Steps:
- In a large skillet over medium heat, cook the sausage until no longer pink; drain. Add the next 8 ingredients; cook until the vegetables are tender. Reduce heat to low; add cream cheese and sour cream. Cook and stir until cheese is melted and well blended (do not boil). Serve warm with tortilla chips.

PARTY SAUSAGE DIP

Steps:
- Bring cheeses up to room temperature
- Pre-heat Oven to 350 degrees
- Brown Sausage in Skillet and place in mixing bowl
- Cut Colby Jack, Pepper Jack and Sharp Cheddar Cheeses into small pieces
- Fold in Cream Cheese, Tomato Paste, Cheeses, Diced Tomato with Jalapeno Peppers and Diced Jalapeno Peppers, Mixing Thoroughly.
- Place Mixture in a 9 inch to 10 inch Backing Dish, Spread Out evenly.
- Cut Remaining Sharp Cheddar into very thin slices and place over mixture.
- Bake in Oven for 25 minutes to 30 minutes or until nice and bubbly. Remove and Garnish with Finely Chopped Scallions or Chives, Let sit for 10 Minutes and Serve while still Hot.
SAUSAGE DIP
This sausage dip requires just three ingredients and can be made in 10 minutes. It's perfect for your Super Bowl party, game day tailgate, or any other get together.

Steps:
- Heat a 10-inch cast-iron skillet over medium heat until very hot. Add the sausage and break up into small pieces with a wooden spoon. Cook until no pink pieces remain, about 6 minutes.
- Reduce the heat to medium-low. Add the cream cheese and break up into smaller pieces. Add the salsa and stir well to combine. Continue to stir until all of the cream cheese is melted, about 3 minutes.
- Top with scallions and cilantro and serve right out of the skillet, with tortilla chips on the side.

- Fry sausage until brown and drain.
- Drain Ro-Tel and reserve 1/4 cup juice.
- Mix together cooked sausage, cream cheese, Ro-Tel and 1/4 cup juice.
- Place in a slightly greased 1 quart baking dish. Sprinkle cheese on top.
- Bake at 350 degrees for 20 to 25 minutes.
- Serve with corn chips or pita chips.
