Roasted Asparagus with Smoky Gouda Cheese Sauce image

This side dish comes together quickly making it perfect for a weeknight but also fancy enough to serve to guests with a holiday meal. The smoked gouda lends a rich flavor that pairs nicely with the asparagus. The sauce would also be great on roasted broccoli, cauliflower, or Brussels sprouts.

Categories     Chicken Breast

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 12

1/2 cup butter
3/4 cup panko breadcrumbs
1/2 cup finely grated parmesan cheese
1/2 cup finely chopped parsley, divided
3 tablespoons all-purpose flour
6 slices thinly sliced prosciutto, trimmed of fat
18 asparagus spears, trimmed, blanched (see cooking tip below)
6 boneless skinless chicken breast halves, fillets removed, flattened (about 2 pounds)
1 tablespoon all-purpose flour
1 1/4 cups milk
3/4 cup shredded smoked gouda cheese
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400 degrees.
  • In microwave-safe dish or pie plate, microwave butter until melted. In another shallow dish, combine bread crumbs, parmesan cheese and 1/3 cup of the parsley. In shallow dish, place flour. Coat breasts first with flour, then with butter, then with the parmesan breadcrumb mixture, turning to coat both sides. Place one slice prosciutto atop each chicken breast, lay 3 asparagus spears crosswise on short end of each breast; roll up tightly.
  • Place seam side down in a single layer in a 13 x 9-inch glass or metal baking pan, leaving space between rolls. Press remaining crumb mixture onto rolls; drizzle any butter leftover from coating chicken over the rolls (see cooking tip). Bake for 30 min or until chicken is no longer pink inside and the coating is golden brown. Let stand 10 minute.
  • Smoked Gouda Cheese Sauce: Meanwhile, whisk flour into milk. Gradually stir milk mixture into small saucepan. Over medium heat simmer, whisking often, for about 5 min or until slightly thickened. Remove from heat; add smoked gouda cheese and pepper. Stir until cheese melts and sauce is smooth.
  • Cut each chicken breast into 3 slices, fan pieces on dinner plate; drizzle with 2 tbsp gouda cheese sauce. Sprinkle with remaining finely chopped parsley. Serve with additional sauce.
  • Chicken Tip: To flatten chicken breasts: Place each chicken breast between 2 sheets of plastic wrap; pound with rolling pin or mallet to about 1/4 to 1/8-inch (5 to 3 mm) thick.
  • Asparagus Tip: To blanch asparagus, plunge spears into boiling water for 1 min; drain and quickly plunge into ice water or cold running water. Pat dry.

Number Of Ingredients 6

Unsalted butter, for baking dish
1 large bunch asparagus, about 1 1/2 pounds, trimmed to even lengths and blanched for 4 minutes in boiling, salted water

Seasoned bread crumbs, recipe follows
8 thin slices prosciutto
2 tablespoons extra-virgin olive oil

  • Butter a shallow baking dish that is long enough to hold the asparagus. Season the asparagus with salt and pepper, to taste.

ASPARAGUS PARMESAN PASTRY ROLLS

Asparagus Parmesan Pastry Rolls image

Categories     Cheese     Vegetable     Bake     Cocktail Party     Vegetarian     Parmesan     Asparagus     Spring     Phyllo/Puff Pastry Dough     Gourmet

Yield Makes about 96 hors d'oeuvres

Number Of Ingredients 5

1 (17 1/4-ounce) package frozen puff pastry sheets, thawed
2 large egg yolks, lightly beaten with 2 tablespoons cold water
5 ounce finely grated Parmigiano-Reggiano (1 3/4 cups packed)
28 (3/4-inch-thick) asparagus (2 pounds), stalks trimmed to 6-inch lengths and tips reserved if desired
3 tablespoons white or black truffle oil (1 1/2 ounces; optional)

Steps:

  • Unfold pastry sheets and halve each parallel to fold lines. Roll out 1 half (keep remaining 3 halves chilled, covered with plastic wrap) into a 20- by 7-inch rectangle with a floured rolling pin on a well-floured surface. (Pastry will shrink slightly after rolling.) Brush off excess flour from work surface and both sides of pastry, then trim all edges with a sharp knife to make even. Cut crosswise into 6 (6 1/2- by 3-inch) rectangles.
  • Brush rectangles with some egg wash and sprinkle each evenly with 1 packed tablespoon cheese, leaving a 1/2-inch border on long sides. Lay an asparagus stalk along 1 long side, then roll up asparagus in pastry, pressing seam to seal. Make more rolls with remaining pastry, cheese, and asparagus.
  • Arrange rolls, seam sides down, about 1 inch apart on lightly oiled baking sheets and brush top and sides lightly with egg wash. Chill rolls until pastry is firm, at least 15 minutes.
  • Preheat oven to 400°F.
  • Bake rolls in batches in middle of oven until puffed and golden, about 16 minutes.
  • Transfer with a metal spatula to a cutting board and trim about 1/2 inch from ends. Halve each roll crosswise, then, starting about 1/2 inch from either end, cut each section diagonally in half (see photo, opposite). Stand asparagus rolls on end, 2 by 2 on platters, and drizzle each with 1 drop of truffle oil (if using). Serve warm.

SMOKED GOUDA AND PROSCIUTTO CHICKEN

Smoked Gouda and Prosciutto Chicken image

To make the roasted garlic, simply wrap and tighlty seal in foil a few cloves garlic, drizzled with olive oil until they turn golden and develop a nutty aroma. This can be easily done in a toaster oven.

Provided by gailanng

Categories     < 60 Mins

Time 55m

Yield 4 serving(s)

Number Of Ingredients 6

4 (6 ounce) boneless skinless chicken breast halves
salt & freshly ground black pepper
3 -4 ounces smoked gouda cheese, shredded (remove rind before shredding)
8 slices prosciutto ham (6 - 8 ounces)
1 cup heavy cream
2 teaspoons roasted garlic puree (smashed roasted garlic)

Steps:

  • Preheat the oven to 375 degrees.
  • Pound the chicken until it is uniform in thickness and fairly thin (about 1/2 inch). Season to taste with salt and a grinding of black pepper. Place 1/4 cup smoked Gouda on half of each piece of chicken. (For 7- to 8-ounce breast halves, use about 1/3 cup cheese each.) Fold the other half of the chicken, enclosing the cheese completely.
  • Place 2 slices of prosciutto on top of each stuffed breast; tuck the ends of the prosciutto under the chicken. Season with freshly cracked black pepper. Place the bundles in a greased, ovenproof saute pan or stovetop-safe baking pan. Bake until a thermometer inserted into the chicken reads 160 degrees, 15 to 20 minutes. Remove chicken from the pan; keep warm while preparing the sauce.
  • Pour fat from the pan; discard. Place the pan on the stove over high heat; add cream. Cook until cream is reduced by half, whisking constantly. Add roasted-garlic puree, taste and adjust seasoning with salt and pepper if necessary. Spoon over stuffed chicken breasts and serve.
