This delicious baked fish recipe with a crunchy-golden lemon pepper-seasoned crumb topping goes together extra quick and easy with defrosted fish fillets such as flounder or tilapia and makes a perfect weekday meal served with rice and a green vegetable. Simply top thawed fillets with a blend of Panko bread crumbs and melted butter seasoned with lemon pepper and bake for 12 to 15 minutes. Panko breadcrumbs are coarser than traditional breadcrumbs and add a delicate crunchy texture to this recipe. 2 (10 oz.) packages frozen flounder or tilapia fish fillets (8 fillets), thawed
- melted butter or olive oil, as needed to coat fillets
1 1/4 cups panko Japanese-style panko bread crumbs
1 tablespoon lemon pepper
1 tablespoon minced fresh parsley (optional)
1/4 teaspoon paprika
1/2 cup melted butter

Steps:

  • 1 Preheat oven to 375°F. 2 Drain thawed fillets and pat dry; arrange on baking pan sprayed lightly with cooking oil. 3 Brush fish fillets lightly with melted butter or olive oil. 4 In small bowl, combine panko, lemon pepper, minced parsley and melted butter and stir until completely blended; spoon evenly over the top side of each fillet. 5 Bake uncovered for 12 to 15 minutes, or until fish flakes easily and topping is light golden brown.

I like to cut down on calories and I like the taste of fried Fish so I started baking my fish in a Panko and selfrising mixture and it just great and easy to.

4 large slices of swai or any fish your like cut in halve
1 Tbsp lemon pepper
1 tsp garlic powder
1 1/2 c panko bread crumbs
1/2 c self rising flour
1/2 c olive oil, extra virgin

Steps:

  • 1. Peheat oven to 350degree. One cookie sheet pan, sprayed with nonstick cooking.
  • 2. If large pieces of fish is used cut in half. Place pieces in a large mixing bowl. Add half the olive oil on top of the fish and sprinkle with the seasonings. Make sure that the fish is covered well with the olive oil and seasonings.
  • 3. Use tongs for this if you like. Put the flour and Panko in a large plastic bag and shake mixture together. Put 1 or 2 pieces of fish in the bag and shake well to coat each piece, shake off excess if desired.
  • 4. Place pieces of fish not touching on sprayed sheet pan. To the oil that is left in the bowl add the other half of the oil to it and add 1-tablespoon of that mixture to each piece of fish. Bake for 20to25-minutes or until slightly browned.

¼ cup butter, melted
⅔ cup grated Parmesan cheese
1 cup panko bread crumbs
½ teaspoon salt
ground black pepper to taste
1 pinch dried thyme

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large, shallow baking dish.
  • Arrange flounder fillets on prepared baking dish and brush with 1 tablespoon butter. Combine remaining 3 tablespoons butter with bread crumbs, Parmesan cheese, salt, pepper, and thyme in a bowl; sprinkle over flounder.
  • Bake in preheated oven until fish flakes easily with a fork, 15 to 20 minutes. Carefully transfer fillets to a plate with a spatula.

This fish will just melt in your mouth! I like to serve over a quinoa-kale salad. Also, please don't use regular bread crumbs as they are too dense.

½ cup panko bread crumbs
1 ½ tablespoons butter, melted
¼ cup chicken stock, or as needed
2 (8 ounce) fillets halibut
1 teaspoon lemon juice
salt and ground black pepper to taste
1 tablespoon Dijon mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir panko bread crumbs and melted butter together in a bowl until evenly coated.
  • Pour enough chicken stock into an oven-proof skillet to cover bottom; arrange halibut fillets in skillet. Drizzle lemon juice over fillets; season with salt and pepper. Spread a think layer of Dijon mustard over each fillet; press bread crumb mixture over mustard layer.
  • Place skillet in the preheated oven and cook until fillets flake easily with a fork and topping is browned, about 20 minutes.

2 lbs fish fillets, like salmon, can use halibut
3 tablespoons prepared pesto sauce, to coat fish
1 cup panko breadcrumbs, to coat fish

Steps:

  • Wash and dry fish fillets.
  • Coat fish with pesto.
  • Now coat fish with panko, pressing to make it stick.
  • Place in a baking dish and bake in 350 degrees F. at 7 minutes per inch of fish or until done.

  • Beat egg and egg white into bowl.
  • Place panko in bowl with seasonings.
