Strawberry Pancakes topped with a luscious cream cheese glaze and fresh cut strawberries

2 cups Bisquick
2 large eggs
1 cup milk
2 tbsp light brown sugar
1 cup strawberries (diced)
4 ounces cream cheese (softened)
1 cup powdered sugar
1 tsp vanilla
4 tbsp milk

Steps:

  • Add the Bisquick, eggs, milk, brown sugar into a large mixing bowl. Stir until combined. Add the strawberries and fold into the batter.
  • Cook pancakes on a skillet over low heat

PANCAKES
1 1/2 cup(s) all purpose flour
3 1/2 teaspoon(s) baking powder
1 teaspoon(s) salt
3 tablespoon(s) sugar
1 1/4 cup(s) milk
1 - egg
3 tablespoon(s) butter, melted
1 teaspoon(s) vanilla extract
SWEET CREAM CHEESE
1/4 cup(s) confectioners' sugar
1 teaspoon(s) vanilla
4 ounce(s) cream cheese
STRAWBERRY SYRUP
1/4 cup(s) sugar
2 tablespoon(s) butter, melted
8 slice(s) strawberries, fresh

Steps:

  • PANCAKES: Mix dry ingredients in a bowl and mix wet ingredients in another bowl.
  • Make a well in the dry ingredients, pour in the wet and stir until it is well mixed
  • Stir until completely smooth
  • Put approximately a tablespoon of butter into a non stick pan. Ladle in to the pan a nice big pancake.
  • Let cook a few minutes till you see bubbles that do not close up, then flip.
  • SWEET CREAM CHEESE: Mix powder sugar, vanilla and cream well, until blended and set aside.
  • SYRUP: put all in sauce or saute pan, let cook until sugar is melted and no longer grainy and slightly syrupy looking. That's it you have syrup!
  • Then Spread the Sweet Cream Cheese over the pancake then top with Strawberry Syrup.

4 cups pancake mix
4 eggs
2 cups milk
6 oz cream cheese, cubed
1 cup strawberry, sliced

Steps:

  • Preheat oven to 425˚F (220˚C).
  • Pour pancake mix, milk, and eggs into a bowl and mix just until combined.
  • Pour batter onto a parchment paper-lined baking sheet and spread to the edges.
  • Place cream cheese on top of the batter, followed by the strawberry slices.
  • Bake for 15 minutes, or until golden brown.
  • Cut into squares and serve immediately, or freeze up to 1 month. To reheat, place on a microwave-safe plate and heat for 20 seconds per pancake on the plate.
  • Enjoy!

6 ounces cream cheese, softened
1 tablespoon sugar
1/2 cup crushed strawberries
PANCAKES:
2 cups all-purpose flour
1/4 cup sugar
4 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, room temperature
1-1/2 cups 2% milk
1 cup sour cream
1/3 cup butter, melted
1 cup chopped fresh strawberries
SAUCE:
3 cups crushed strawberries
1/4 cup seedless strawberry jam
1/4 cup water

Steps:

  • In a small bowl, beat cream cheese and sugar until smooth; stir in strawberries. Chill until serving., In a large bowl, combine the flour, sugar, baking powder and salt. Combine the eggs, milk, sour cream and butter. Stir into dry ingredients just until moistened. Fold in strawberries., Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until the second side is golden brown., For sauce, in a small saucepan, combine the strawberries, jam and water; heat through. Spread cream cheese mixture over pancakes; top with sauce. (Refrigerate remaining sauce for another use.)
