DIJON CHICKEN WINGS

Vegetable oil, for brushing
4 pounds chicken wings, split at the joints, tips removed
Kosher salt and freshly ground pepper
3/4 cup dijon mustard
1/2 cup honey
3 tablespoons mustard powder
1/2 teaspoon finely grated garlic

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 450 degrees F. Brush 2 large baking dishes with vegetable oil. Pat the wings dry; sprinkle with 2 teaspoons salt and 1/2 teaspoon pepper. Spread in the dishes and bake, rotating halfway through, until golden, 40 to 45 minutes.
  • Meanwhile, mix the dijon mustard, honey, mustard powder and garlic in a bowl. Remove the wings from the oven and toss with the mustard mixture, then continue baking until glazed, 3 to 5 more minutes.

8 slices firm white bread, about 8 ounces
3/4 cup grated parmesan cheese
2 teaspoons dried oregano
1 1/2 teaspoons salt
3 lbs chicken wings, tips removed
2 eggs
1/3 cup all-purpose flour
2 teaspoons garlic powder
ranch salad dressing (for dipping) (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Coat baking sheet with cooking spray.
  • In food processor process bread until crumbs form.
  • Transfer to bowl;stir in cheese,oregano and salt.
  • Carefully cut wings into 2 pieces at joint.
  • In bowl lightly beat eggs.
  • In separate bowl combine flour and garlic powder.
  • Coat each chicken piece in flour mixture; dip into egg.
  • Coat with breadcrumb mixture; place on baking sheet.
  • Bake 20 minutes; increase oven temperature to 400 degrees.
  • Turn wings; bake until crisp, 25 minutes.
  • Serve with salad dressing, if desired.

1 stick (1/2 cup) unsalted butter
2 tablespoons Dijon-style mustard
1/8 teaspoon cayenne
1 cup dried bread crumbs
1/2 cup freshly grated Parmesan
1 teaspoon ground cumin
20 chicken wings, wing tips cut off and discarded and the wings halved at the joint

Steps:

  • In a shallow dish whisk together the butter, the mustard, and the cayenne. In another shallow dish combine well the bread crumbs, the Parmesan, the cumin, and salt and black pepper to taste. Dip the chicken wings, a few at a time, in the butter mixture, letting the excess drip off, coat them with the crumb mixture, and arrange them without touching in a greased shallow baking pan. Bake the chicken wings in the lower third of a preheated 425°F. oven for 30 minutes. (If extra-crisp chicken wings are desired, turn the wings after 20 minutes.)

Another military wife I know shared this delicious recipe with me. Sherry originally found this recipe in an issue of Taste of Home. This is my adaptation of her version. I always have a bag of frozen wings in the freezer for last minute guests and this recipe is great for using them, since no thawing is required.

1 cup grated parmesan cheese
1 teaspoon salt, to taste
1 teaspoon dried parsley flakes
1 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
20 frozen chicken wings, & drummettes, unthawed
1/2 cup butter, melted (1 stick)

Steps:

  • Combine first 6 ingredients (cheese through pepper).
  • Set the melted butter in a bowl and dip the chicken wing pieces first into the butter, then into the cheese mixture to coat.
  • Set on a foil lined baking sheet with edges.
  • Bake in a preheated oven at 350 F for about 45 minutes or until fully cooked.
  • NOTE: To use raw chicken wings- you will need about 2 pounds of whole fresh wings, cut into 3 pieces each and discarding the wing tips.

1 garlic clove, minced

1/2 cup freshly-ground parmesan cheese
1/4 cup fine dry breadcrumb

  • In a large frying pan, melt butter over moderate heat and stir in mustard, garlic, lemon juice, salt, pepper and oregano.
  • Add wings and fry in 2 batches until nicely browned on all sides, approximately 15-20 minutes.
  • Reduce heat and sprinkle with breadcrumbs and Parmesan.
  • Toss well to coat and serve.
