PASKA EASTER BREAD RECIPE (KULICH)



Paska Easter Bread Recipe (Kulich) image

Traditional Paska Easter Bread Recipe a.k.a. Kulich has been made by our family for generations.

2 cups + 2 Tbsp warm milk (I used whole milk)
6 large eggs (room temp)
1 Tbsp active dry yeast
2 cups sugar
2 sticks unsalted butter ((1/2 lb or 226 gr), melted (if using salted butter, omit salt))
1/2 tsp salt
1/2 cup sour cream
1 tsp vanilla extract
9 cups all-purpose Canadian flour (divided)
1 to 1 1/2 cups raisins (white or brown)
2 cups powdered Sugar
3 Tbsp Lemon Juice
3 Large Panettone Paper Molds; we purchased them on Amazon

Steps:

  • In a large Mixing bowl, whisk together 2 cups + 2 Tbsp warm milk, 6 eggs, 1 Tbsp yeast, 2 cups sugar, 2 sticks melted butter (just warm, not hot!), 1/2 tsp salt, 1/2 cup sour cream and 1 tsp vanilla. Whisk in 4 cups flour. Your batter will be thick like sour cream. Cover bowl with plastic wrap and let it rise in a warm place or a warm oven (about 100˚F) for 2 hours.
  • Add 5 more cups of flour; one cup at a time or until the dough no longer sticks to your hands (it will still feel sticky but wont' stick to your fingers). I find it's easiest to fold flour in with a silicone spatula. Dough should be soft. Stir in 1 to 1 1/2 cups raisins. Cover and let dough rise another 2 hours in a warm oven (100˚F).
  • Divide dough evenly into the three paper baking molds; try not to mix it or stomp it down too much. Let dough rise uncovered in a warm 100˚F oven for an additional 2 hours or until the molds are almost full. Remove from the oven and preheat oven to 350˚F.
  • Bake at 350˚F for 30-35 minutes in the middle of the oven until the top is golden brown. Let cool to room temp or just warm and then tear off the wrapper.
  • Once the Breads are at room temperature and wrappers are off, get your frosting ready. In a medium bowl, whisk together 2 cups powdered sugar with 3 Tbsp lemon juice. Add a little water if it's too thick or a little more powdered sugar if it's too runny. Pour the glaze over each cooled Easter bread. Traditionally, these are topped with colorful sprinkles before the glaze sets.

This soft, sweet Paska Bread recipe is a traditional Ukrainian Easter bread recipe. The perfect sweet bread for your Easter day meals.

1 cup whole milk (warmed to 110 degrees F)
2¼ teaspoons instant yeast (0.25-ounce packet)
½ cup granulated sugar
¼ cup unsalted butter (melted and cooled to room temperature)
2 eggs
1½ teaspoons vanilla extract
4 cups all-purpose flour
½ teaspoon salt
1 cup golden raisins (optional)
1 egg
2 tablespoons water
Coarse sugar, for sprinkling (optional)

Steps:

  • Warm the milk to between 100 to 110 degrees F (usually 30 seconds in the microwave does the trick!) and pour into a mixing bowl. Sprinkle the yeast over top and let sit for 5 to 10 minutes, until foamy.
  • Add the sugar, butter, eggs, and vanilla extract, and stir to combine.
  • Add the flour and the salt and stir with a wooden spoon until a shaggy dough forms. Add the golden raisins then, using the dough hook, knead on medium-low speed until a smooth, shiny ball of dough is formed, 3 to 6 minutes, adding additional flour as necessary. (You can also knead by hand until smooth ball is formed.) Place the dough in a greased bowl and cover with plastic wrap. Place in a warm, draft-free spot until doubled in size, 1 to 2 hours (rise time will depend on temperature and humidity in your kitchen).
  • Punch dough down and remove from the bowl to a clean work area. Remove one-quarter of the dough and set aside. Form the large piece of dough into a ball and place in a 9-inch round cake pan or springform pan.
  • Divide the remaining piece of dough into three pieces and roll them each out into a 20-inch strand. Braid the three strands together for one long braid. Divide the braid in half and use it to form a cross over the top of the large ball of dough in the pan. (Alternately, you can wrap the braid in one length around the inside edge of the pan.)
  • Cover lightly with plastic wrap and let rise until puffy and nearly doubled in size, 45 to 60 minutes.
  • Preheat oven to 400 degrees F.
  • Whisk together the egg and water, then brush evenly all over the top of the dough and sprinkle with sugar, if desired.
  • Bake for 15 minutes, then reduce the oven temperature to 350 degrees F and bake for an additional 25 to 30 minutes, until golden brown and an instant-read thermometer registers 190 degrees F. You can tent the pan with aluminum foil if it is browning too quickly. Remove from the oven, turn the bread out of the pan, and place it on a wire rack to cool completely.

Paska is a traditional Easter bread prepared with lots of eggs, making it much richer than ordinary sweet breads. The beautifully braided top will earn you many compliments.

Number Of Ingredients 11

2 packages (1/4 ounce each) active dry yeast
1 teaspoon plus 1/3 cup sugar, divided
4 cups warm water (110° to 115°), divided
1 cup nonfat dry milk powder
13-1/2 to 14-1/2 cups all-purpose flour, divided
6 large eggs, room temperature, beaten
1/2 cup butter, melted
1 tablespoon salt
EGG GLAZE:
1 egg
2 tablespoons water

Steps:

  • In a large bowl, dissolve yeast and 1 teaspoon sugar in 1 cup warm water. Let stand for 5 minutes. Add remaining water. Beat in the milk powder and 5 cups flour until smooth. Cover and let rise in a warm place until bubbly, about 20 minutes. Add eggs, butter, salt and remaining sugar; mix well. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 8-10 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half and set 1 portion aside. Divide remaining portion in half; press each portion into a well-greased 10-in. springform pan. Divide reserved dough into 6 balls. Shape each ball into a 30-in. rope; make 2 braids of 3 ropes each. Place a braid around the edge of each pan, forming a circle. Trim ends of braids, reserving dough scraps. Pinch ends of braids to seal. Shape scraps into 2 long thin ropes; form into rosettes or crosses. Place 1 decoration on the center of each loaf. Cover and let rise until doubled, about 1 hour. , In a small bowl, beat egg and water; brush over dough. Bake at 350° for 50-60 minutes or until golden brown. Remove from pans to wire racks to cool.

2/3 cup milk
1/3 cup sugar
1 tablespoon active dry yeast, 1 pkg
3 -3 1/2 cups all-purpose flour
2 eggs
5 egg yolks
1 teaspoon vanilla extract
1 grated lemon, zest of
2 teaspoons salt
3/4 cup unsalted butter, softened
1/2 cup raisins
1/4 cup golden raisin

Steps:

  • In a small saucepan over low heat, heat the milk and 1 tablespoon of the sugar until very warm (120 to 130 F). Pour into a large mixing bowl, and sprinkle over the yeast. Allow to stand until foamy, about 15 minutes.
  • Sift 1 cup of the flour over the yeast mixture and with a wooden spoon, stir until a batter forms. Cover the bowl with a clean dish towel and leave in a warm place (80 F to 85 F) until mixture looks puffy and spongy, about 1/2 hour.
  • In another bowl or a 4 cup measure whisk the eggs and egg yolks together with the vanilla extract, grated lemon zest, and salt.
  • Sift another 2 cups of flour over the risen yeast flour mixture, and make a well in the center. Pour in the egg mixture, and stir with a wooden spoon until the mixture becomes a soft, sticky dough; the dough should be as soft as possible, so do not add more flour unless it is very wet.
  • Using your hand, spread the butter over the dough and work into the dough, folding it over itself and kneading into the dough until the butter is completely incorporated. Cover with the dish towel and leave to rise again in a warm place until doubled in volume, about 3 hours.
  • Butter a 2 pound coffee can. Line the bottom with nonstick baking parchment, and butter again.
  • Punch down the dough and turn onto a lightly floured surface. Sprinkle the raisins, golden raisins over the dough, and knead until evenly distributed throughout the dough.
  • Form the dough into a ball shape, and ease into the coffee can. Cover and leave to rise again until the dough reaches the top of the can, about 1 1/2 hours.
  • Preheat the oven to 400°F Brush the top of the dough with a little milk and if you like sprinkle with about a tablespoon of sugar. Bake for 15 minutes, then reduce the oven temperature to 350°F and bake about 1/2 hour longer; if the paska browns too quickly, cover with foil. Remove to a wire rack to cool in the can for about 5 minutes, then carefully unmold, top side up, to cool completely. Makes 1 loaf.

PASKA SLOVAK EASTER BREAD

While Czechs bake sweet mazanec bread at Easter, our neighbors in Slovakia prepare their soft and fluffy paska bread. Traditional paska bread is made from yeast dough, has a slightly sugary taste, and is topped with braids laid in the shape of a cross, referring to Christian symbolism.

2 and 1/2 cups all purpose flour
1/2 cup milk (warm but not hot)
1 egg
1 Tablespoon water (warm)
1 and 1/2 teaspoons active dry yeast
1/2 teaspoon salt
1/2 stick unsalted butter ((55 g) softened at room temperature)
2 Tablespoons granulated sugar
1/2 egg

Steps:

  • Combine flour, active dry yeast, sugar, and salt (dry ingredients) in a large bowl.
  • Pour in the warm milk (not hot!) and water, crack in the whole egg, and add the softened butter.
  • Process into a smooth, soft dough. First, mix the ingredients roughly in a bowl with a wooden spoon, then turn the mass onto a floured surface. Sprinkle a small handful of flour on the side. Start working the dough with your hands, and if it sticks, always 'dip' the dough in the prepared flour. Knead until the dough doesn't stick and is beautifully elastic.
  • Return the smooth ball of dough to the bowl and cover with cling film. Put it in a warm spot to first-time rise for an hour. The volume of the yeasted dough should double. Halfway through the rising time, knead the dough briefly to support further leavening.
  • Prepare the pan in which you will bake the paska bread. I used a small 8-inches springform pan. I greased the form lightly with butter and lined its bottom and sides with baking paper. Thanks to the butter, the paper sticks to the sides of the pan and holds nicely.
  • From the risen bread dough, separate a quantity about the size of an egg. Divide this small egg-sized dough into four pieces and roll each into a thin strand. Twist two of each together, making a simple braid.
  • Shape the remaining dough into a loaf and place it, seam side down, in the lined tin. Place the prepared braids over the dough in the shape of a cross. Tuck their ends between the loaf and pan's sides a little.
  • Cover with a clean kitchen towel and put the prepared paska bread to rise for another hour.
  • Make an egg wash: Whisk an egg with a fork in a medium bowl and brush the whole surface of the bread, braids included, with it.
  • Preheat the oven to 356°F / 180°C (upper and lower heat). Transfer the paska bread to a wire rack, close the oven door, and bake for about 25-30 minutes, depending on its size.

2 1/4 teaspoons dry yeast
1 large potato
2 cups flour (or more)
2 1/2 cups warm milk
7 -8 egg yolks
7 -8 egg whites, stiffly beaten
1 1/2-2 cups sugar
1 teaspoon lemon juice
1/2 cup margarine or 1/2 cup butter
1 teaspoon salt
1/2-1 teaspoon orange zest
bit vanilla

Steps:

  • Peel and chop potato.
  • Boil until tender.
  • Drain, reserving water.
  • Mash the potato.
  • Soften yeast in 3/4 cup lukewarm potato water (water from cooking the potato) for 10 minutes.
  • Add a bit of flour to make a soft sponge.
  • In the meantime, warm the milk.
  • Pour it over 2 cups flour.
  • Beat until smooth.
  • Allow to cool slightly.
  • Beat egg yolks with 1 cup sugar.
  • Add warm flour mixture.
  • Add stiffly beaten egg whites.
  • Add yeast mixture.
  • Cover and let rise until light.
  • Add softened margarine, salt, remaining sugar and mashed potato (should have at least half cup mashed potato).
  • Add enough flour to make a medium soft dough.
  • (It will be a bit sticky-- if too stickly add flour but be careful not to add too much flour.) Knead 10 minutes.
  • Cover and let rise to double its bulk.
  • Shape into loaves.
  • (You may make braided loaves, round loaves, or oval loaves.) Cover and let rise again.
  • Bake at 325 F until golden.
  • Be careful not to overbake.
  • Make icing (or glaze) with powdered sugar and milk.
  • Ice when bread is completed cooled.

  • DISSOLVE YEAST IN MILK, WHICH HAS BEEN SCALDED, BUT COOLED TO LUKEWARM. ADD 3 CUPS FLOUR AND ½ CUP SUGAR. MIX AND LET RISE UNTIL DOUBLE IN BULK AND BUBBLY (ABOUT 2 HOURS) . AFTER FIRST RISING, ADD EGGS, SUGAR, BUTTER, RAISINS AND ENOUGH FLOUR TOMAKE A LIGHT DOUGH. KNEAD WELL, ALL TO RISE. COVERED IN WARM PLACE UNTIL DOUBLE IN BULK. TURN OUT ON FLOURED BOARD AND KNEAD AGAIN USING MORE FLOUR IF NECESSARY TO MAKE A MEDIUM DOUGH. SHAPE INTO TWO ROUND LOAVES, AND PUT INTO TWO GREASED PANS AND LET RISE AGAIN UNTIL DOUBLED IN BULK. DECORATE AS DESIRED AND BRUSH TOP WITH BEATEN EGG. BAKE AT 350 DEGREES FOR 45 MINUTES.
