Crispy White Corn Brook Trout with Papaya Sauce and Papaya-Tomatillo Relish image

2 fresh papaya, peeled, seeds removed and finely diced
2 tomatillos, finely diced
1/4 cup finely chopped red onion
2 cloves finely chopped garlic
1 jalapeno, finely chopped
1 tablespoon honey
1/4 cup fresh lime juice
1 tablespoon olive oil
2 tablespoons coarsely chopped cilantro
Salt and freshly ground pepper
3 tablespoons olive oil
1 Spanish onion, coarsely chopped
1 tablespoon coarsely chopped garlic
1/4 cup red wine vinegar
2 ripe papayas, peeled, seeds removed and coarsely chopped
2 tablespoons honey
Salt and freshly ground pepper
2 cups rice flour
Salt and freshly ground pepper
3 large eggs
3 tablespoons milk
2 cups white cornmeal
4 (8 ounce) whole trout, scaled and gutted
6 tablespoons vegetable oil

Steps:

  • Combine all ingredients in a medium bowl and season with salt and pepper to taste.
  • Heat olive oil in a medium saucepan over medium heat. Add the onions and garlic and cook until soft. Add the wine and cook until reduced by half. Add the papaya and cook until soft. Place mixture in a blender and blend until smooth. Season with honey and salt and pepper to taste.
  • Place rice flour in a medium bowl and season with salt and pepper. Mix eggs and milk in a large bowl and season with salt and pepper. Place cornmeal in a medium bowl and season with salt and pepper.
  • Preheat oven to 375 degrees F. Season trout with salt and pepper, dip into rice flour, then egg mixture then cornmeal. Repeat with remaining trout. Heat 3 tablespoons of the oil in a large skillet until almost smoking. Saute 2 trout at a time until golden brown on both sides. Transfer to a large baking sheet and repeat with the remaining 2 trout. Place in the oven and bake for 5 to 6 minutes until just cooked through.

Steps:

  • Sweet papayas and tart tomatillos combine in this unique fruit relish. Serve hot or cold with lamb, pork, hamburgers, stews, curries. Heat oil in a wide frying pan over medium heat. Add onion, cinnamon and cayenne pepper. Cook, stirring often, until onion is soft - about 7 min. Add tomatillos, papaya, vinegar, sugar and currants. Bring to a boil over high heat; then boil uncovered stirring occasionally, until liquid has evaporated. Pack into hot half-pint containers or into a refrigerator container. Cover tightly. . 1/4 cup fresh squeezed lime juice
2 tablespoons canola oil
3 heaping tablespoons ancho chile powder
2 cloves garlic, smashed to a paste
Salt and freshly ground black pepper
1 1/2 pounds red snapper fillets
6-inch flour tortillas
Shredded red cabbage
Cilantro leaves
Avocado-Papaya Relish, recipe follows
Tomatillo-Chipotle Salsa, recipe follows
Sour Cream Salsa, recipe follows
Lime wedges
2 ripe Hass avocados, peeled, pitted and diced
1 ripe papaya, peeled, seeded and diced
1/2 small red onion, finely diced
1 serrano or jalapeno chile, finely diced (you can use more chiles if you want it spicier)
2 limes, juiced
2 tablespoons canola oil
2 teaspoons honey
Salt and freshly ground black pepper
1/4 cup finely chopped fresh cilantro leaves
3 tablespoons canola oil, plus 1/2 cup
8 tomatillos, washed and halved
1 large red onion, peeled and quartered
4 cloves garlic, peeled
Salt and freshly ground black pepper
2 to 3 teaspoons chipotle in adobo puree
1/4 cup fresh lime juice
1 cup spinach leaves, blanched
Honey
2 ripe beefsteak tomatoes, seeded and diced
1/2 small red onion, finely diced
2 cloves garlic, finely diced
1 serrano chile, finely diced
1 tablespoon red wine vinegar
2 tablespoons canola oil
2 tablespoons sour cream or creme fraiche
Salt and freshly ground black pepper
Chopped cilantro leaves

Steps:

  • Whisk together the juices, oil, ancho powder, garlic and salt and pepper, to taste, in a small bowl and let stand 10 minutes at room temperature.
  • Preheat grill to medium.
  • Brush some of the wet rub on each side of the fillets and season them with salt and pepper. Grill until golden brown and slightly charred on both sides and just cooked through, about 4 minutes per side. Remove from the grill, let rest 5 minutes and flake into large pieces with a fork. Serve wrapped in the tortillas with the cabbage, cilantro, Relish and Salsas. Garnish plates with lime wedges.
  • Combine avocados, papaya, onion, chile, lime juice, oil, honey and salt and pepper, to taste, in a medium serving bowl. Fold in the cilantro until combined and serve at room temperature.
  • Preheat oven to 375 degrees F. In a large bowl, add 3 tablespoons oil, the tomatillos, onion, and garlic and season with salt and pepper. Toss until the tomatillos are well coated. Place in a roasting pan and roast, in the preheated oven, until soft and golden brown, about 20 to 25 minutes.
  • Place the tomatillos, onions, garlic, chipotle, lime juice, and spinach in a food processor and blend until smooth. With the motor running, slowly add the remaining 1/2 cup olive oil and season with honey and salt and pepper, to taste. Remove to a serving bowl and serve at room temperature.
  • In a medium bowl combine the tomatoes, onion, garlic, and chile. In a separate bowl whisk together the vinegar, canola oil, sour cream, and salt and pepper, to taste. Toss the tomato mixture with the dressing. Place in a serving bowl and top with chopped cilantro.;

1/2 lb tomatillos, husks removed, rinsed
1 small red onion, cut into 1/4-inch slices
1 jalapeño chile, halved, seeded
Canola oil
2 cloves garlic, finely chopped
1/4 cup coarsely chopped fresh cilantro
1 tablespoon fresh lime juice
1 teaspoon cider vinegar
1 teaspoon olive oil
1 teaspoon packed brown sugar
1/2 teaspoon salt

Steps:

  • Heat oven to 400°F. In 15x10-inch pan, place tomatillos, onion and jalapeño. Brush with canola oil.
  • Roast uncovered 25 to 30 minutes or until vegetables are lightly browned and softened.
  • In food processor or blender, place tomatillos, onion, jalapeño and remaining ingredients. Cover; process, using on-and-off pulses, until mixture is chunky.
  • Transfer relish to serving bowl or storage container. Serve at room temperature or chilled.

1 pound tomatillos, husks removed, quartered
1 pound plum tomatoes, quartered
2 medium green peppers, seeded and quartered
1 medium sweet red pepper, seeded and quartered
4 jalapeno peppers, seeded
1 large onion, quartered
1 whole garlic bulb, separated into cloves
1/4 cup fresh cilantro leaves
1/4 cup packed fresh parsley sprigs
1/2 cup olive oil
1/2 cup cider vinegar
1 can (2-1/4 ounces) sliced ripe olives, drained
4 teaspoons canning salt
1-1/2 teaspoons pepper
1/4 teaspoon crushed red pepper flakes
4 tablespoons bottled lemon juice

Steps:

  • In a food processor, process tomatillos, tomatoes, peppers, onion, garlic, cilantro and parsley in batches until chopped. , Transfer to a large stockpot; stir in oil, vinegar, olives, salt, pepper and pepper flakes. Bring to a boil. Reduce heat; cover and simmer 20 minutes or until vegetables are tender. , Add lemon juice to four hot pint jars, 1 tablespoon in each. Ladle hot mixture into jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 20 minutes. Remove jars and cool. Serve with grilled meats or your favorite snack chips.

4 cups grated fresh green papaya
¼ cup salt
1 carrot, peeled and sliced
1 red bell pepper, sliced into long strips
1 (2 inch) piece fresh ginger root, peeled and sliced
2 green chile peppers, sliced into thin rings
1 (1.5 ounce) box raisins
1 cup white vinegar
1 cup water
1 cup white sugar
1 teaspoon salt

Steps:

  • Toss the grated papaya with 1/4 cup salt together in a large bowl; allow to sit for 1 hour. Drain the liquid from the papaya and rinse thoroughly. Place the papaya in the middle of a large piece of cheesecloth and squeeze to drain as much liquid from the papaya as possible.
  • Combine the papaya, carrot, red bell pepper, ginger, green chile peppers, and raisins together in a clean large bowl; mix. Transfer the mixture to clean, dry jars with lids.
  • Stir the vinegar, water, sugar and 1 teaspoon salt together in a small saucepan; bring to a boil for 5 minutes. Pour the vinegar mixture into the jars, making sure the vegetables are completely submerged in liquid. Allow the vegetables to marinate in the liquid at least 1 day before using. Store in refrigerator between uses.

TOMATILLO RELISH/SALSA



Tomatillo Relish/Salsa image

This recipe is my own modification of the one made famous by Linda McDaniel. Her recipe, for green tomato relish, is fantastic. But when the time came for me to make it, green tomatoes were not available. I did, however, have tomatillos. The flavor is decidedly different but I've come to love this sweet-n-tangy relish even more. I always keep a jar in the fridge but it never lasts too long. I have found it goes really well with ham (on English Muffins) or even just served with eggs (sunny-side up or poached) for an unusual but bright-tasting breakfast. This recipe makes about 5-1/2 Cups of relish and was configured to be served in 2-Tablespoon portions.

10 tomatillos
1 medium red bell pepper
1 medium green bell pepper
2 medium vidalia onions
1/2 tablespoon kosher salt
1 1/2 tablespoons yellow mustard seeds
1 1/2 tablespoons celery seeds
2 1/2 cups granulated sugar
1 cup apple cider vinegar

Steps:

  • Peel the papery wrapping off of the tomatillos, remove the seeds and inner ribs from the bell peppers, and peel the onions.
  • Quarter the tomatillos and set aside. Roughly chop the onions and bell peppers and set aside.
  • In your food processor, finely puree the tomatillos, peppers, and onions together. I usually have to do this in two batches. On high speed, this takes me about 3 minutes per batch; when done it should resemble a fine-grain blend.
  • Line a strainer with cheese cloth and drain the minced vegetables for at least 1 hour. I have drained this over night, before, and had no problems.
  • After the minced vegetables have drained, combine them with the remaining ingredients in a non-reactive pot.
  • Place the pot over high heat on your stove and bring to a boil.
  • Stirring, to prevent scorching, lower the heat to a simmer and cook for another 5 minutes.
  • Remove to mason jars and refrigerate. Once it is chilled, serve in dollops with sausages, chips, eggs, ham, or anything else that needs a sweet-n-tangy boost.
