Number Of Ingredients 7

2 pounds papaya (2 preferably pink-fleshed strawberry variety), peeled, seeded, and cut into 1/4-inch dice
1 1/2 cups diced (1/4 inch) fresh pineapple (from 1/2 small pineapple)
2 scallions, finely chopped
1 small garlic clove, minced
2 tablespoons fresh lime juice
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Stir together all ingredients.

SMOKEY FILET WITH SERRANO-PAPAYA SALSA AND SERRANO-MINT-CILANTRO CHUTNEY



Smokey Filet with Serrano-Papaya Salsa and Serrano-Mint-Cilantro Chutney image

1 piece filet mignon
1/2 teaspoon ground allspice
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper, to taste

Extra-virgin olive oil, for drizzling
1 cup papaya, peeled, pitted and diced
1 serrano pepper, minced
1 avocado, halved, pitted, peeled and diced
Juice of 1 lime
2 tablespoons chopped fresh cilantro leaves, plus more for garnish
1/2 cup pepitas, toasted
Fresh mint leaves, chopped, for garnish
Serrano-Mint-Cilantro Chutney, recipe follows
2 bunches fresh cilantro
5 sprigs fresh mint
2 Serrano peppers
2 tablespoons Greek yogurt or creme fraiche
Extra-virgin olive oil, enough for desired consistency
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Rub the beef filet with allspice, cumin, salt, pepper and a drizzle of olive oil.
  • Preheat the oven to 375 degrees F.
  • In a large bowl, combine the papaya, serrano, avocado, lime juice, and cilantro. Season the salsa with salt, and pepper. Set aside.
  • Heat a drizzle of olive oil in an oven-proof saute pan over medium-high heat. Sear the filet on both sides, about 1 minute on each side. Place the pan in the oven and cook about 15 minutes, or until a meat thermometer registers 140 to 145 degrees F for medium. Remove the beef from the oven and allow the meat to rest 5 minutes before slicing.
  • To serve, toss the pepitas with papaya salsa. Spoon a mound on your plate. Place a few strips on the steak and top, and drizzle with chutney and finish with a sprinkle of fresh herbs.
  • In a blender or food processor, puree the cilantro, fresh mint, serrano peppers, and yogurt together, streaming in some extra-virgin olive oil just until the mixture is thickened. Season the mixture with salt, and pepper. Chill the chutney in the refrigerator until ready to use.

1 bunch scallions, including a few inches of the greens, finely chopped
1 bunch cilantro, large stems removed, chopped (about 1 cup)
1 jalapeno chile, seeded and chopped
1 teaspoon roasted ground cumin
Pinch salt
1/3 cup sunflower seed oil
Water to thin, about 1/4 cup

Steps:

  • For a rustic salsa, chop everything finely. Combine the ingredients, stir in the oil and add a little water to thin. Or, for a finer texture, puree everything finely in a food processor.

1 ripe papaya, halved seeded and peeled
1/2 habanero pepper, seeded and minced
1/2 teaspoon sugar
2 tablespoons fresh lemon juice
1 tablespoon olive oil
1 yellow tomatoes, seeded and finely diced
1 red bell pepper, roasted,peeled,stemmed,seeded and finely diced
1/2 cup coarsely chopped fresh cilantro
1 tablespoon minced of fresh mint
salt

Steps:

  • Dice half of the papaya and set it aside.
  • Cut up the other half, place in a blender and add the habanero chile, sugar, lemon juice, and olive oil.
  • Puree and add the reserved diced papaya, tomato, bell pepper, cilantro and mint.
  • Mix well and season to taste with salt.
  • Let stand for 15 minutes to allow flavors to blend before serving.

PAPAYA AND RED ONION SALSA

The best substitute for papaya here, believe it or not, is watermelon. Cantaloupe isn't bad either. Serve this with any grilled meat, poultry, or fish.

Yield makes about 2 cups

Number Of Ingredients 8

2 cups papaya in 1/2-inch chunks
1/2 cup minced red onion
1/2 cup minced red, yellow, or green bell pepper or a combination
1 tablespoon extra virgin olive oil
2 tablespoons fresh lime juice
Salt and black pepper to taste
1 jalapeño or other fresh chile, stemmed, seeded, and minced, or hot red pepper flakes to taste
1/4 cup or more chopped fresh cilantro leaves

Steps:

  • Combine all the ingredients. Let sit for about 5 minutes, then taste and adjust the seasoning.
  • Serve immediately or refrigerate for up to a couple of hours. (Bring back to room temperature before serving.)

1/2 firm-ripe papaya
1/4 red onion
1 fresh jalapeño chile
1 tablespoon finely chopped fresh cilantro
2 teaspoons fresh lime juice
1 teaspoon pure maple syrup

Steps:

  • Discard papaya seeds. Peel papaya and chop enough to measure 1/2 cup. Mince enough onion to measure 2 tablespoons and, wearing rubber gloves, mince enough jalapeño (with seeds) to measure 1/2 tablespoon. In a bowl stir together papaya, onion, jalapeño, and remaining ingredients and season with salt. Salsa may be made 1 day ahead and chilled, covered.

CHUNKY AVOCADO-PAPAYA SALSA



Chunky Avocado-Papaya Salsa image

This is based on a recipe in Kim Sunée's wonderful new book, "A Mouthful of Stars" (Andrews McMeel). Her recipe is more of a salad, a fusion of Thai and Mexican flavors. I loved the idea of combining avocado and papaya, two subtle, creamy fruits, with crunchy, bright-tasting Asian pears and spicy chiles. The first time I saw the recipe I wanted to test it right away, but I didn't have Asian pears. So I used an apple, and loved it. It's the sweet, crunchy fruit that does the trick, and apples and Asian pears both work. There are onions in the original recipe but I've made them optional.

2 medium-size ripe Hass avocados, halved, pitted and cut in small dice
1 small ripe papaya, halved, seeded, peeled and cut in small dice (about 2 cups dice)
1 tart apple, unpeeled, or Asian pear, peeled if desired, cored and cut in small dice
1/4 cup freshly squeezed lime juice
1 fresh red or green serrano chile, seeded and thinly sliced or minced, or more to taste
1/4 cup chopped cilantro
2 tablespoons chopped fresh mint
1/2 small red onion, diced small, soaked for 5 minutes in water to cover, drained and rinsed (optional)
Salt to taste

Steps:

  • Combine diced avocados and papaya in a medium bowl. Add remaining ingredients and toss together. Season to taste with salt. Serve as a salad or a salsa.

1 papaya - peeled, seeded and diced
1 large red bell pepper, seeded and diced
1 avocado - peeled, pitted and diced
½ sweet onion, peeled and diced

2 tablespoons balsamic vinegar
salt and pepper to taste

Steps:

  • In a medium bowl, mix mango, papaya, red bell pepper, avocado, sweet onion, cilantro, and balsamic vinegar. Season with salt and pepper. Cover, and chill in the refrigerator at least 30 minutes before serving.
