PARKER TEXAS RANGER COOKIES

My wifes family's roots go deep in texas and there were several texas ranger's in the family. This recipe has been in the family for years and is said to be a favorite among the Rangers.

2 stick(s) sofened butter
1 cup(s) brown sugar
1 cup(s) white sugar
1 teaspoon(s) salt
2 cup(s) flour
1 teaspoon(s) vanilla
2 - eggs
2 teaspoon(s) baking soda
2 cup(s) rolled oats
2 cup(s) corn flakes
1 cup(s) coconut
1 cup(s) chopped pecans
1 cup(s) semi sweet chocolate chips

Steps:

  • cream butter and both sugars together.
  • add vanilla and eggs
  • sift flour, add salt, baking soda, and baking powder.
  • combne dry and creamed ingredients,
  • add rolled oats and coconut.
  • finally, add crushed corn flakes, and pecans and chocolate chips. blend well.
  • grease a cookie sheet. then drop spoonfulls of mixture onto sheet.
  • bake at 350 for 10 to 15 minutes.

Mom makes these and I love them so I thought I'd share them with you. They don't stay around long! They are soft and yummy and kids love them.

Number Of Ingredients 13

1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 large eggs
1 ¾ teaspoons vanilla extract
2 cups all-purpose flour
2 ½ tablespoons all-purpose flour
¼ teaspoon salt
1 ½ teaspoons baking soda
¼ teaspoon baking powder
1 ¾ cups rolled oats
1 ¾ cups corn flake cereal
½ cup flaked coconut

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Beat butter, brown sugar, and white sugar together in a bowl until creamy.
  • Beat in eggs and vanilla extract until smooth.
  • In a separate bowl, whisk together both amounts of flour, salt, baking soda, and baking powder. Mix flour mixture into the liquid ingredients.
  • Gently mix rolled oats, corn flakes, and coconut into the dough until thoroughly combined.
  • Drop the dough by tablespoons onto baking sheets.
  • Bake in the preheated oven until the cookies are light golden brown, 10 to 12 minutes.
  • Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

Number Of Ingredients 12

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups quick-cooking oats
2 cups crisp rice cereal
1 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. In a large bowl, cream shortening and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour, baking soda, baking powder and salt; gradually add to creamed mixture and mix well. Stir in oats, cereal and coconut., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 7-9 minutes. Remove from pans to wire racks to cool.

Number Of Ingredients 12

1 cup brown sugar
1 cup granulated sugar
1 cup butter
2 large eggs
1 teaspoon vanilla extract
2 cups flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups oatmeal
1 cup coconut
2 cups Rice Krispies

Steps:

  • Preheat oven to 375°F.
  • In a small bowl, combine flour, baking powder, baking soda and salt; set aside.
  • In a large bowl, combine butter, brown sugar, sugar, and vanilla extract; beat until creamy.
  • Beat in eggs.
  • Gradually add flour mixture; mix well.
  • Stir in oatmeal, coconut, and Rice Krispie cereal; mix well.
  • Roll into small balls and flatten with hand.
  • Bake on ungreased cookie sheets for 10-12 minutes or till light brown.
