PARMESAN POLENTA WITH HAM



Parmesan Polenta with Ham image

Yield 4 Main-course servings

Number Of Ingredients 9

3 cups milk
6 tablespoons (3/4 stick) butter, diced
1 teaspoon salt
1/4 teaspoon ground pepper
1/8 teaspoon ground nutmeg
3/4 cup yellow cornmeal
1 cup diced ham
3/4 cup plus 2 tablespoons grated Parmesan cheese
1 egg, beaten to blend

Steps:

  • Combine milk, 5 tablespoons butter, salt, pepper and nutmeg in heavy large saucepan. Bring to boil over medium heat. Gradually whisked in cornmeal. Stir until mixture is very thick and beginning to pull away from sides of pan, about 8 minutes. Remove from heat. Mix in ham, 3/4 cup cheese and egg. Transfer polenta to 8 x 8 x 2-inch glass baking dish. Dot with 1 tablespoon butter. Sprinkle with remaining 2 tablespoons cheese. (Can be prepared 1 day ahead. Cover; refrigerate.)
  • Preheat oven to 450°F. Bake polenta uncovered until heated through and beginning to brown on top, about 30 minutes. Cut into squares and serve.

"I first tried this simple snack bread at an office Christmas party," recalls Marge Fisher of Arlington, Virginia. "The recipe can be increased or decreased depending on the size of your guest list. It's wonderful when made with prosciutto (thinly sliced Italian ham)," she adds.

1 carton (8 ounces) whipped cream cheese
1 cup shredded Parmesan cheese
1/4 pound deli ham, finely chopped
1/2 to 1 teaspoon garlic powder
1 unsliced loaf (1 pound) Italian bread

Steps:

  • In a large bowl, beat the cream cheese, Parmesan cheese, ham and garlic powder until blended., Cut bread in half lengthwise; spread with the cream cheese mixture. Cut into 1-1/2-in. slices. Place on an ungreased baking sheet. Broil 4 in. from the heat for 3-5 minutes or until topping is lightly browned.

Steps:

  • 1. In a small mixing bowl, beat the cream cheese,Parmesan cheese,ham,and garlic powder until blended. Cut bread in half lengthwise;spread with the cream cheese mixture. Delishious puffs!!! This recipe can be adjusted to other fillings, try chicken or beef with different cheese, I like to make 2 or 3 different batches.

1 1/4 cups finely diced cooked ham
1/2 cup shredded parmesan cheese (or Gouda)
1/4 cup sun-dried tomato packed in oil, drained and chopped
2 tablespoons sour cream
4 medium green onions, chopped
2 packages frozen puff pastry, thawed

Steps:

  • Heat oven to 400f degrees.
  • Mix all ingredients except pastry.
  • Cut pastry into circles with 2 1/2 to 3 inch round cookie cutter or pastry wheel.
  • Spoon about 1 rounded teaspoon ham mixture on centre of each circle; brush edges with water.
  • Fold each circle over filling, pressing edges to seal.
  • Place in ungreased jelly roll pan, 15 1/2x10 1/2 inch.
  • Bake 18 to 22 minutes or until golden brown.
  • Serve warm.
  • These puffs can be refrigerated for up 24 hours and reheated in a 400f degree oven for 6 to 8 minutes or until heated through.
