RASPBERRY SALMON

24 fresh raspberries
1/2 cup balsamic vinegar
1 teaspoon grated orange peel
4 teaspoons freshly squeezed orange juice
2 teaspoons honey
Splash of red wine
Olive oil cooking spray, for coating the skillet
4 skinless salmon fillets (each approximately 4 ounces in size), preferably wild
Steamed asparagus, for serving

Steps:

  • Mash the raspberries and vinegar with a fork in a small bowl. Stir in the orange peel, orange juice, honey and wine until combined. Set aside.
  • Coat a nonstick skillet with the cooking spray and place over medium heat. Cook the salmon until cooked through, about 4 minutes per side. Set aside.
  • Remove the skillet from the heat and carefully wipe away any liquid with a paper towel. Return the skillet to medium heat and add the reserved raspberry mixture. Stirring constantly, cook until just thickened, about 2 minutes.
  • Pour the sauce over the salmon and serve with asparagus on the side.

This lemon pasta is a wonderful family recipe and a great way to use up leftover salmon. Simple and delicious. Serve with a green salad and fresh Italian bread.

1 (16 ounce) package penne pasta
3 tablespoons salted butter, divided
3 tablespoons olive oil, divided
1 large yellow onion, chopped
3 cloves garlic, chopped, or more to taste
1 pound cooked salmon, flaked
1 large lemon, zested and juiced
½ cup chopped fresh Italian parsley
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Meanwhile, heat 2 tablespoons butter and 2 tablespoons oil in a large skillet over medium heat. Add onion to melted butter mixture and saute until translucent, about 5 minutes. Add garlic; cook and stir until fragrant, about 2 minutes. Add salmon and cook until heated through, about 3 minutes.
  • Drain pasta and add to the skillet. Stir in parsley and lemon zest. Add lemon juice and season with salt and pepper. Add remaining oil and butter and mix until glossy.

1 tablespoon olive oil
8 ounces asparagus, blanched, cut into 2-inch pieces
2 tablespoons minced shallots
1 tablespoon minced garlic
2 cups shredded chicken confit
Salt and ground black pepper
1 pound pasta rags, cut into 2-inch pieces, cooked al dente
3 tablespoons extra-virgin olive oil
1/2 cup grated Parmigiano-Reggiano, plus 1/4 cup for garnish
2 tablespoons chopped chives, plus 2 tablespoons for garnish
Bottle white truffle oil, to drizzle

Steps:

  • In a saute pan, heat the olive oil. When the pan is smoking hot, saute the asparagus, for about 5 minutes. Add the shallots and garlic, and saute for 3 minutes. Add the chicken and continue to saute for 2 to 3 minutes. Season with salt and pepper. Turn the pasta into a mixing bowl. Toss the pasta with the extra-virgin olive oil and cheese. Fold in the chicken and asparagus. Add the chives and season with salt and pepper. Place the pasta in an over-sized shallow pasta platter. Garnish with 1/4 cup cheese, 2 tablespoons chives and a drizzle of truffle oil.

1 cup fresh, ripe tomato
1/2 pound fresh salmon fillet, all skins and bones removed
6 quarts water
2 tablespoons salt
1 pound fresh pasta sheets
6 tablespoons extra virgin olive oil
1/4 cup fresh dill, chopped
Salt and ground black pepper to taste

Steps:

  • Seed and dice the tomato and set aside. Cut the salmon into slivers that are paper thin and almost transparent and set aside. Bring the water to a boil and add the salt. When the water returns to the boil add the pasta and cook for between 4 to 6 minutes or until fully cooked but still with a toothy bite. Drain the pasta but reserve 1 cup of the cooking water. Do not rinse the pasta. Toss the pasta in a bowl with the olive oil, add the tomato, salmon and dill and toss again. The heat of the hot pasta will cook the thin pieces of salmon to a delicate finish. Season with salt and plenty of black pepper. If you a prefer a more liquid sauce, some of the hot pasta water may be added to moisten the dish or some whole butter may be added as well. Serve immediately.;
