Steps:
- Heat the oil in a large saute pan. Add the bread and salt; cook over low to medium heat, tossing frequently, for 10 minutes, or until nicely browned. Add more oil as needed.
- For the vinaigrette, whisk all the ingredients together.
- In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil, and capers. Add the bread cubes and toss with the vinaigrette. Season liberally with salt and pepper. Serve, or allow the salad to sit for about half an hour for the flavors to blend.

- In a large skillet, heat 2 tablespoons oil over medium heat. Add half of the bread cubes; cook and stir until toasted, about 8 minutes. Remove from pan. Repeat with remaining oil and bread cubes., Combine bread cubes, tomatoes, cucumber, peppers, onion, basil, cheese, salt and pepper. Toss with dressing.

PANZANELLA SALAD (FROM NORDSTROM'S ENTERTAINING AT HOME)
This is a great salad to have in the summer when my neighbor's gardens are in full force. Coming from a long line of gardeners my husband and I unfortunately lack green thumbs but we certainly know what to do with the abundance of produce that comes our way! Don't be alarmed by the large ingredient list, it's mostly pantry items. I usually just need to go and pick up some baby mozzarella balls and a loaf of ciabatta and I'm ready to go.

Steps:
- Preheat oven to 350ºF to make croutons.
- Cut the bread into 3/4 inch cubes and drizzle with olive oil, salt and pepper. Bake for about 15 minutes until lightly browned. They should be crunchy yet soft. Allow to cool while assembling salad.
- Cut cucumber, red onion, bell peppers, and tomatoes into 3/4 inch pieces. Place in large bowl.
- Drain and halve mozzarella balls and add to vegetables.
- Add salt, pepper, olive oil, balsamic vinegar, lemon juice, and garlic powder into the large bowl. Mix well.
- Add bread cubes and mix again. Serve immediately.

PANZANELLA SALAD

- Roast the peppers on the stovetop burners, turning with tongs to char evenly on all sides. When thoroughly blackened, close up in a paper bag so skins will steam loose. When cool enough to handle, rub the skin off the peppers. Cut out and discard the stems, seeds, and white veins. Chop into 1/4-inch dice and set aside. Preheat oven to 350 degrees. Cut the bread into 1/4-inch dice. Toss the bread cubes with the olive oil. Toast in the preheated oven for 5 minutes, or golden brown. Set aside.' Cut the tomatoes, cucumber, and red onion into 1/4-inch dice. In a large bowl, combine with the diced peppers, capers, and anchovies if desired. For the vinaigrette, start by mixing the Dijon mustard and chianti vinegar together and then slowly ass the olive oil until well emulsified. Add the chopped basil, and season with salt and pepper. Add all the vinaigrette ingredients to the bowl and toss well to combine. Just before serving, add the croutons to the salad, toss well, and serve immediately.
MEXICAN PANZANELLA SALAD (CORNBREAD SALAD)
This beautiful layered salad is the perfect dish to take to the park for a picnic; the taste improves when made in advance. Cooking time includes chill time for salad.

- Dressing:.
- Add one tablespoon vinegar to milk and allow to set for 5 minutes.
- Whisk together all the dressing ingredients in a bowl until smooth.
- Note: Dressing can be made up to 2 days in advance and stored, covered in the refrigerator.
- Assemble Salad:.
- In small bowl mix chopped avocados and lime juice; set aside.
- In a small bowl, combine the tomatoes, onions, peppers, and 2 tablespoons cilantro; set aside.
- In large serving bowl spread 1/2 of corn bread over the bottom.
- Top cornbread with lettuce, then 1/2 of black beans.
- Spread 1/2 of tomato mixture over beans.
- Top with 1/2 of corn, 1/2 of cheese and 1/2 of avocado/lime mixture.
- Spoon 1/2 of dressing on top.
- Sprinkle 1/2 of bacon crumbles and 2 tablespoons cilantro on top.
- Repeat layer process, topping with bacon and cilantro.
- Cover and chill for several hours before serving.
