1 (.25-ounce) package active dry yeast
3/4 cup warm water (110 to 115°F)
1/4 cup fresh basil, minced (substitute with 2 tablespoons dried)
1/4 cup parmesan cheese, grated
3 tablespoons tomato paste
1 tablespoon sugar
1 tablespoon olive oil
1 teaspoon salt
1/8 to 1/4 teaspoon crushed red pepper flakes, to taste
2 3/4 cups bread flour

Steps:

  • In a large mixing bowl, dissolve yeast in water. Stir in basil, Parmesan cheese, tomato paste, sugar, oil, salt, pepper flakes and 2 cups flour. Stir in enough remaining flour to form a stiff dough. Turn onto a floured surface; knead until smooth and elastic, about 3 to 5 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down; knead for 1 minute. Shape into a round loaf. Place on a greased baking sheet. Cover and let rise until doubled, about 1 hour. With a sharp knife, cut a large "X" in top of loaf. Bake at 375°F for 35 to 40 minutes or until golden brown. Remove from pan to a wire rack to cool.

4 1/8 cups bread flour
2 1/4 teaspoons fast-action yeast
1 1/2 teaspoons salt
¼ cup olive oil
1 tablespoon minced garlic
2 ½ teaspoons tomato powder
2 teaspoons dried basil leaves
1/3 cup sun dried tomatoes (drained and finely chopped)
1 cup water
1 tablespoon brown sugar
1 tablespoon granulated sugar
1 ½ teaspoons all-purpose flour
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 tablespoon olive oil
1 ½ teaspoons honey
1 ½ teaspoons water

Steps:

  • Heat two teaspoons of olive oil in a small frying pan until shimmering, then add the minced garlic and cook until golden brown. Set aside.
  • Sift the bread flour into a mixing bowl and add the salt and yeast on opposite sides of the bowl, stirring each one in with your finger.
  • Add the olive oil, sauteed garlic, basil, tomato powder, and sun dried tomatoes and stir with the paddle attachment on low speed to combine. Gradually trickle in the water and mix to form a slightly sticky dough.
  • Switch attachments to the dough hook and knead for 5-7 minutes, or until it passes the windowpane test. This means that a piece of dough can be stretched until it's translucent in places without tearing.
  • Shape the dough into a ball and place in a greased bowl. Cover and put in a warm place until it has at least doubled in size, about 1 hour.
  • Punch down the dough and divide it into 2 equal pieces. Roll each piece into a log and place in a parchment-lined loaf pan.
  • Cover and let the loaf rise until it is springy to the touch, about 45 minutes.
  • Combine all the ingredients in a small bowl until it has the consistency of thick paint, then set aside.
  • Bake the bread at 400°F for 25 minutes. Remove the loaf from the oven and quickly brush on the topping, then bake for another 5 minutes, or until the loaf has an internal temperature of 200°F on a meat thermometer.
  • Transfer the loaf to a wire rack to cool completely (at least 1 hour) before slicing and serving.

This breads' chewy crust pairs well with a steaming mug of soup. The pretty color and robust flavor are a great pairing with chicken or turkey cold cuts or a summer tomato sandwich. I use this basic recipe in my bread machine using the dough cycle; following my bread machines instructions. I then bake it in the oven. I also omit the red pepper flakes and, at times, omit the Parmesan cheese and replace it with an additional 1/4 cup of flour. Be careful and add additional flour a little at a time depending on the humidity in your kitchen.

1/2 cup fresh basil leaf, packed
3/4 cup extra virgin olive oil
salt & freshly ground black pepper, to taste
1 teaspoon crushed red pepper flakes
3 large garlic cloves, peeled and thinly sliced
1 teaspoon dried oregano
2 (28 ounce) cans whole canned tomatoes or 12 roma tomatoes, peeled
1 quart water or 1 quart vegetable stock
1/4 cup dry red wine (Burgundy, Merlot, Pinot Grigio or Shiraz are all acceptable)
1 loaf country bread, torn into bite-size pieces

Steps:

  • Mash the basil well with 1/2 cup of the oil and season with salt and pepper; set aside.
  • Heat the remaining 1/4 cup oil in a large saucepan over medium-low heat.
  • Cook the garlic, red pepper and oregano just until the garlic begins to sizzle.
  • Crush the tomatoes with your hands over the saucepan, making sure to include all of the juice.
  • Add the water or stock and red wine.
  • Bring to a boil.
  • Reduce heat and simmer for 10 to 15 minutes.
  • Stir in the bread and remove from heat.
  • Serve immediately, drizzling the soup generously with the mashed basil oil.
