CREAMY PARMESAN PASTA
This family pleasing pasta dish is quick and easy enough to make any night of the week.

Steps:
- Cook pasta in 4-quart saucepan according to package directions. Drain; return to saucepan. Keep warm.
- Melt 2 tablespoons butter in 10-inch skillet over medium heat until sizzling; add broccoli. Cook, stirring occasionally, 4-5 minutes or until crisply tender.
- Place whipping cream and remaining butter in 1-quart saucepan. Cook over medium-low heat, stirring occasionally, until butter is melted. Stir in Parmesan cheese 5-6 minutes or until melted and smooth. Remove from heat.
- Pour Parmesan sauce over pasta; add broccoli, chicken, bacon and garlic salt. Gently stir until well mixed.
- Spoon into serving dish. Sprinkle with additional Parmesan cheese, if desired.

SIMPLE PASTA WITH PARMESAN
Another stupidly simple side dish made from pantry staples that my family asks for over and over. The savory combination of flavors goes well with many other foods. It can be made with freshly-cooked pasta or with leftover, cooked pasta that has no sauce on it. I've included options for some variations to create not-so-simple but extremely tasty side dishes or complete, one-dish meals by adding ingredients you probably have on hand.

Steps:
- Put pasta into a microwavable dish large enough to give you a little room for stirring and tossing.
- Dot pasta with butter or drizzle with olive oil.
- Sprinkle Parmesan over top. Add plenty of fresh-ground, black pepper.
- Heat in microwave on high 3 to 5 minute at a time, stirring frequently, until thoroughly hot.
- Serve, passing the pepper grinder at the table.
- You can add 1-2 cups of cooked meat (chicken, turkey, and ham are all especially good), and/or 1-3 cups pre-cooked, chopped vegetables. I particularly recommend broccoli, zucchini, onions, and/or green, snap, or snow peas.

PARMESAN GARLIC PASTA
Quick and tasty-- a good side for a weeknight. You can also add in some bacon or ham to the frying pan with the garlic and make it a main course.

Steps:
- Cook pasta according to directions.
- Towards the end of the pasta cook time, heat 1 tbls olive oil in a frying pan.
- Add the pressed garlic, cook about 1 minutes, be sure not to burn.
- Add the 3 tbls white wine and deglaze the pan.
- Drain the pasta and add to the frying pan.
- Stir in the remaining 1 tbls olive oil, parsley, salt, pepper.
- Toss on heat until excess liquid is evaporated- just a few minutes.
- Put in serving bowl and toss with the shaved parmesan cheese.

- When the pasta is done, reserve a mug full of the pasta water. Drain the pasta then return to the pot.
- Add the half and half to the pasta along with the Parmesan. Start stirring the pasta until it a smooth sauce starts to form.
