1/2 lb pork sausage
6 large eggs, lightly beaten
1 (4 1/2 ounce) can chopped green chilies, undrained
picante sauce
shredded cheddar cheese
4 8-inch flour tortillas

Steps:

  • Brown sausage in a large skillet, stirring to crumble.
  • Drain and return to skillet.
  • Add eggs and chilies to sausage.
  • Cook, stirring gently, until eggs are thickened, but still moist.
  • Do not stir constantly.
  • Microwave tortillas about 10 seconds each until soft.
  • Spoon egg mixture down centers of warm tortillas; top each with picante sauce and cheese.
  • Fold opposite sides over filling.
  • Serve immediately.

Tex-Mex Breakfast Burritos image

Eggs, potatoes and beef make for a delicious Tex-Mex breakfast burrito!

1/2 pound ground beef
1 tablespoon minced onion
1/2 teaspoon salt
1/8 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1 cup diced potatoes, I used Simply Potatoes
1 tablespoon olive oil
1/2 teaspoon seasoning salt
8 eggs, whisked with 1/2 cup water and 1 teaspoon salt
1/2 cup shredded sharp cheddar cheese
Pico de gallo, purchased or homemade*
1/2 avocado, diced
4 burrito sized flour tortillas

Steps:

  • Place the ground beef and minced onion in a saute pan (I use a non-stick pan) and add seasonings. Cook and break apart until the meat is thoroughly cooked. Remove to a bowl.
  • Wipe out the saute pan and add a tablespoon of oil. Add the potatoes and seasoning salt (plain salt and pepper is fine, too) and saute until browned. Remove to another bowl.
  • Whisk the eggs with the water and salt. Add to saute pan and cook, stirring occasionally, until the eggs are soft and set. Remove to a 3rd bowl. Wipe out the pan again.
  • Set out the cheddar cheese, pico de gallo, and diced avocado. Warm the tortillas in the saute pan if desired.
  • Lay a tortilla out on a flat surface. Place 1/4 of the beef along the center of the tortilla, then 1/4 of the eggs, potatoes, cheese, pico, and avocados. Fold up the sides over the short side of the filling, then rotate the burrito and tuck and roll the tortilla around the filling into a burrito shape.
  • Cut in half to serve. If you need to rewarm your burrito, zap in the microwave for a minute or so or place in the saute pan and gently heat.

STEAK AND EGG BURRITOS (OAMC)

This evolved from a camping recipe that my DH and I usually come up with on Sunday mornings before we break-down camp. I decided to make them easy to travel so that DH wasn't stopping at the local burrito shop and getting stuff that wasn't included in his diet. Time includes marinating time.

1/4 cup Worcestershire sauce
2 tablespoons olive oil
1/2 lime, juice of
1/4 cup cilantro, Chopped
3/4 cup fresh tomato, Chopped
1/2 cup onion, Chopped
salt & pepper
24 ounces top sirloin steaks (I use Coleman's Organic Beef)
1 1/2 cups bell peppers, any kind, Chopped
1 1/2 cups mushrooms, any kind, Sliced
1 garlic clove, Crushed
5 eggs, Beaten
6 (10 inch) flour tortillas
wax paper or aluminum foil, and zip baggies

Steps:

  • In a medium bowl, combine Worcestershire sauce, olive oil, lime juice, cilantro, tomatoes, onion, salt and pepper.
  • Place steak in a shallow non-metallic container and cover with marinade. Cover container and place in refridgerator for 1-4 hours.
  • Grill steak on outside grill or under a preheated broiler until desired doneness has been achieved. (I like mine medium-rare) Remove from heat and let sit for 5 minutes before cutting into small cubes. Set aside.
  • In a non-stick pan, cook and scramble eggs until done. Remove from pan and set aside.
  • In same pan, pour in marinade and bring to a simmer over medium heat. Add peppers, mushrooms and garlic; simmer 10 minutes or until liquid is almost gone.
  • Warm tortillas on a grill or in microwave. (I like to line them up on my counter and top all at once.) Divide eggs into 6 portions and place on tortillas. Repeat process with meat and place on top of eggs. Spoon vegetables evenly between all 6 tortillas.
  • Fold each tortilla like a burrito, wrap in Wax paper or Aluminum Foil and place in Zip Baggie.
  • I throw these right in the freezer. Then in the morning, I can pop the ones with Wax paper right in the microwave, or the ones with Aluminum foil right in the toaster oven for about 2-3 minutes each. Time may vary according to your appliance.

2 large onions, finely chopped
1 (12-ounce) can chopped green chiles
4 cloves garlic, finely chopped
1 (15-ounce) can stewed tomatoes
1 teaspoon oregano
1 teaspoon cumin
10 flour tortillas
8 ounces Monterey Jack cheese, grated
Salsa, sour cream, chopped cilantro as garnishes, optional

Steps:

  • Preheat the oven to 350 degrees F and grease a 9 by 13-inch baking pan.
  • In a large skillet, cook the beef until mostly browned. Stir in onions, chiles and garlic and cook until onions have softened. Add the tomatoes, oregano and cumin and cook until the tomatoes have thickened to form a sauce about 10 minutes.
  • Heat the tortillas so that they are pliable--either over a gas flame or in a microwave oven.
  • Divide meat among the tortillas, about 1/4 cup per tortilla, and sprinkle each with cheese. Roll up tortillas and place in baking dish and top with more grated cheese. Bake for 10 minutes. Garnish with a thick salsa, sour cream and chopped cilantro if desired.

1 pound tomatillos, husked, rinsed and quartered
1 medium Vidalia onion, quartered
1 jalapeno pepper, halved
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 small bunch fresh cilantro
1 link Mexican chorizo casing removed
1/2 teaspoon ground cumin
Pinch of cayenne pepper
Pinch of paprika
1 cup mixed canned beans (pinto, cannellini and/or black beans), drained and rinsed

1 green bell pepper, chopped
8 large eggs, beaten
1 tablespoon milk
1 tablespoon unsalted butter
1/2 cup shredded pepper jack cheese
Mexican crema or sour cream, thinned with half-and-half, for garnish
1 plum tomato, seeded and chopped, for garnish

Steps:

  • Make the sauce: Preheat the oven to 400 degrees F. Toss the tomatillos, onion, jalapeno and olive oil on a baking sheet and season with salt and black pepper. Roast until browned, about 45 minutes. Puree in a blender with the cilantro, thinning with water as needed. Season with salt.
  • Meanwhile, prepare the omelet: Cook the chorizo in a large nonstick skillet over medium-high heat until crisp, breaking it up, 4 to 5 minutes. Transfer to a paper-towel-lined plate. Stir the cumin, cayenne and paprika into the drippings in the skillet. Add the beans and saute until soft, about 5 minutes. Season with salt and black pepper, then add the bell pepper and cook 1 to 2 more minutes. Transfer to a bowl.
  • Whisk the eggs and milk in another bowl. Wipe out the skillet, reduce the heat to medium and add 1/2 tablespoon butter. Pour half of the egg mixture into the skillet and cook until the center is no longer liquid, loosening the edges with a rubber spatula and tilting the skillet to let the uncooked egg run underneath. Shake the pan to loosen the omelet, then spoon half of the bean mixture, chorizo and cheese down the center. Fold in both sides to cover the filling, then flip the omelet so it is seam-side down and cook 1 more minute. Repeat with the remaining butter, egg mixture and fillings to make another omelet. Top with the tomatillo sauce and garnish with the crema and tomato.

1/2 c tomato, chopped
1 Tbsp pitted ripe olives, chopped
1 Tbsp mild green chilies (canned), chopped
1 Tbsp salsa
1/4 tsp dried oregano leaves
4 eggs
1 Tbsp skim milk
1/4 c cheddar cheese, shredded
2 Tbsp light sour cream
sliced avocado (optional)

Steps:

  • 1. Spray nonstick cooking spray to a 10-inch skillet. Combine tomato, olives, chilies, salsa, oregano together and add to skillet. Cook over medium heat for 1-2 minutes or until hot, stirring occasionally. Remove mixture from skillet; set aside. Let skillet cool 1 minute; wipe skillet clean with paper towels.
  • 2. In a small bowl, combine eggs and milk; blend well. Spray skillet with cooking spray; return to heat over medium heat without stirring, running spatula around edge of skillet and lifting egg mixture to allow uncooked portion to flow to bottom of skillet. Cook 3-4 minutes or until mixture is set , but top is still moist.
  • 3. Place cooked vegetables and 2 tbsp. cheese over half of the omelet. With spatula, loosen edge of omelet and fold other half over vegetables. Sprinkle with remaining cheese. Cover and cook 1 minute. Serve omelet with sliced avocado and sour cream.

Chorizo is a Mexican sausage. It's high in fat but it's very flavorful so you don't need much of it. If you can't find it, substitute bulk pork sausage and add 1 t. taco seasoning. It won't be as good, but you'll still have a filling breakfast. If your family is larger, you may want to double this recipe but you'll need a very large skillet. Bonus - these burritos were a huge hit at an early morning tailgate party - we kept them warm in a pan sitting over some simmering water.

1/4 lb chorizo sausage
12 eggs
1/3 cup chunky salsa

  • Cook chorizo - In wide skillet, saute chorizo sausage, stirring it and breaking it up so that the finished product is small and crumbly. Remove to paper towels to drain. Clean skillet of any blackened bits.

  • Heat tortillas - Put 5 tortillas between damp paper towels and microwave 45 seconds. Repeat for other 5 tortillas.
  • Assemble - Put egg mixture onto warm tortilla and roll up. Place each completed tortilla in a piece of waxed paper for easy freezing and removal.
  • To reheat - microwave 2 minutes at 50% power.

3/4 lb lean ground beef
1/2 lb fresh or smoked chorizo sausage, diced
2 small anaheim chilies, seeded and chopped (New Mexico)
1 medium onion, chopped
1 1/2 teaspoons olive oil
1/2 lb potato, diced
2 garlic cloves, finely chopped
3 plum tomatoes, diced
1/2 teaspoon Mexican oregano, crumbled
1/4 teaspoon salt
4 burrito-size flour tortillas, warmed
salsa verde (optional)
sour cream (optional)

Steps:

  • Heat 12-inch nonstick skillet over medium-high heat.
  • Add beef and chorizo; cook 3 to 4 minutes, until beef is no longer pink.
  • Transfer with slotted spoon to medium bowl.
  • Drain all but 1 tablespoon drippings from skillet.
  • Add chiles, onion and oil; cook 3 minutes.
  • Add potatoes; continue cooking 4 to 5 minutes, until potatoes start to brown.
  • Reduce heat to medium and cook about 4 minutes, until potatoes are tender.
  • Add garlic and cook 30 seconds, then tomatoes, oregano and salt.
  • Cook 3 to 5 minutes more, until thick.
  • Return beef mixture to skillet and heat through, 1 to 2 minutes more.
  • Divide and spoon filling down center of each tortilla.
  • Fold in sides and roll up.
  • Serve burritos with salsa verde and sour cream, if desired.
  • Makes 4 burritos.

Quick and easy spicy bean burritos that the whole family will enjoy! Tex-Mex is a highly spiced and vibrant style of cooking that developed as an evolution of Northern Mexican cuisine. These burritos are fairly spicy with 1/2 tbsp chili powder and medium salsa. Feel free to increase the chili powder if using a milder salsa. I also use whole-wheat tortillas for extra fibre. These freeze well.

1 (14 ounce) can vegetarian baked beans, in tomato sauce
1/2 tablespoon chili powder
1/2 teaspoon oregano

64 inches flour tortillas
1/2 cup part-skim mozzarella cheese, shredded (approx amount)
1/2 cup low-fat cheddar cheese, shredded (approx amount)
1/2 cup salsa (approx amount)
1/2 cup pepper, chopped (optional)

Steps:

  • In a food processor, process beans and seasonings until smooth.
  • Spread out the 8 tortillas; add an equal amount of the bean mixture in the center of each tortilla.
  • On top of the bean mixture on each tortilla, add a sprinkle of mozzarella and cheddar cheese, some salsa, chopped pepper, and sour cream.
  • Fold tortillas up into burritos (fold the bottom third of tortilla over the filling; fold over both sides of tortilla; roll up to enclose the filling).
  • Place burritos in a nonstick frying pan or electric frying pan over medium heat.
  • Flip burritos often until golden brown.
  • OAMC; To Freeze - For a quick snack or dinner later on, after finishing frying, place single burritos (or family size portions if for a family meal) into plastic storage bags, then place individual bags into large freezer bag and freeze.
  • To re-heat - When ready for a burrito, pop it out of the bag and heat in the microwave for 1-2 minutes on medium power. Or, for a crispier burrito, pan fry the burrito until warm the outside is crisp.

A speedy vegetarian dish - ideal as a last-minute, midweek supper

2 tomatoes , halved, seeds scooped out, then chopped
3 spring onions , chopped
1 red chilli , sliced (deseeded if you like it milder)
4 eggs
100ml milk
1 tsp olive oil
100g cheddar , grated
2 large wraps
soured cream and guacamole to serve, (optional)

Steps:

  • In a small bowl, mix the tomatoes, half the spring onions and half the red chilli with some seasoning and set aside. Beat the eggs and milk with a fork with some seasoning.
  • Heat the oil in a large non-stick pan and fry the remaining spring onion and chilli for 1 min, then pour in the egg mix. Gently scramble the eggs by dragging the egg mixture as it sets into the middle of the pan. Cook to your liking, then take off the heat and throw on the cheese. Stir through, then divide between the wraps. Tuck up the top and bottom of each wrap and roll up, then slice in half and serve with the homemade tomato salsa, soured cream and guacamole, if you like.
