For chive and parsley oil
1 cup chopped fresh chives
3/4 cup chopped fresh flat-leaf parsley
1/2 cup plus 3 tablespoons olive oil
1/4 teaspoon salt
For mashed potatoes
5 lb yellow-fleshed potatoes such as Yukon Gold
1 1/2 cups milk
1 stick (1/2 cup) unsalted butter, cut into tablespoon pieces
1 1/4 teaspoons salt
3/4 teaspoon black pepper

Steps:

  • Make oil:
  • Purée chives and parsley with oil and salt in a blender until smooth. Pour herb oil through a fine-mesh sieve into a glass measure, pressing on and discarding solids.
  • Prepare potatoes:
  • Peel and quarter potatoes. Cover potatoes with salted cold water by 1 inch in a 5-quart heavy pot, then simmer, uncovered, until very tender, about 25 minutes.
  • While potatoes are simmering, bring milk, butter, salt, and pepper just to a simmer, stirring until butter is melted.
  • Drain potatoes in a colander and return to pot. Add hot milk mixture and mash with a potato masher until almost smooth, then stir in 4 tablespoons herb oil.
  • If desired, serve potatoes drizzled with some of remaining oil.

8 large Idaho® Gold Potatoes
½ cup soft butter
½ cup shredded Parmesan cheese
1 ½ cups buttermilk
1 cup heavy cream, or more to taste
1 bunch flat leaf parsley, roughly chopped
1 teaspoon kosher salt

Steps:

  • Slice all potatoes in half, place in a large pan, and cover with cool water.
  • Bring to a boil for 25 to 35 minutes or until potatoes are tender enough to mash.
  • Drain water and add remaining ingredients. The parsley cooks slightly with the heat of the potatoes.
  • Mash by hand or with a hand mixer.
  • Add salt to taste and enjoy!

16 small red potatoes (about 2 pounds)
1 celery rib, sliced
1 medium carrot, sliced
1/4 cup finely chopped onion
2 cups chicken broth
1 tablespoon minced fresh parsley
1-1/2 teaspoons salt, divided
1 teaspoon pepper, divided
1 garlic clove, minced
2 tablespoons butter, melted
Additional minced fresh parsley

Steps:

  • Place potatoes, celery, carrot and onion in a 4-qt. slow cooker. In a small bowl, mix broth, parsley, 1 teaspoon salt, 1/2 teaspoon pepper and garlic; pour over vegetables. Cook, covered, on low 6-8 hours or until potatoes are tender., Transfer potatoes from slow cooker to a 15x10x1-in. pan; discard cooking liquid and vegetables (or save for another use). Using the bottom of a measuring cup, flatten potatoes slightly. Transfer to a large bowl; drizzle with butter. Sprinkle with remaining salt and pepper; toss to coat. Sprinkle with additional parsley.

1 ½ pounds new red potatoes
1 tablespoon vegetable oil
1 onion, chopped
1 clove garlic, crushed
1 cup chicken broth
1 cup chopped fresh parsley
½ teaspoon ground black pepper

Steps:

  • Peel a strip of skin from around the center of each potato, place the potatoes in cold water. Set aside.
  • Heat oil in a large skillet over medium high heat. Saute onion and garlic for 5 minutes or until tender. Pour in broth and 3/4 cup of the parsley; mix well. Bring to a boil.
  • Place the potatoes into a large pot full of salted water. Bring the water to a boil; then reduce heat. Simmer covered, for 10 minutes or until the potatoes are tender.
  • Remove potatoes with a slotted spoon to a serving bowl. Sprinkle the black pepper into the skillet and stir.. Pour the peppered sauce over potatoes and sprinkle with remaining parsley.

6 garlic cloves, slightly crushed
4 ounces cream cheese
4 ounces butter
1/2 cup milk, heated
salt
1 teaspoon pepper
1 bunch scallion, 1/3 cup sliced
1 bunch fresh parsley, 1/2 cup minced

Steps:

  • Boil potatoes and garlic in a large pot with salted water till fork tender about 20 minutes.
  • Drain and return to pan; add butter, cream cheese and milk mash with a potato masher until smooth.
  • Stir in scallions and parsley.
  • season to taste with salt and pepper .
  • Use a little more milk if you prefer thinner mashed potatoes.

Steps:

  • Combine potatoes, parsnips, parsley root, if using, and garlic in heavy large saucepan. Add 3 cups water and broth; if necessary, add additional water to cover by 1 inch. Boil uncovered until vegetables are tender, about 25 minutes. Drain vegetables, reserving liquid.
  • Return vegetables to pot. Add cream and butter. Set over low heat; mash until mixture is smooth; and fluffy, adding enough reserved cooking liquid to thin to desired consistency. Mix in 2 tablespoons parsley. (Can be made 2 hours ahead. Cover; let stand at room temperature. Rewarm over low heat, stirring.) Transfer to bowl. Top with additional parsley.
