I wanted to make something with pasta, but didn't want tomato sauce base, although this would be good with that too. After I made it I kept it warm in the crock pot- as we could eat when we wanted to and those...

1 Tbsp olive oil
1 lb pkg, cork screw pasta , or your favorite
1 lb shaved smoked ham, chopped
1 medium zucchini ,sliced 1/4 thick, then quartered
3 medium carrots, peeled and sliced thin
1/2 c chopped onion
3/4 c cut green beans
salt and pepper to taste
1 recipe of homemade alfredo sauce(see below in comments)

Steps:

  • 1. Put water on to boil. Cut up veggies and add the carrots and zucchini and green beans to the boiling water with the pasta. Cook in boiling water for 6 minutes. Drain all into a colander, let drain.
  • 2. Place olive oil and chopped ham and onions in the empty pot and cook and stir until onion is almost translucent.
  • 3. Spray the inside of your crock pot or a large kettle and place the pasta mixture and the ham and onion mixture into the crock pot. Mix to combine. Cover to keep warm do not cook in crockpot.Just keep it warm in there.
  • 4. In the empty saucepot make the Alfredo sauce. When it has thickened pour over the pasta medley and stir to coat all the pasta and vegetables evenly.

MACARONI WITH ALFREDO SAUCE



Macaroni With Alfredo Sauce image

This variation on the traditional Fettuccine Alfredo uses tri-color macaroni pasta. It's a great all-purpose pasta dish that's quick, easy and light.

1 cup heavy cream
2 oz (½ stick) butter
¾ lb tri-color macaroni
¾ cup freshly grated parmesan cheese
Kosher salt and freshly ground black pepper to taste

Steps:

  • Fill a large soup pot with cold water and a handful of kosher salt. Stir and taste; it should taste like sea water. Cover the pot and heat the water until it boils.​
  • Meanwhile, in a large sauté pan , heat the butter and about half of the cream over medium-low heat until it starts to bubble. Lower heat and simmer gently for about 15 minutes or until the sauce has somewhat reduced. Remove from heat and cover.​
  • Drop the macaroni into the boiling salted water and cook according to package instructions, about 10 to 12 minutes or until al dente , or tender but still firm to the bite. Drain fully and return to the pot.​
  • Pour the hot cream and butter mixture over the macaroni and return the pot to a very low heat. Toss the pasta in the sauce until it is completely coated.​
  • Add the rest of the cream as well as the cheese and toss until fully mixed. Adjust consistency with additional cream, if necessary.​
  • Season to taste with kosher salt and freshly ground black pepper. Serve right away.

SEAFOOD ALFREDO SAUCE

Creamy and delicious! This is very quick to make since the shrimp and crab is already cooked. Bay scallops are so small that they cook in two minutes. You can make this with just shrimp or with any combination of the seafood mentioned in the recipe. I sometimes add about 1/4 cup dry white wine before adding the milk and half and half. I let it cook for about 2-3 minutes and then proceed. This dish can be served over pasta and also over rice.

1/2 lb bay scallop
1/2 lb cooked shrimp, small
1/2 lb imitation crabmeat, cut up into small chunks
3 tablespoons butter
3 tablespoons flour
8 ounces half-and-half
2 cups whole milk
1/2-3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon nutmeg
1 cup grated parmesan cheese

Steps:

  • Melt butter in heavy or non-stick pan.
  • Add flour and stir for about 2 minutes. Add all spices. Don't let it color.
  • Whisk in half and half and milk. Heat over a low-medium flame until it is thickened and very hot. Don't let it boil. This step usually takes 10 minutes.
  • Add parmesan cheese, stir and take off flame.
  • Immediately add raw scallops and stir. Let stand 2 minutes. It cooks that fast.
  • Stir in cooked shrimp and crab. Taste for seasoning. Serve.

ALFREDO PASTA PRIMAVERA

This is an easy and fast dinner that has lots of flavor! I like to use about 1 cup frozen corn kernels, cooked and 1 cup ripe tomatoes, chopped, which I sprinkle on top along with the fresh parsley, if using. If I use the three cups I use whatever else I have on hand. This makes a very attractive dish to serve. Please note the prep time is for the sauce. It would vary depending on the veggies you were using.

1/2 cup butter
1/2 cup milk
2 -3 cups chopped vegetables

Steps:

  • Cook cream cheese, parmesan cheese, butter and milk over medium-low heat, until melted and well blended, stirring occasionally.
  • If you are using raw veggies cook in the microwave while sauce is cooking.
  • Boil pasta while sauce is cooking.
  • Drain pasta and vegetables.
  • Toss pasta and vegetables lightly with the sauce.
  • If using dried parsley toss with the pasta and sauce.
  • If using fresh parsley sprinkle over the top after it is all tossed.

1 large onion, chopped
2 tablespoons butter
1 tablespoon olive oil
3 garlic cloves, minced
1 cup white wine or chicken broth
1 can (28 ounces) diced fire-roasted tomatoes
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 teaspoon sugar
1 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1 package (16 ounces) linguine
1 pound sea scallops
9 ounces uncooked large shrimp, peeled and deveined
2 tablespoons minced fresh parsley
Shredded Parmesan cheese, optional

Steps:

  • In a large skillet, saute onion in butter and oil until tender.Add garlic; cook 1 minute longer. Add wine. Bring to a boil; cook until liquid is reduced to 1/2 cup. Add the tomatoes, rosemary, sugar, oregano, salt and pepper. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 15 minutes., Meanwhile, cook linguine according to package directions. Add scallops and shrimp to tomato mixture; cook for 4-5 minutes or until shrimp turn pink and scallops are opaque. Stir in parsley. , Drain linguine. Serve seafood mixture with linguine; garnish with cheese if desired.

1 1/4 cups parmesan cheese, grated
1/4 teaspoon salt
1 dash pepper
to taste noodles or to taste fettuccine, cooked

Steps:

  • Cook noodles or fettuccine according to package directions.
  • Heat butter and cream in saucepan until butter is melted.
  • Remove from heat. Add 1 cup Parmesan cheese, salt and pepper; stir until sauce is blended and fairly smooth.
  • Add to drained noodles and toss until they are well coated.
  • Sprinkle with remaining cheese. Variation: Add cooked shrimp, crab or mushrooms.
