These Turkey Cutlets with Parmesan Crust, pan-fried or air-fried, are a quick weeknight dish the whole family will love!

4 turkey breast cutlets (4 oz each)
2 large egg whites (beaten)
1/3 cup seasoned breadcrumbs
2 tbsp Parmesan cheese
kosher salt and fresh pepper
1 tbsp butter
1 tsp olive oil
lemon wedges for serving

Steps:

  • Season cutlets with salt and pepper.
  • Combine bread crumbs and Parmesan cheese in a medium bowl.
  • In another bowl beat egg whites.
  • Dip turkey cutlets in egg whites, then breadcrumb mixture, shaking off excess.
  • Heat a large nonstick frying pan on medium heat. Add the butter and olive oil.
  • When butter melts, add the cutlets and cook about 6 minutes on each side, until golden brown and cooked through. Serve with lemon wedges.

1 turkey (12 to 14 pounds)
1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 cup grated orange zest
1/2 teaspoon ground ginger
1 large navel orange, quartered
1 large apple, quartered
1 small onion, quartered
1 cup unsweetened apple juice
1/2 cup orange juice

Steps:

  • Preheat oven to 325°. Place turkey on a rack in a shallow roasting pan, breast side up. In a small bowl, combine butter, brown sugar, orange zest and ginger. With fingers, carefully loosen skin from turkey breast; rub some of the butter mixture under skin. Secure skin to underside of breast with toothpicks., Rub remaining butter mixture inside turkey cavity; fill with orange, apple and onion. Tuck wings under turkey; tie drumsticks together. Carefully pour juices over turkey., Bake, uncovered, 3 to 3-3/4 hours or until a thermometer inserted in thickest part of thigh reads 170°-175°, basting occasionally with pan drippings. Cover loosely with foil if turkey browns too quickly., Cover and let stand 20 minutes before carving. Discard fruit and onion from cavity. Skim fat and thicken pan juices if desired.

6 turkey cutlets
1/4 cup olive oil
salt
black pepper
1 head red cabbage, thinly sliced
2 onions, thinly sliced
4 tablespoons butter
4 tablespoons sugar
2 cups red wine
1/2 cup red wine vinegar
1/4 teaspoon coriander seed
1/2 teaspoon freshly grated nutmeg
2 cinnamon sticks
1/2 teaspoon dried thyme
juice of one lemon
1/2 teaspoon salt
black pepper
3 oranges

Steps:

  • Melt 2 tbsps of butter in a large heavy pot over a high heat.
  • Add the sliced onions and sugar and stir well. Reduce the heat slightly and cook for about 15 minutes until the onion is dark brown.
  • Add the red cabbage and cook for 5 minutes. Then add the vinegar and cook for another 5 minutes.
  • Add the red wine, coriander seeds, nutmeg, cinnamon sticks, thyme and lemon juice. Season with salt and pepper. When the mixture starts to boil, put on the lid and transfer the pot to a 350F oven.
  • Bake for about an hour, stirring at least twice.
  • Cut off the peel from the oranges and slice into rounds.
  • When the cabbage is almost done, season the turkey cutlets with salt and pepper and generously rub with olive oil.
  • Heat a grill pan until just smoking and add the turkey cutlets cooking for about 4 minutes on each side. Depending on the size of your pan, you may need to cook in 2 batches.
  • Cover the cutlets with foil to rest.
  • Melt the remaining 2 tbsps of butter in a non-stick pan over a medium high heat.
  • Add the orange slices and cook until golden. This will take just a few minutes.
  • Serve and enjoy!

Pinch of cayenne pepper
1 1/4 teaspoons ground coriander
Kosher salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil
3 firm plums, cut into 1-inch wedges
2 teaspoons fresh lemon juice
8 cups baby arugula

Steps:

  • Preheat a grill to medium high. One at a time, place the cutlets between 2 sheets of plastic wrap and pound with a meat mallet or heavy skillet until 1/4 inch thick. Transfer the cutlets to a bowl and toss with the cayenne, 1 teaspoon coriander, 1 teaspoon salt, 1/4 teaspoon black pepper and 1 tablespoon olive oil. Set aside.
  • Toss the plums with the remaining 1/4 teaspoon coriander, a pinch of salt and 1 tablespoon olive oil. Grill the plums, turning once, until just starting to soften, 3 to 4 minutes. Set aside.
  • Grill the turkey until cooked through, about 2 minutes per side.
  • Finely chop a few of the grilled plum wedges; put in a large bowl. Stir in the lemon juice, the remaining 3 tablespoons olive oil and 1/4 teaspoon each salt and black pepper. Add the arugula and toss. Top the turkey with the salad and the remaining grilled plums.

1 (12 pound) turkey, see Cook's Note*
2 medium onions, quartered; plus 2 cups, peeled and chopped (about 2 more onions)
4 celery stalks, chopped (about 2 cups)
4 carrots, peeled and chopped (about 2 cups)
1 bunch fresh sage
1 bunch fresh rosemary
1 bunch fresh thyme
1 bunch fresh savory leaves
Kosher salt and freshly ground black pepper
1/2 cup unsalted butter, softened
1/2 cup water
1 cup heavy cream
3 tablespoons all-purpose flour

Steps:

  • Remove the center oven rack and preheat oven to 325 degrees F.
  • Remove the giblets and neck from the turkey and rinse. Reserve for the dressing.
  • Place chopped onions, celery, and carrots in the bottom of the roasting pan. Pick a few herbs off the stalks and add to the vegetables. Set aside.
  • Pat dry the turkey with paper towels. Season the cavity with kosher salt (approximately 2 tablespoons). Place the quartered onion and the remaining herbs inside the turkey cavity. Cover the tips of the wings with aluminum foil and truss the turkey (see Cook's Note**).
  • Rub the turkey with the softened butter. Place the turkey in the roasting pan breast side up on a roasting rack.
  • Place the turkey in the oven with the lid on. Baste every hour starting after the first 1 1/2 hours. Cook until an instant read thermometer inserted in the leg meat near the hip joint reads 160 degrees F (approximately 3 hours). Remove the lid and turn the oven up to 400 degrees F. Continue to cook the turkey for 20 to 25 minutes, until the turkey skin is golden and an instant-read thermometer inserted in the leg meat near the hip joint reads 175 degrees F. Remove the turkey from the pan and let it rest in a warm place for 20 minutes before carving (see Cook's Note***.)
  • Place roasting pan over medium heat and add 1/2 cup of water. Use a wooden spoon to help release the drippings from the bottom of the pan. Using a fine sieve, strain drippings into a medium saucepot. Place the saucepot over medium heat.
  • Whisk the cream and flour together in a small bowl to create a smooth paste. Add a 1/2 cup of the pan drippings to the cream mixture and whisk together. Pour the cream mixture into the saucepot and whisk together. Cook for approximately 2 to 3 minutes and reduce heat to medium low. Simmer for 15 minutes. Season with salt and pepper. Serve with the perfect turkey.

1 large onion , sliced
1 large red cabbage , quartered, cored and thinly sliced
200ml port
1 orange , juiced and zested
1 large cinnamon stick
pinch of ground cloves
2 tbsp light brown soft sugar
100g pitted prunes , roughly chopped

Steps:

  • Heat oven to 160C/140C fan/gas 3. Heat the butter in a casserole dish until sizzled to a nutty brown. Add the onion and fry for 15 mins over a medium heat until soft and starting to colour.
  • Tip the remaining ingredients into a large pan and cover with a tight-fitting lid. Put in the oven for 1 hr, then stir, cover and cook for a further 1 hr until the cabbage is tender. If it looks dry, add a splash of water; if there's still liquid in the pan once cooked, turn the heat up until it evaporates. Season with a little salt and serve. Can be prepared up to three days ahead and chilled or frozen for up to three months; reheat in the microwave or in a pan on the hob.

1 (12- to 14-lb) turkey (preferably kosher), any quills removed if necessary and neck and giblets (excluding liver) reserved for making stock
1 1/4 teaspoons salt
1/2 teaspoon black pepper
2 navel oranges, each cut into 8 wedges
3 small red onions, each cut into 8 wedges
5 bay leaves (not California)
3/4 stick (6 tablespoons) unsalted butter, melted
For gravy
Pan juices from roast turkey
About 4 cups turkey stock (page 198)
1/3 cup all-purpose flour
Garnish: 4 roasted onions, each cut into 8 wedges (optional); fresh bay leaves (do not eat)

Steps:

  • Roast turkey:
  • Preheat oven to 425°F.
  • Rinse turkey inside and out and pat dry. Sprinkle turkey inside and out with salt and pepper, then fold neck skin under body and secure with small skewer. Stuff large cavity with oranges, 1 onion, and bay leaves. Tie drumsticks together with kitchen string and secure wings to body with small skewers.
  • Put turkey on a rack set in a large flameproof roasting pan and roast in middle of oven 30 minutes.
  • While turkey is roasting, toss remaining 2 onions with 2 tablespoons melted butter.
  • Reduce oven temperature to 350°F. Brush remaining 1/4 cup butter over turkey and roast 30 minutes more. Baste turkey and scatter buttered onion wedges around it, then roast, basting turkey every 30 minutes (add a little water to pan if onions get too dark) until an instant-read thermometer inserted into fleshy part of a thigh (do not touch bone) registers 170°F, 1 1/2 to 2 hours more (total roasting time: 2 1/2 to 3 hours). Transfer turkey to a platter (do not clean roasting pan) and let stand 25 minutes (temperature will rise to 180°F).
  • Make gravy:
  • Transfer pan juices with onions to a 2-quart glass measure, then skim off and reserve 1/4 cup fat. Add enough turkey stock to pan juices to make 4 1/2 cups total. Set roasting pan across 2 burners, then add 1 cup stock mixture and deglaze pan by boiling over moderately high heat, stirring and scraping up brown bits. Add remaining stock mixture and bring to a simmer. Pour stock through a fine sieve back into glass measure and discard onions.
  • Whisk together reserved fat and flour in a large heavy saucepan and cook roux over moderately low heat, whisking, 3 minutes. Add hot stock mixture in a fast stream, whisking constantly to prevent lumps, then simmer, whisking occasionally, until thickened, about 10 minutes. Stir in any additional turkey juices accumulated on platter and season gravy with salt and pepper.
  • Serve turkey with gravy on the side.
