4 (6-ounce) fish fillets
2 cups fresh vegetables
Vinegar, citrus juice, or wine
Fresh herbs or other aromatics
Salt and freshly ground black pepper
2 tablespoons butter, sliced into 4 pieces
En Papillote Variations, recipes follow

Steps:

  • Preheat the oven to 425 degrees F. Mix the seasonings (vinegar, juice, wine, zest, spices, etc.) together in a small bowl; set aside.
  • Fold 4 (20-inch) parchment paper squares in 1/2 lengthwise and cut out a large heart shape. Unfold and arrange on 2 baking sheets. Cook's Note: Aluminum foil can be substituted for parchment paper.
  • Evenly divide the vegetables among the 4 heart-shaped parchment packets. Place fish fillet on top of vegetables and season. Top with a small pat of butter.
  • Fold the top half of the parchment over the fish, overlapping small folds along the edges and sealing. Bake for 10 to 15 minutes, until the parchment paper puffs up.
  • Transfer the parchment packets to plates. Carefully cut the packets open, avoiding the hot steam and serve.
  • En Papillote Variations:
  • Wild Mushrooms en Papillote: Replace the fish fillet with 1 pound mushrooms (equal parts chanterelles, morels, and shiitakes). Add fresh chives, fresh parsley, fresh tarragon, white wine, and increase the butter to 1 tablespoon.
  • Spring Vegetables en Papillote: Replace the fish fillet with 4 cups vegetables like zucchini, eggplant, asparagus, etc. Season the vegetables with thinly sliced garlic, fresh herbs, fresh lemon juice, zest, and salt and pepper.
  • Mediterranean Halibut en Papillote: Top the halibut with pitted kalamata olives, sliced red onion, fresh parsley, fresh lemon juice, and fresh oregano. Add white wine for steaming.

2 splashes of olive oil
1 red onion , halved and cut lengthways into slim wedges
2 spring onions , finely sliced on the diagonal
2 baby fennel bulbs (or 1 small regular one), finely sliced on the diagonal
a nugget of fresh root ginger , peeled and very thinly sliced
1 stalk of lemongrass , finely sliced on the diagonal
2 star anise
a small handful of fresh coriander , roughly chopped
1 garlic clove , finely chopped
600g bag mussels , scrubbed
140g shelled raw tiger prawns , defrosted if frozen
about 100ml/3½ fl oz white wine
about 3-4 tbsp coconut milk
two 30 x 42cm sheets of non-stick baking parchment (approx A3 size) and string

Steps:

  • Preheat the oven to 220C/ gas 7/fan 200C. Heat a splash of oil in a large saucepan, add the onion, spring onions, fennel, ginger, lemongrass, star anise and coriander and toss over a high heat for a few minutes until the vegetables begin to soften.
  • Throw in the garlic and season to taste, then shoot in the mussels and prawns and splash in the wine - just enough to moisten the mussels without drowning them. Cover and cook for 30 seconds -1 minute only, then remove from the heat and check the mussels are open - if they're not, put the pan back on the heat for a few seconds until they are.
  • Scoop the mussels and vegetables out into a bowl, using a slotted spoon (leave the juices in the pan). Pour the coconut milk into the pan (use the same quantity as the liquid already there) and boil for about 4 minutes until reduced to a thickish, syrupy jus. Return the mussels and vegetables to the pan, drizzle with a little oil and shake to mix everything together.
  • Take a sheet of non-stick baking parchment and push it into a deep medium-sized saucepan. Spoon in half the mussels and vegetables and one star anise. Lift the paper out and twist the top to make a money bag. Tie tightly with string then make another bag. 5 Stand the bags in a large baking dish or roasting tin, then give them a quick blast in the oven for 3-4 minutes - just until you can see the crunched tops of the paper start to scorch. Lift the bags out, stand each one on a plate and untie. At the table, open the bags and breathe in the wonderful aroma before tucking in.

2 tablespoons white wine
1 tablespoon grape seed oil
1 lemon, juiced
1 tablespoon freshly minced parsley leaves
1 tablespoon minced garlic
1 tablespoon freshly minced cilantro leaves
1/4 cup grated Parmesan
1 teaspoon curry powder
1/2 pound Israeli couscous, cooked according to package directions
1 1/4 pounds raw shrimp, peeled, deveined and tails removed (21/25 count)
1 teaspoon powdered ginger
2 tablespoons grapeseed oil
2 lemons, juiced
1 tablespoon minced thyme leaves
1 tablespoon minced parsley leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • In a medium bowl, whisk together the wine, grapeseed oil, lemon juice, parsley, garlic, cilantro, cheese and curry. Add the cooked couscous and toss well.
  • Fold and crease the parchment in half and lay the folded sheets on a flat surface. Open and divide the couscous into center of each paper, leaving 3-inch edge clean and free of couscous. Portion the raw shrimp* over the couscous, making sure that the shrimp is not stacked on top of each other, because this would prevent even cooking. In separate bowl, whisk together the ginger, grapeseed oil, lemon juice, thyme and parsley. Drizzle the sauce over the shrimp.
  • To seal the paper, crimp the edges, in circular motion, folding each flap over half of previous fold until completely sealed. Repeat this process with each papillote. Arrange the packets on a cookie sheet and bake for 14 to 16 minutes. Remove the pan from the oven and allow to rest for 2 to 3 minutes. Once rested, carefully remove the packets from the pan, put on serving plates and "open" the papillote with knife or scissors.

For the opener, spread butter and prepared horseradish on thin baguette rounds, and top them with bay shrimp. Boil small red potatoes and green beans to have alongside the seafood.

Yield 2 Servings; Can Be Doubled

1 8-ounce skinless salmon fillet
4 ounces bay scallops
3 tablespoons thinly sliced green onion
4 teaspoons chopped fresh dill or 2 teaspoons dried dillweed
2 tablespoons fresh lemon juice
4 teaspoons butter
Lemon wedges

Steps:

  • Preheat oven to 475°F. Cut two 16x12-inch pieces aluminum foil or parchment. Fold in half to make two 8x12-inch rectangles. Open foil on work surface.
  • Cut salmon fillet crosswise into 1/2-inch-wide strips. Overlap half of salmon strips on half of each foil piece. Sprinkle bay scallops over. Season with salt and pepper. Sprinkle with sliced green onion and chopped dill, then drizzle with lemon juice and dot with butter. Fold second half of foil over fish. Fold in foil edges and pinch tightly to seal. Place packages on baking sheet. Bake until packages puff and seafood is just cooked through, about 8 minutes. Transfer packages to plates. Cut top of packages open with small knife or scissors. Serve with lemon wedges.
