to boil water first-and it's on the table in just 20 minutes.

12 ounces linguine
12 ounces cherry or grape tomatoes, halved or quartered if large
1 onion, thinly sliced (about 2 cups)
4 cloves garlic, thinly sliced
1/2 teaspoon red-pepper flakes
2 sprigs basil, plus torn leaves for garnish
2 tablespoons extra-virgin olive oil, plus more for serving
Coarse salt and freshly ground pepper
4 1/2 cups water
Freshly grated Parmesan cheese, for serving

Steps:

  • Combine pasta, tomatoes, onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture, stirring and turning pasta frequently with tongs, until pasta is al dente and water has nearly evaporated, about 9 minutes.
  • Season to taste with salt and pepper, divide among 4 bowls, and garnish with basil. Serve with oil and Parmesan.

1 lb. lean ground beef
1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
2 cups water
3 cups penne pasta, uncooked
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

Steps:

  • Brown meat in large skillet on medium heat; drain. Return meat to skillet.
  • Add pasta sauce and water; mix well. Stir in pasta.
  • Bring to boil; cover. Simmer on medium-low heat 16 to 18 min. or until pasta is tender; stir.
  • Top with cheese; cover. Cook 1 min. or until cheese is melted.

1 can (14 1/2 ounces) ready-to-serve vegetable broth
1 1/4 cups uncooked rosamarina (orzo) pasta (8 ounces)
1 can (14 1/2 ounces) diced tomatoes with basil, garlic and oregano, undrained
1 can (15 ounces) black beans, rinsed and drained
2 cups frozen broccoli, cauliflower and carrots (from 16-ounce package)
2 tablespoons chopped fresh parsley, if desired
2 tablespoons shredded Parmesan cheese

Steps:

  • Heat broth to boiling in 10-inch skillet. Stir in pasta. Heat to boiling; reduce heat to low. Cover and simmer 10 to 12 minutes or until liquid is absorbed.
  • Stir in tomatoes, beans and vegetables. Cover and cook over medium heat 5 to 10 minutes, stirring occasionally, until vegetables are tender.
  • Stir in parsley; sprinkle with cheese.
